Drizzle 1/2 cup of the caramel sauce evenly onto bottom of crust. Reserve remaining caramel sauce for later use. Top with scoops of ice cream, spreading evenly. Freeze 3 hours.
- Meanwhile, cook apples in butter and sugar in large skillet on medium heat 5 min. or until apples are tender, stirring frequently. Cool completely.
- Spoon apples over ice cream; drizzle with reserved caramel sauce. Sprinkle with nuts. Freeze 4 hours or overnight. Remove from freezer 10 min. before serving.

- 1. Preheat oven to 400 degrees
- 2. Spray A 9 X 13 inch pan with cooking spray just to coat pan
- 3. Arrange apple slices in pan
- 4. Mix together 1/4 cup white sugar, 1/4 cup brown sugar and the cinnamon
- 5. Sprinkle over the apple slices
- 6. Mix 1/3 cup white sugar with the flour
- 7. Cut in the butter until crumbly
- 8. Spoon mixture over apples
- 9. Bake at 400 degrees for 35 to 40 minutes, or until done
- 10. Let cool 20 minutes
- 11. To make the butter rum sauce: In a medium sauce pan combine the sugar, butter, and cream.
- 12. Using medium to low heat, heat the sugar, butter and cream until the butter melts and the sugar dissolves
- 13. Add the rum extract and vanilla and stir until mixed in.
- 14. To assemble: place a serving of apple mixture in a bowl or goblet, top the apple mixture with 1 scoop of vanilla ice cream. Drizzle the caramel sauce over the ice cream.
