APPLE PIKELETS
A nice breakfast or anytime treat from Melissa Goodsell. You can eat them warm or cold, both ways are good.

Steps:
- Cut up & core the apple, leaving the skin on.
- Grate the apple.
- Place the flour, apple, sugar, eggs and milk into a bowl and mix.
- Heat a frying pan or griddle. Spray with oil.
- Pour small amounts of the batter into little circles. Sprinkle with cinnamon.
- When bubbles appear on the top its time to flip them over. Flip again until both sides are golden.
- Top with butter and powdered sugar and serve.

- Combine flour, bicarb, 3 tsp splenda and 1/2 cup apple in bowl.
- Make well in centre.
- Beat milk and eggwhite and pour into well.
- Stir gently until smooth batter forms.
- Cook - makes up to 12 small pikelets - sprinkle the remaining splenda on top.

PIKELETS WITH CINNAMON APPLE SLICES
Delicious plain pikelets with a cinnamon applesauce. The sauce is a bit different because of the slicing of the apples. One or two pikelets makes a very nice dessert with a spoonful of vanilla ice cream! If using non hydrogenated margarine for the pancakes and sauce, such as Becel, use a little less because of the higher moisture content. Recipe altered from Apple & Pear Australia Ltd.

Steps:
- Sift the flour into a mixing bowl and stir in the sugar; Mix together the egg, melted butter and milk; Whisk into the flour mixture.
- Heat a greased frying pan and add 2 tablespoons of mixture into the pan for each pikelet; Cook for 2 minutes or until bubbles appear on the surface of the pikelet; Turn over and cook for another 30 seconds.
- Remove from pan and keep warm; Repeat with pikelet mixture.
- For the cinnamon apples: Melt the margarine in a small sauce pan. Add the sugar, cinnamon and lemon juice and stir until well combined; Add the slices of apple and simmer in the mixture until tender (about 4 minutes).
- Serve slices of apple on top of the pikelets and drizzle the sauce over.
- For a nice dessert, accompany with a spoonful of ice cream.

Dry ingredients:
- 1 cup all-purpose flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/4 tsp salt
Wet ingredients:
- 1 egg
- 1/2 cup milk
- 1/2 cup unsweetened applesauce

- 1/2 cup diced apples
Instructions
- In a large mixing bowl, whisk together the dry ingredients.
- In a separate bowl, whisk together the wet ingredients.
- Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined.
- Stir in the diced apples.
- Heat a non-stick frying pan over medium heat. Use a 1/4 cup measure to spoon the batter into the pan.
- Cook for 2-3 minutes, or until the edges start to dry and the surface of the pikelets begins to bubble.
- Flip the pikelets over and cook for an additional 1-2 minutes, or until lightly golden brown.
- Remove from the pan and repeat with the remaining batter.
- Serve hot with your favorite toppings.
Variations
- Add cinnamon, nutmeg, or allspice to the batter for a warm and cozy flavor.
- Replace the diced apples with other fruits, such as blueberries, raspberries, or bananas.
- Top the pikelets with a dollop of whipped cream and a drizzle of caramel sauce for a decadent dessert.
- Use a heart-shaped cookie cutter to make cute, Valentine's Day-themed pikelets.
