Yield Makes 8 to 10 servings

Number Of Ingredients 22

For the crust
2 1/2 cups (350 g) all-purpose flour
2 teaspoons dried sage, finely crumbled
1/2 teaspoon table salt
16 tablespoons (2 sticks; 255 g) chilled unsalted butter, cut into small cubes
3 ounces (85 g) sharp Cheddar cheese, finely grated
6 to 8 tablespoons (90 to 120 ml) ice water
1 egg blended with 1 tablespoon water
Fresh sage leaves for garnish (optional)
For the filling
1 1/2 pounds (about 3 large) firm-sweet apples (see Apple Notes), unpeeled, cored, and cut into 1/4-inch-thick wedges
1 1/2 pounds (about 3 large) firm-tart apples, unpeeled, cored, and cut into 1/4-inch-thick wedges
2 tablespoons vegetable oil
1 small onion, very finely chopped
2 pounds (900 g) ground pork (preferably 15 to 17% fat)
1 tablespoon firmly packed light brown sugar
1 teaspoon kosher salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
3 1/2 tablespoons plain breadcrumbs

Steps:

  • 1. First make the crust: In a medium bowl, whisk together the flour, sage, and salt until well combined. Sprinkle the butter cubes over the flour mixture and use your fingers to work them in (you want to rub your thumb against your fingertips, smearing the butter as you do so). Do this until the mixture looks like cornmeal with some pea-sized bits of butter remaining. Stir in the cheese with a fork until evenly distributed. Sprinkle 6 tablespoons ice water over the mixture and stir with a fork until the dough begins to come together. If needed, add an additional tablespoon or two of ice water (you shouldn't need much more). Turn the dough out onto a lightly floured surface and knead three times. Gather the dough into a ball, then divide into two portions, making one slightly bigger than the other. Press each portion down into a disk and wrap in plastic wrap. Refrigerate for at least 30 minutes.
  • 2. Make the filling: In a skillet over medium-low heat, cook the apples without any oil, stirring gently, until they just begin to soften, 5 to 7 minutes. Transfer to a dish and set aside. Add oil to the pan and increase the heat to medium-high. Add the onion, pork, brown sugar, salt, and spices. Cook, using a wooden spoon to break up the meat, until it is lightly browned, about 10 minutes. Let the meat mixture cool for 10 minutes, then transfer to a food processor. Add the breadcrumbs and pulse five times until the mixture has the texture of coarse sand. Set aside.
  • 3. Prepare the crust: Unwrap the larger disk of dough and put it in the center of a large sheet of parchment paper or wax paper. Cover the dough with a second piece of parchment. Roll out, working from the center, to a 13-inch circle. Peel off the top piece of parchment and transfer the dough to a pie plate, peeled side down. Peel off the remaining parchment and press the crust into the sides of the pie plate, draping any excess over the edge. Unwrap the smaller disk of dough and put it in the center of a large sheet of parchment paper. Cover the dough with a second piece of parchment. Roll out, working from the center, to an 11-inch circle. Set aside.
  • 4. Preheat the oven to 425°F and set a rack to the second-to-bottom position. Fill the pie: Pour the meat mixture into the bottom crust and gently smooth the top with a spatula. Arrange the cooked apple slices over the meat, pressing down to make the whole construction as smooth and neat as possible. Peel the top sheet of parchment off the top crust. Transfer, peeled side down, to the pie, then peel off the remaining parchment. Using a sharp knife, make two 3-inch slashes in the crust to allow steam to escape. Fold the edges of the bottom crust up over the top crust and crimp the edges to seal. Brush the crust with the egg wash and decorate with sage leaves, if desired. Bake at 425°F for 10 minutes, then reduce the heat to 375°F and bake until the crust is golden brown, 25 to 35 minutes more. Remove from oven and let cool 25 minutes before serving.

STUFFING-TOPPED APPLE PIE PORK CHOPS

Stuffing-Topped Apple Pie Pork Chops image

One of my husband's all-time favorites! I love to make it when I'm in a rush, or just plain tired and don't feel like fussing. So easy and so very good!! Hope you try it! :D (Old photo by me)

Provided by Kelly Williams

Categories     Steaks and Chops

Time 1h5m

Number Of Ingredients 8

4-6 1" thick boneless pork loin chops (if using thinner ones lessen baking time 5-10 minutes depending on thickness)
1 Tbsp vegetable oil
seasoning salt and pepper to taste
1 box stovetop pork or chicken stuffing mix
1 rounded tablespoon apple pie filling, finely chop apples
2 rounded tablespoons shredded sharp cheddar cheese
1 (21 oz.) can(s) apple pie filling with cinnamon, add a little cinnamon if it doesn't have any or needs more
more coarse ground pepper

Steps:

  • 1. Make stuffing according to pkg. directions, fold in 1 Tbl. apple pie filling and cheddar, set aside. Pour rest of apple pie filling onto bottom of 13x9 pan (greased.) Sprinkle with a little cinnamon if needed. In hot skillet, lightly brown pork chops (seasoned with seasoning salt and pepper) on both sides. Place pork chops on top of apples. Top each with a mound of stuffing. (I pack it a little to make it look nice, making a tall mound of it.) Sprinkle lightly with a little coarse ground pepper. Cover and bake at 350• for 40-45 minutes. Uncover and bake 5-10 minutes longer. (*Porkchops ARE done when just barely light pink in center and juices run clear.) **When serving, make sure you scoop with a large spatula, getting underneath the chop to get all the pie filling underneath.

FARMHOUSE PORK AND APPLE PIE

Farmhouse Pork and Apple Pie image

This is a remarkably tasty dish. Love to cook it in the fall. The combination of apples and pork can't be beat. It may take a little effort, but believe me it is worth it. This is a Taste of Home Recipe. Don't let the length of ingredients fool you, it's really not that bad, just assemble everthing you need first and it will go quickly. Also don't fret if you don't have an ovenproof 12 inch skillet, that just makes it more convient, just tranfer to baking dish.

Pork pie is a traditional British dish that has been enjoyed for centuries. This savory dish is usually filled with minced or chopped pork meat and spices, baked inside a pastry crust. Apple pork pie is a variation of this classic recipe, where the filling is enriched with apples, adding a sweet and tangy flavor to the dish. In this article, we explore the apple pork pie recipes, their history, ingredients, and cooking techniques.

History of Pork Pie

Pork pie originated in the county of Melton Mowbray, located in the East Midlands region of England. It was first mentioned in culinary texts in the early 1800s, and its popularity quickly spread throughout the country. Pork pie was a staple food for the working class, and it was often eaten at picnics, fairs, and other festive occasions. The dish was also a favorite of royalty, and it was served in lavish banquets and parties.

Ingredients of Apple Pork Pie

The ingredients for making apple pork pie vary depending on the recipe and preferences. However, some of the most common ingredients include:
  • Minced or chopped pork meat (shoulder or belly)
  • Apples (Granny Smith, Honeycrisp, or other varieties)
  • Onions
  • Flour
  • Butter or lard
  • Chicken or beef broth
  • Salt, pepper, and other spices (nutmeg, cinnamon, thyme, etc.)
  • Eggs (for egg wash or binding)
Pork Meat
The quality of pork meat is crucial for the taste and texture of the pie. The meat should be fresh, lean, and have a good balance of fat and meat. Pork shoulder or belly are ideal cuts of meat because they are tender, juicy, and flavorful. Some recipes suggest using minced pork, while others prefer chunkier meat.
Apples
The choice of apples is also important for the pie. The apples should be firm, slightly tart, and have a good crunch. Granny Smith apples are a popular choice because of their tartness and firmness, but Honeycrisp, Braeburn, or other varieties can also be used. Some recipes suggest peeling and coring the apples before adding them to the pie, while others prefer to keep the skin and core intact for texture and flavor.
Pastry
The pastry for apple pork pie can be made from scratch or bought ready-made from the store. Some recipes suggest using shortcrust pastry, which is easy to make and gives a smooth and flaky texture to the pie. Others prefer puff pastry, which is lighter and crispier but requires more preparation time.

Cooking Techniques

The preparation and cooking of apple pork pie vary depending on the recipe and preferences. However, some of the most common techniques include:
  • Preheat the oven to 375°F (190°C)
  • Prepare the filling by slicing the onions and apples, and frying them in a pan with butter or lard until softened (10-15 minutes).
  • Add the minced or chopped pork meat to the pan, along with the spices, salt, and pepper, and stir well until the meat is browned and cooked through (10-15 minutes).

Apple pork pies are a great way to incorporate pork and apple into your diet. They are often served as a savory dish and make for a hearty meal. The combination of pork and apple is a classic combination that is enjoyed across the world. Apple pork pies are easy to make and can be a perfect dinner option for any day of the week. In this article, we will give you some tips to make the perfect apple pork pie.

Tip 1: Choose the right cut of pork

The meat selection is an essential part of the apple pork pie recipe. You should choose a cut of pork that is tender and also has enough fat content. The fat in the pork provides the juiciness and adds flavor to the pie. Pork shoulder is the best option when it comes to making apple pork pies. It has enough marbling and fat content, which ensures that the meat remains moist and juicy when cooked. Moreover, you can use pork loin as well, but it requires regular basting to keep the meat tender and moist.

Tip 2: Select the right type of apple

The right choice of apples is vital for the apple pork pie recipe. Apples bring a fresh, sweet, and slightly acidic taste to the pie, which balances the pork's rich and savory flavor. You can use different types of apples, such as Granny Smith, golden delicious, or honey crisp. However, Granny Smith is the most preferred apple for apple pork pies. They are tart and hold their shape well when baked, which makes them perfect for this dish.

Tip 3: Season your pork properly

Seasoning your pork is critical to achieving the perfect flavor in your apple pork pie. You should add a generous amount of salt and pepper to the pork before cooking it. Additionally, you can add other seasonings such as garlic powder, thyme, and rosemary to boost the flavor of the pork. The right balance of seasonings will make your pork taste delicious and mouth-watering.

Tip 4: Pre-cook your pork

Pre-cooking your pork ensures that it is fully cooked when added to the pie. You can either grill, sauté or bake your pork before adding it to the pie. Grilling or sautéing the pork will add more flavor to the meat but baking the meat is the easiest and the most preferred method. Baking the pork is a low-maintenance approach to cook the pork to perfection. You can bake the pork for around 30 minutes at 375°F until it's cooked through.

Tip 5: Use a pie crust recipe you trust

The pie crust plays a crucial role in making the perfect apple pork pie. We recommend using a pie crust recipe that you trust or a store-bought pie crust if you are short on time. Homemade pie crusts can be tricky, so if you are not confident in your crust-making abilities, buying a pre-made crust is a good option.

Tip 6: Don't overfill your pie

It is important not to overfill your pie. Apple pork pie needs space to expand while cooking, so it is essential to leave some space below the crust. Overfilling will cause the pie to break open, which may lead to a mess. You can use a shallow pie dish to ensure the pie is not overfilled. Additionally, you can use a thicker crust which provides room for the pie to expand while cooking.

Tip 7: Add flavor to your filling

Adding apple and pork is not the only way to make your apple pork pie a delicious dish. You can add some extra flavor to your filling by incorporating herbs, spices, or vegetables. For example, adding onions, garlic, and thyme can give a smoky and savory taste to the pie. However, it is important not to add too much flavor, as the classic combination of apple and pork is what makes this dish unique.

Tip 8: Vent your pie

Venting allows the steam to escape from the pie and keeps the crust crisp and flaky. You can create vents by cutting some slits in the top of the crust. The size of the vents will depend on the size of the pie. One or two slits should be sufficient venting for a small apple pork pie.

Tip 9: Let your pie cool before serving

Letting your pie cool before serving is essential. It allows the juices to settle and avoids burning your mouth on the hot filling. We recommend letting your apple pork pie cool for around 15 to 20 minutes before serving.

Tip 10: Get creative with your pie toppings

Apple pork pies can be tricky, so if you want to spice things up a bit, you can get creative with your toppings. A dollop of sour cream, mustard, or even cranberry sauce can add another layer of flavor to the pie. Additionally, you can use cheese to make a savory apple pork pie, combining apple, pork and cheese to create a truly unique taste.

Conclusion

Apple pork pies are a great way to incorporate a healthy mix of fruit and meat into a meal. By following these tips and tricks, you will be sure to make the perfect apple pork pie. Remember, selecting the right cut of pork, seasoning the meat adequately, and selecting the right type of apple are the essential keys to a delicious apple pork pie. Don't be afraid to get creative with your pie toppings; you might discover a new flavor combination that will become a family favorite.
