2 cups all-purpose flour
1 1/4 cups packed brown sugar
1 cup canned pumpkin (not pumpkin pie mix)
3/4 cup egg substitute
1/3 cup vegetable oil
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
ice cream, if desired

Steps:

  • Spray 3 1/2- to 6-quart slow cooker with cooking spray; Spoon pie filling into cooker; spread evenly.
  • Beat remaining ingredients except ice cream with electric mixer on low speed 1 minute, scraping bowl constantly; Beat on medium speed 2 minutes, scraping bowl occasionally.
  • Pour batter over pie filling.
  • Cover and cook on High heat setting 1 hour 30 minutes to 2 hours or until toothpick inserted in center comes out clean.
  • Serve with ice cream.

2 (1 gram) packets sugar substitute
1 teaspoon pumpkin pie spice
1 Granny Smith apple - peeled, cored and chopped
¼ cup canned pumpkin
2 tablespoons water

Steps:

  • Sprinkle 1/3 packet of sugar substitute and 1/3 teaspoon pumpkin pie spice in the bottom of a microwave-safe bowl. Layer 1/4 of the apple pieces into the bowl; repeat. Spread the pumpkin over the apples. Sprinkle the remaining sugar substitute and pumpkin pie spice on the pumpkin. Top with the remaining apples. Pour the water over the mixture.
  • Cook in microwave on high for 3 1/2 minutes, stirring every minute.

1 1/4 c brown sugar, firmly packed
1 c canned solid pumpkin
3/4 c fat free cholesterol-free egg product
1/3 c vegetable oil
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp baking soda
ice cream

Steps:

  • 1. Spray a 3 1/2 to 6 quart slow cooker with cooking spray. Spoon pie filling, spread evenly. Beat remaining ingredients except ice cream with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on medium speed 2 minutes, scraping bowl occasionally. 1 granny smith apple
1/4 cup canned pumpkin
2 tablespoons water
2 g Sweet 'n Low
pumpkin pie spice

Steps:

  • Chop apple into small pieces (about the size for apple pie).
  • In microwavable bowl, sprinkle 1/3 packet of Sweet & Low, and pumpkin pie spice. Layer 1/4 of the apple pieces on top. Sprinkle more Sweet & Low and pumpkin pie spice, and repeat.
  • With half the apple is layered, spread canned pumpkin over apples. Sprinkle generous Sweet & Low and pumpkin pie spice, then continue layering on the apple pieces.
  • When all apples have been added, pour water over mixture.
  • Microwave for 3 1/2 minutes, stirring the mixture about every minute.
