1 unbaked 9 inch pie crust
¾ cup sugar
2 tablespoons all-purpose flour
⅛ teaspoon salt
1 cup sour cream
½ teaspoon vanilla extract
1 egg
2 cups diced apples
⅓ cup sugar
⅓ cup all-purpose flour
1 teaspoon ground cinnamon
¼ cup chilled butter, diced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Press the pie crust into and up the sides of a 9 inch pie plate.
  • In a medium bowl, stir together 3/4 cup sugar, 2 tablespoons of flour, and salt. Mix in the sour cream, egg and vanilla until smooth. Add apples, and stir to coat. Scrape the mixture into the pie shell.
  • Bake for 15 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C), and continue baking for 30 minutes more.
  • While the pie is baking, prepare the topping in a medium bowl. Stir together 1/3 cup of flour, 1/3 cup sugar, and cinnamon. Cut in the butter until the mixture resembles fine crumbs.
  • After the 30 minute bake time has passed, cover the top of the pie with the crumb topping, and continue to bake for 15 minutes, or until topping is lightly browned and apples are tender. Allow the pie to cool, then refrigerate until chilled before serving.

1 ¼ cups all-purpose flour
¼ teaspoon salt
⅓ cup shortening
6 tablespoons cold water
2 tablespoons all-purpose flour
¾ cup white sugar
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
5 apples - peeled, cored and chopped
¾ cup raisins
½ cup chopped walnuts
1 cup sifted confectioners' sugar
¼ teaspoon vanilla extract
2 tablespoons milk

Steps:

  • To Make Crust: In a large bowl, stir together 1 1/4 cup flour and salt. Cut in shortening until coarse crumbs form. Sprinkle 1 tablespoon of water at a time to dough until it is moist enough to form into a ball. On a lightly floured surface, use hands to slightly flatten dough. Roll dough into a circle about 12 inches in diameter.
  • Preheat oven to 375 degrees F (190 degrees C). Line a 9 inch deep dish pie pan with a piece of aluminum foil; it should cover bottom and sides of pan. Lightly flour the foil. Press the dough into the pan.
  • To Make Filling: In a large bowl, stir together 2 tablespoons flour, sugar, cinnamon and nutmeg. Gently toss apples, raisins and walnuts with cinnamon mixture until coated. Fill the crust with the apple mixture.

6 granny Smith apples
8 tbs of brown sugar

Steps:

  • Make pie crust according to recipe on carton. Heat oven to 425 degrees. Line bottom of oven with aluminium foil to catch drippings. Peel and slice apples into quarter inch strips. In a large bowl mix apples with brown and white sugars and cinnamon. Blend well. Roll out bottom crust and place in pie plate. Pierce crust for venting. Pour apple mixture into pie plate. Slice butter into pats and spread over apples. Pour Whipping cream over apples. Sprinkle lemon rind over apples. Roll out top crust and place over pie. Seal the edges. Brush whipping cream over pie crust and sprinkle with sugar. Make ring with aluminium foil and place over edge of crust. Bake at 425 degrees for 20 minutes. Reduce to 350 degrees and bake for a further 45 minutes or until the filling starts to boil over edge of crust.

About 3 1/2 lb apples, equal parts Granny Smith and a sweet apple (such as Fuji, Honeycrips, etc.)
Juice and grated peel from 1 lemon
1 tsp cinnamon
1/2 tsp allspice
2 Tbsp corn starch
1/2 Cup unsalted butter (8 Tbsp)
3 Tbsp all-purpose flour
1/4 Cup water
2 tsp pure vanilla extract
1/3 Cup white sugar
1/3 Cup brown sugar
1 egg
White Sanding sugar

Steps:

  • Peel, core and slice apples into large mixing bowl. Add the lemon juice and peel and toss. Add the cinnamon, allspice and cornstarch and combine to evenly coat apples. Combine the vanilla extract into the 1/4 cup of water and set aside. Melt butter in small saucepan. Add flour and whisk to make a roux. Cook 2 minutes to get rid of the raw flour taste.
