Time 2h20m

Number Of Ingredients 15

6 tablespoons unsalted butter, plus more for dish
1 cup heavy cream
1 cup whole milk
3 large eggs
8 ounces brioche, cut into 1-inch cubes (6 cups)
2/3 cup light brown sugar
1/3 cup granulated sugar
2 teaspoons pure vanilla
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon kosher salt
2 Granny Smith apples, peeled, quartered, cored, and sliced crosswise in 1/4-inch thick pieces (2 cups)
Turbinado sugar, for sprinkling (optional)
Vanilla ice cream, for serving

Steps:

  • Preheat oven to 350 degrees with rack set in the lower third of the oven. Lightly butter a 9-inch pie plate; set aside.
  • In a large bowl, whisk together cream, milk, and eggs. Add brioche and gently toss to coat. Set aside at room temperature for 30 minutes to soak.
  • Meanwhile, melt butter in a medium saucepan over medium heat. Remove from heat and add granulated sugar, brown sugar, vanilla, spices, and salt; stir until smooth and well combined. Add apples and toss to coat.
  • Gently fold apple mixture into the bread mixture until well combined. Spoon bread and apple mixture into prepared pie plate, then pour remaining liquid over top just to fill to the edge of the dish (you may not use all of it). Sprinkle with turbinado sugar, if desired.
  • Bake, covered with parchment-lined foil, for 45 minutes (with a parchment-lined baking sheet placed at the bottom of the oven to catch drips). Uncover and continue to bake until bread pudding is golden brown and set in the center, 30 to 35 minutes more. Let sit on a wire rack 10 to 20 minutes before serving with ice cream. Bread pudding is best served warm, but can be kept refrigerated, tightly covered, up to 3 days.

Valuable Tips for Making Apple Pie Bread Pudding Recipes

Apple pie bread pudding is a delicious dessert that combines the best of both worlds- the classic flavor of apple pie with the comfort of warm, custardy bread pudding. But getting it just right can take some practice. Here are some valuable tips to make your apple pie bread pudding recipes perfect every time.

Choose the Right Bread

The bread that you use for the pudding is important, as it will affect the texture and flavor of the finished dish. For apple pie bread pudding, you want a bread that has a soft texture and a slightly sweet flavor. Brioche or challah are good options as they add richness and tenderness to the dish. Sourdough or French baguette can also work, but may produce a slightly chewier texture.

Make Sure the Apples are Cooked

The key to a successful apple pie bread pudding is to ensure that the apples are fully cooked before adding them to the pudding. If they are not, the apples may become hard and chewy when baked, ruining the texture of the dish. The best way to cook the apples is to sauté them in butter and sugar until they are tender and have released their juices. You can then mix them with the bread and custard mix.

Consider Adding Spices

Adding warm spices such as cinnamon, nutmeg, and clove can bring the flavors of the apple pie to life in the bread pudding. Sprinkle the spices over the apples, or mix them into the custard before pouring it over the bread cubes. Be careful not to overdo it, as too much spice can be overpowering.

Use the Right Custard

It is important to use the right custard for apple pie bread pudding recipes. You want a custard that is rich, smooth, and creamy. You can make a custard from scratch using eggs, cream, sugar, and vanilla extract. Alternatively, you can use store-bought vanilla custard or a vanilla-flavored instant pudding mix. Whatever you choose make sure to mix it with room temperature milk to ensure it amalgamates better.

Let It Rest

Once you have assembled the pudding, let it rest for at least 30 minutes before baking. This allows the bread to fully absorb the custard, resulting in a moist and custardy interior. If you do not let it rest, the bread may not have enough time to soak up the custard, resulting in a dry and uneven texture.

Bake at the Right Temperature

Baking bread pudding requires a balance between cooking the pudding through, and not over-baking it. Preheat your oven to 350°F, and bake the apple pie bread pudding for 40 to 50 minutes, or until the custard is set and the top is golden-brown. A lower temperature will make the liquid part set, but the bread cubes will dry out. Higher temperatures will make the top of the pudding burn before the inside is fully cooked.

Test with a Toothpick

To ensure that the bread pudding is fully cooked, insert a toothpick or a cake tester into the center of the pudding. If it comes out clean, the pudding is ready. If it comes out wet or with custard, the pudding needs to bake for a few more minutes.

Serve Topped with Whipped Cream or Ice Cream

Apple pie bread pudding is best served warm, and topped with a dollop of whipped cream or a scoop of vanilla ice cream. Whipped cream complements the warm, spiced flavors of the pudding. Vanilla ice cream adds a touch of coolness to warm and flavorsome dessert.

By following these valuable tips, you will be able to make a delicious apple pie bread pudding that is perfect for any occasion. Use your creativity and if something goes wrong, remember to take note of it and learn for next time. Enjoy your delicious dessert!
