Yield Makes 1 10-inch coffee cake

Number Of Ingredients 11

2 large eggs
1 tablespoon vegetable oil
1/4 teaspoon pure vanilla extract
3/4 cup sugar
1 cup unbleached all-purpose flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice or nutmeg
1/4 teaspoon salt
2 cups peeled, cored, and thinly sliced firm tart apples (about 1 1/2 pounds)
1 tablespoon turbinado (raw) sugar, for sprinkling on top

Steps:

  • Preheat the oven to 375 degrees F (350 degrees if using a Pyrex or dark-finish pie plate). Grease a 10-inch pie plate.
  • In a medium bowl, combine the eggs, oil, vanilla, and sugar, beating with a wooden spoon until thick, about 1 minute. Add the flour, baking powder, cinnamon, allspice, and nutmeg, and salt. Beat vigorously until the batter has a crumbly consistency, about 1 minute. Fold in the apples and mix until the apples are evenly coated and the batter becomes moist and smooth. There will be lots of apples, held together by a relatively stiff batter.
  • Scrape the batter into the prepared pan and smooth into an even layer with a metal spatula. Sprinkle the top evenly with the sugar. Bake on the center rack of the oven 30 to 35 minutes, until the center is firm when gently pressed. A cake tester inserted into the center should come out clean, the top and bottom of the cake should be deep brown, and the apples should be tender when pierced with a knife. Remove from the oven and cool at least 1 hour in the pan on a folded tea towel. Serve warm or room temperature, cut in wedges from the pie pan.

Tip 1: Choose the Right Apples

The best apples for a pie filling are the ones that have a firm texture and can hold their shape when baked. Some of the best apple varieties for apple pie filling coffee cake include Granny Smith, Honeycrisp, and Braeburn apples.

Tip 2: Use the Right Spices

When making an apple pie filling coffee cake, it’s important to use the right spices. Cinnamon is a classic spice that is often used in apple pie recipes, but you can also experiment with other spices like nutmeg, allspice or clove. These spices will add depth and complexity to the flavor of your cake, making it a truly memorable dessert.

Tip 3: Choose the Right Type of Cake

There are various types of cake that can be used to make apple pie filling coffee cake, but not all of them are created equal. A moist and tender cake will complement the flavors of the apple pie filling, making it more delicious. Some of the most popular cake types for apple pie filling coffee cake include yellow cake or vanilla cake. These cake types will provide a neutral base that will blend well with the flavors of the apple pie filling.

Tip 4: Use Quality Ingredients

Quality ingredients are crucial when making an apple pie filling coffee cake. This includes using fresh, high-quality apples that are firm and not too ripe. It also means using quality spices, flour, sugar, and butter. Using low-quality ingredients can affect the taste and texture of your cake, making it less enjoyable.

Tip 5: Prepare Your Apples Properly

Preparing your apples properly is key to making a delicious apple pie filling for your coffee cake. Start by peeling and coring your apples, then cut them into thin slices. To prevent your apples from turning brown, you can toss them with a little bit of lemon juice. You can also mix your sliced apples with sugar and spices to create a flavorful filling.

Tip 6: Don’t Overmix Your Batter

Overmixing your batter can result in a tough and dense cake. When making your cake batter, be careful not to overmix it. Mixing your ingredients just until combined is enough to create a tender and moist cake.

Tip 7: Add Layers

Adding layers of apple pie filling to your coffee cake is a great way to create a delicious and visually appealing dessert. To create layers, simply spoon some of the cake batter into the bottom of your pan, then add a layer of apple pie filling on top. Repeat this process until you’ve used up all of your batter and filling.

Tip 8: Bake Your Cake at the Right Temperature

Baking your cake at the right temperature is crucial for a successful outcome. Most apple pie filling coffee cake recipes call for a baking temperature of around 350°F to 375°F. Be sure to preheat your oven before baking your cake to ensure it bakes evenly.

Tip 9: Test for Doneness

Testing your cake for doneness is important to ensure that it’s cooked all the way through. To test for doneness, insert a toothpick or cake tester into the center of the cake. If it comes out clean, your cake is done. If it’s still wet or has batter on it, you’ll need to bake it a little longer.

Tip 10: Let Your Cake Cool

Letting your cake cool completely before slicing and serving is important to ensure that it doesn’t fall apart. Once your cake is done baking, remove it from the oven and let it cool in the pan for at least 10 to 15 minutes. Then, transfer it to a wire rack to cool completely.
Conclusion
Making an apple pie filling coffee cake can be a bit intimidating, but with these valuable tips, you’ll be able to create a delicious and memorable dessert that everyone will love. Remember to use the right type of apples and spices, choose quality ingredients, prepare your apples properly, don’t overmix your batter, add layers, bake at the right temperature, test for doneness, and let your cake cool before serving. With a little bit of practice, you’ll be able to perfect your apple pie filling coffee cake recipe and impress your friends and family with your baking skills.
