2 to 3 large apples (peeled and cut into chunks (I have used all kinds of apples in this recipe))
3 to 4 fresh large peaches (peeled and cut into chunks)
1 1/2 to 2 cups fresh blueberries
1 tablespoon lemon juice (Optional)
1/4 cup sugar
1 tablespoon cornstarch
2 teaspoons ground cinnamon
1/4 stick butter or margarine or 2 tablespoons

pinch of salt
1/4 cup butter or margarine or 4 tablespoons
About 1/2 cup milk (more or less)

Steps:

  • Spray a 2 to 3 quart baking dish with cooking spray. Sprinkle the lemon juice over the apples to keep them from turning brown. (You can skip this if you want). Mix together the sugar, cornstarch and cinnamon with a wire whisk and mix with the fruit. Pour into baking dish and cut butter into small pieces on top of the fruit. Place crust recipe below over on top.

PEACH-BLUEBERRY PIE

Peach-Blueberry Pie image

I look forward to peach season like some people look forward to Christmas. Just thinking about fresh, sliced peaches, seasoned perfectly and accompanied by a perfect crust, is enough to make my mouth water. The options for peach pie are virtually never ending. Not only is it equally tasty with a flaky traditional or sweet crumbly topping, but peaches also blend beautifully with other fruits, including blueberries, raspberries, dried cranberries, and strawberries. While we use blueberries here, try substituting a cup of your own favorite fruit (the fresher, the better). Be sure to also try this with Cinnamon Sugar Crumb Topping (page 12).

Yield Makes one 9-inch pie, 6 to 8 slices (level: easy)

Number Of Ingredients 10

1 recipe Traditional Pastry Piecrust dough for a 9-inch double-crust pie (page 5)
1/2 cup heavy cream (to glaze the top crust and crimped pie edges)
3/4 cup sugar
2 tablespoons cornstarch
2 tablespoons quick-cooking tapioca (see page 46)
1 1/2 teaspoons ground cinnamon
Pinch of salt
3 cups peeled 1/2-inch ripe peach slices (approximately 4 large peaches)
1 cup fresh blueberries, washed, dried, and stemmed
1 tablespoon salted butter

Steps:

  • Preheat the oven to 375°F.
  • To prepare the pie shell, divide the ball of dough in half, setting one half to the side. On a clean, lightly floured work surface, roll out the dough with a rolling pin until it forms a 10-inch circle. Fold the circle in half, place it in a 9-inch pie plate so that the edges of the circle drop over the rim, and unfold the dough to completely cover the pie plate. Set the pie shell to the side while you make the filling.
  • To prepare the filling, in a small bowl, mix together the sugar, cornstarch, tapioca, cinnamon, and salt. Place the peaches and blueberries in a large bowl and sprinkle them with the sugar mixture, making sure the fruit is thoroughly coated. Place the filling in the pie shell, distributing it evenly. Dot the filling with the butter.
  • To prepare the top crust, roll out the second half of the dough with a rolling pin until it forms a 10-inch circle. Fold the dough circle in half and place it over the filling, with the straight line of the half circle running down the middle of the pie. Unfold the circle so that the entire pie is covered. Using your thumb and index finger, crimp the edges of the pie together to seal in the filling, and then use a fork to puncture the top of the pie 5 or 6 times. Brush the top of the pie and crimped edges with heavy cream for a perfect, golden brown finish.
  • To bake, place the pie plate on a baking sheet and bake for 50 to 55 minutes, or until the crust is browned and the juices bubble over. Transfer the pie plate to a wire cooling rack and allow the pie to cool and set for 1 1/2 hours before serving.
  • Peach-Blueberry Pie is best served either at room temperature or warmed at 350°F for about 10 minutes. It will keep at room temperature overnight and can be stored in the refrigerator for up to 4 days.
  • Bakers frequently use tapioca as a thickening agent. When purchasing tapioca, be sure to select a quick-cooking (also labeled "instant") variety, rather than regular tapioca. Quick-cooking tapioca tolerates the baking process better than the regular variety, and provides the perfect pie filling consistency. Quick-cooking tapioca can be found in the baking aisle of your local grocery store, near the puddings.

LATTICE PEACH-APPLE PIE

Lattice Peach-Apple Pie image

What a great combination! Get the best of two fruits, tart apples and sweet peaches, baked in one delicious pie.

Provided by Betty Crocker Kitchens

Categories     Dessert

Time 2h15m

Yield 8

Number Of Ingredients 11

2 cups Gold Medal™ all-purpose flour
1 teaspoon salt
2/3 cup plus 2 tablespoons shortening
4 to 6 tablespoons cold water
1 cup sugar
1/4 cup Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
3 medium fresh peaches, sliced (2 cups)
2 medium green cooking apples, peeled and thinly sliced (2 cups)
1/4 cup sliced almonds
1 tablespoon butter or margarine

Steps:

  • In medium bowl, mix 2 cups flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Divide in half. On lightly floured surface, shape each half into flattened round. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 425°F. With floured rolling pin, roll 1 pastry round into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side.
  • In large bowl, mix sugar, 1/4 cup flour and the cinnamon. Stir in peaches and apples. Spoon into pastry-lined pie plate. Sprinkle with almonds. Cut butter into small pieces; sprinkle over filling. Trim overhanging edge of pastry 1 inch from rim of plate.
  • Roll other pastry round into 10-inch round. Cut round into 1/2-inch strips. Place 6 strips across filling. To make lattice top, weave a cross-strip through center by first folding back every other strip going the other way. Continue weaving lattice, folding back alternate strips before adding each cross-strip, until lattice is complete. Trim ends of strips. Fold trimmed edge of bottom crust over ends of strips, building up a high edge; seal and flute. Cover edge of pastry with 2- to 3-inch strip of foil to prevent excessive browning.
  • Bake 35 to 45 minutes or until crust is brown and filling is bubbly, removing foil for last 15 minutes of baking. Cool on cooling rack. Serve slightly warm.

SIMPLE BLUEBERRY APPLE PIE

Simple Blueberry Apple Pie image

Provided by Sunny Anderson

Time 1h55m

Yield 6 to 8 servings

Number Of Ingredients 15

1 1/4 cups flour, plus extra for dusting
Pinch of salt
1 stick butter, cut into small cubes and frozen
1/4 cup ice water
16 ounces fresh blueberries
2 Golden Delicious apples, cored, peeled and cut into 1/2-inch dice
1/2 cup sugar
1/4 cup cornstarch
1/2 teaspoon ground cinnamon
2 teaspoons fresh lemon juice
Pinch of salt
2 tablespoons butter, cut into small cubes
1 egg
2 tablespoons turbinado sugar
Special equipment: 9-inch pie pan

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crust: In a food processor, add the flour and a nice pinch of salt. Pulse very lightly just to blend. Add the butter evenly around the flour and quickly pulse until the flour resembles small crumbles. Slowly pour the water through the spout until the dough begins to come together. Remove and quickly form into a disc. Tightly cover with plastic wrap. Refrigerate for 20 minutes.
  • Meanwhile, for the filling: In a large bowl, add the blueberries, apples, sugar, cornstarch, cinnamon, lemon juice and a pinch of salt. Stir to combine and set aside.
  • Remove the dough from the refrigerator and place on a lightly floured surface. Gently roll the disc into a circle big enough to fit into the pie pan and leave a 3-inch overhang. The dough should be about 1/8-inch thick. Using a pizza cutter, trim the edges of the dough. Place the dough into the pie pan and press gently against the bottom and sides to fit the dough into the pan. Pour in the fruit filling, and then scatter the butter evenly around the top of the pie. Fold the extra dough that's hanging off the edge over the top to create the top of the pie crust. Leave a hole in the center for ventilation.
  • Whisk the egg with 1 teaspoon water and brush the top with egg wash and then sprinkle with the sugar.
  • Place in the oven and bake until the crust is golden brown, about 35 minutes. Let the pie rest at least an hour before serving to let the filling set.

PEACH-BLUEBERRY PIE

Peach-Blueberry Pie image

Provided by Tyler Florence

Categories     dessert

Time 1h45m

Yield 6 to 8 servings

Number Of Ingredients 17

1 recipe Basic Pastry Pastry, chilled 30 minutes, recipe follows
Flour, for rolling
2 pounds peaches, pitted and sliced
1 pint blueberries
1/4 cup sugar
1/2 lemon, juiced
1 1/2 tablespoons cornstarch
2 tablespoons butter, cut into bits
1 egg, beaten with a drizzle of water
Vanilla ice cream, for serving
2 cups all-purpose flour, plus more for rolling
3 tablespoons sugar
1/4 teaspoon salt
1 lemon, zested and finely grated
3/4 cup (1 1/2 sticks) cold, unsalted butter, cut into small chunks
1 egg yolk
2 tablespoons ice water, plus more if needed

Steps:

  • Preheat the oven to 400 degrees F. Move the oven rack to the bottom third of the oven.
  • Divide the dough in half and set one half aside; cover it with a towel or plastic wrap to keep it from drying out. On a lightly floured work surface, roll out the dough to a 10-inch round. Loosely drape the dough round over the rolling pin and transfer to a 9-inch pie pan. Press the dough over the bottom and sides of the pan. Trim the edges to about 1/2-inch.
  • Toss the fruit with the sugar, lemon, and cornstarch. Pile the fruit into the pie shell and dot with the butter. Roll out the reserved dough to a 9 to 10-inch round and lay it over the fruit. Trim, and crimp the edges. Cut 2 or 3 (2-inch) vents in the top of the pie and brush with the egg glaze. Put the pie on a baking sheet and bake until the crust is golden brown and the juices are bubbling up through the vents, 50 to 60 minutes. Cover the edges with aluminum foil if they brown too fast. Cool on a rack before serving. Serve with vanilla ice cream.
  • Combine the flour, sugar, salt, and lemon zest in a large mixing bowl. Add the butter and mix with a pastry blender or your fingers until the mixture resembles coarse crumbs. Add the egg yolk and ice water and work that in with your hands. (Or do the whole thing in a food processor, pulsing a couple of times to combine the dry ingredients, then pulsing in the butter, and then the egg.) Check the consistency of the dough by squeezing a small amount together between thumb and forefingers: You want there to be just enough moisture to bind the dough so that it holds together without being too wet or sticky. If it's still crumbly, add a little more ice water, 1 teaspoon at a time. When you get it to the right consistency, shape the dough into a disk and wrap it in plastic. Put it in the refrigerator and chill for at least 30 minutes.

Making a pie can be a challenging task, especially if you want it to be perfect. Apple Peach Pear Blueberry Pie is a delicious and classic dessert that everyone loves. But, it is important to consider a few tips to make sure that the pie turns out perfect. In this article, we will discuss some valuable tips that will help you make the perfect Apple Peach Pear Blueberry Pie.

Tip 1: Choosing the Right Apples

When making an Apple Peach Pear Blueberry Pie, it is important to choose the right type of apples. Apples that are too sweet or too tart can result in a pie that is either too sweet or too sour. Therefore, it is recommended to choose apples that are slightly tart and can hold their shape during baking. Some of the best apples for pies are Granny Smith, Rome, or Honeycrisp.

Tip 2: Preparing the Filling

The filling is the heart of any pie, and the same goes for Apple Peach Pear Blueberry Pie. The filling should be a perfect balance of sweetness and tartness, with all the flavors complementing each other. It is important to cut the apples, peaches, and pears into equal-sized pieces to ensure even baking. The blueberries, as they are delicate, can be mixed with the remaining fruit at the end to avoid crushing.

Tip 3: Using the Right Amount of Sugar

The amount of sugar you use can make or break your pie. If you use too much sugar, the pie will be too sweet, and if you use too little, it will be too sour. For Apple Peach Pear Blueberry Pie, it is recommended to use a cup of sugar for every six cups of fruit. However, this ratio can be adjusted based on your preferences and the sweetness of the fruits.

Tip 4: Adding the Right Spices

Adding the right spices can take the flavor of your pie to the next level. Cinnamon is a classic spice that pairs well with all the fruits used in this recipe. Nutmeg and ginger can also be added for an extra flavor boost. The amount of spices you use should be adjusted based on your taste preferences.

Tip 5: Choosing the Right Pie Crust

The crust is just as important as the filling when it comes to making the perfect pie. A good pie crust should be flaky, buttery, and perfectly baked. You can choose to make your own pie crust, or you can use store-bought crusts that are quick and convenient. If you opt for a store-bought crust, make sure to follow the manufacturer's instructions to ensure that the crust is perfectly baked.

Tip 6: Preheating the Oven

It is important to preheat the oven to the right temperature before baking your pie. This ensures even baking and prevents the filling from turning out soggy. For Apple Peach Pear Blueberry Pie, you should preheat the oven to 375°F and bake the pie for 45 to 50 minutes or until the crust is golden brown.

Tip 7: Letting the Pie Cool

Once your pie is baked, it is important to let it cool before serving. This not only helps the filling to set, but it also makes it easier to cut the pie into equal slices. It is recommended to let the pie cool for at least 45 minutes before serving. You can serve the pie warm or at room temperature, but make sure to store any leftover pie in the refrigerator.

Conclusion

Apple Peach Pear Blueberry Pie is a classic dessert that everyone loves. By following these valuable tips, you can make the perfect pie that is both delicious and visually appealing. Remember to choose the right ingredients, adjust the sugar and spice to your taste, use a good pie crust, preheat the oven, and let the pie cool. With these tips, you will be able to make a pie that your family and friends will love.
