Apple Pie Pancakes w/ Caramel Bourbon Glaze image

These little gems taste like apple pie, but in pancake form. They're jam-packed with apples and spices. Don't let the bourbon scare you. It's not overpowering in the sauce. The warm caramel glaze is the perfect complement to the pancake.

Time 25m

Number Of Ingredients 9

1 c Bisquick
1/2 c milk
1 egg
1 large granny smith apple; sliced, seeded & cut into chunks
1 Tbsp apple pie spice
1 Tbsp sugar
1/2 c caramel syrup or ice cream topping
3 Tbsp bourbon
butter

Steps:

  • 1. In a small saucepan, heat 1/2 cup of caramel topping and 3 Tbsp of bourbon.
  • 2. Simmer on low heat while preparing pancake batter and pancakes.
  • 3. In a large mixing bowl, combine Bisquick, egg, milk, apple pie spice and sugar.
  • 4. Using a wire whisk, beat until batter is somewhat smooth.
  • 5. Gently fold in the apples.
  • 6. On a heated griddle or non-stick skillet, spray non-stick cooking spray. Pour just under 1/3 cup of the batter into the skillet. If using a large skillet, you should be able to get about 2 pancakes per batch. Don't overcrowd the skillet.
  • 7. Cook until edges are dry and batter starts to bubble a little in the middle. Carefully turn the pancake over using a spatula. Once you have flipped the pancake, take a basting brush and dip into butter. Carefully spread the butter over the pancakes while they are in the skillet.
  • 8. Place one pancake on a plate, add about 1 tablespoon of the bourbon glaze, top with another pancake and additional bourbon glaze.
  • 9. Garnish with fried apple slices with cinnamon, if desired. Sprinkle with additional apple pie spice, if desired.

Apple pie pancakes are a delightful twist to traditional pancakes. They are infused with flavors of apple and cinnamon, and are a perfect breakfast treat during the fall season. While it may seem simple to make apple pie pancakes, there are some valuable tips you should keep in mind to ensure that your pancakes turn out fluffy, flavorful, and irresistible.

Tip #1: Use Fresh Apples

The apple is the star ingredient in apple pie pancakes, and it is important to use fresh apples for the best results. Avoid using canned or processed apples, as they tend to be too soft and mushy. Instead, use fresh apples that are crisp and firm, with a sweet and tart flavor.
Variety of Apples to Use
There are several varieties of apples that are suitable for making apple pie pancakes. Here are some of the best: - Granny Smith: tart and crisp, holds its shape well when cooked - Honeycrisp: sweet with a slight tartness, juicy and crisp, holds up well in baking - Braeburn: sweet with a hint of tartness, firm and crisp, holds its shape well when cooked - Pink Lady: sweet and tart, firm and crisp, holds up well in baking

Tip #2: Add Cinnamon and Spices

Cinnamon and other spices complement the flavor of apples, and add depth and warmth to your pancakes. Use a good quality ground cinnamon, and also add a pinch of nutmeg, ginger, or allspice for extra flavor.
Measuring Spices
When measuring spices, use a measuring spoon calibrated for the amount you need. Do not estimate or eyeball the amount, as too much or too little spice can affect the taste of your pancakes.

Tip #3: Mix the Batter Carefully

Pancake batter should never be over mixed, as this can lead to tough and chewy pancakes. Mix the batter just until the dry ingredients are incorporated into the wet ingredients, and there are no lumps. Over mixing can also cause the pancakes to become dense and heavy, which is not what you want.
Folding in Apples
When adding the apples to the batter, be sure to fold them in gently. Do not mix vigorously, as this can break up the apple chunks and make the batter too wet.

Tip #4: Cook the Pancakes on Medium Heat

Cooking pancakes on high heat can cause them to burn on the outside and remain uncooked on the inside. It is important to cook the pancakes on medium heat, so they cook evenly and become golden brown. Use a non-stick pan or a griddle, and grease it lightly with oil or butter.
Flipping the Pancakes
Wait until the edges of the pancake start to look dry, and bubbles begin to form on the surface before flipping. Use a thin spatula to gently lift the pancake and flip it over.

Tip #5: Keep the Pancakes Warm

As you cook the pancakes, place them in a preheated oven at 200 degrees Fahrenheit to keep them warm. This will also ensure that they stay fluffy and do not become soggy.
Serving Suggestions
Serve the apple pie pancakes with butter, maple syrup, whipped cream, or a sprinkle of powdered sugar. For an extra touch of sweetness, you can also serve them with caramel sauce or apple butter.

Conclusion

Making apple pie pancakes requires a little extra effort, but the results are worth it. Keep these valuable tips in mind when making apple pie pancakes, and you are sure to enjoy a delicious and satisfying breakfast treat. With fresh apples, cinnamon and spices, a carefully mixed batter, and moderate heat, your pancakes will turn out fluffy, flavorful, and irresistible.
