PANNEKOEKEN (APPLE PIE PANCAKE/GERMAN)

Pannekoeken (Apple Pie Pancake/German) image

I was watching Diners, Drive-ins and Dives and this was made and looked too good. Luckily it was submitted for publishing on the site and wasn't on food.com. This is a recipe courtesy of Maria Bayer, Magnolia Pancake Haus. People eat it for breakfast at the restaurant but could also be served as a dessert.

Time 35m

Yield 2-4 serving(s)

Number Of Ingredients 13

1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1 granny smith apple, peeled, cored and thinly sliced
1/2 cup whole milk
1 tablespoon vanilla extract
3 eggs
1/2 cup all-purpose flour
1 teaspoon granulated sugar
1/2 teaspoon salt
1/2 cup brown sugar
4 tablespoons cold butter
powdered sugar, for serving
whipped cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
  • Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
  • Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
  • Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

BACON AND APPLE PANCAKES (PANNEKOEKEN)

Bacon and Apple Pancakes (Pannekoeken) image

Pancakes (pannekoeken) are a Dutch tradition. There are pancake houses all over the Netherlands. As a kid I loved to go to the pancake house. Typically they make the pancakes very large and serve them for any meal. The pancake is generally served with powdered sugar or heavy Dutch syrup (stroop), and the menu typically offers quite a variety including ham and pineapple, ham and cheese, apple and raisins, assorted fruit, mushrooms, or my favorite - bacon and apple. This recipe was posted on About.com by Karin Engelbrecht, their guide to Dutch Food.

Time 30m

Yield 8-10 large pancakes, 4-6 serving(s)

Number Of Ingredients 10

1 cup white flour
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1 teaspoon butter
1 teaspoon oil
10 slices bacon, sliced into thin strips
3 apples, thinly sliced (choose nice crisp apples)
syrup, preferably Dutch pancake syrup if you can find it

Steps:

  • Mix flour, baking powder, salt and a little of the milk to a smooth paste. Slowly add the remaining milk, while whisking. Add the egg, beating the mixture well. For a lighter texture, leave to rest for a few hours or overnight.
  • Melt the butter and oil in a large frying pan and wait until it sizzles. Pour in enough of the mixture to cover the entire surface of the pan (spread the mixture evenly by tilting the pan). Bake until bubbles appear on the surface and turn over. Pancakes should be pale golden on both sides. Set aside and keep warm.
  • Fry bacon in the pan until crisp. Remove to a paper towel to drain. Now add the sliced apples to the bacon fat and caramelize. Drain on paper towels. Serve pancakes open-faced on the plate, top with apples and bacon and drizzle some syrup on top.

What is Apple Pannekoeken Recipes?

Apple pannekoeken recipes are a type of breakfast or dessert dish popularized in the Dutch and Scandinavian cultures. It is basically a baked pancake or oven-baked German pancake that is loaded with thinly sliced apples and a variety of other ingredients like cinnamon, sugar, butter, and cream. This dish is not only delicious but also quite simple to make, requiring basic ingredients that can be found in most kitchen pantries.

History of Apple Pannekoeken Recipes

While the origin of apple pannekoeken recipes remains unclear, it is believed to have originated back in the late 19th century among Dutch and Scandinavian families in the American Midwest. The dish started as a simple staple breakfast item but quickly gained popularity to become a beloved dessert dish for many Americans.

Ingredients of Apple Pannekoeken Recipes

The traditional apple pannekoeken recipe is made of simple ingredients that most people already have in their pantry. The main ingredients needed include flour, sugar, eggs, milk, butter, salt, cinnamon, and thinly sliced apples. Additional ingredients like vanilla extract, nutmeg, or cardamom can be added to give the dish a more intense flavor.

Preparation of Apple Pannekoeken Recipes

To make apple pannekoeken recipes, you will need a 9 by 13-inch baking dish. The first step is to preheat the oven to 425°F. You then need to melt the butter in a pan and set it aside to cool. In a mixing bowl, mix together the eggs, sugar, salt, and milk. Slowly add in the flour, whisking until the batter is smooth. Once the batter is smooth, add in the melted butter and vanilla extract, whisking until fully incorporated. Next, you will need to line the bottom of your baking dish with the thinly sliced apples in a single layer. Pour the batter over the apples, making sure to cover them evenly. Sprinkle cinnamon and sugar over the top of the batter, which will form a lightly sugared crust on top. Bake the dish in the oven for 20-30 minutes or until the edges of the pancake are brown and puffy. Once done, take the dish out of the oven and let it cool for a few minutes. You can then serve the apple pannekoeken with a dollop of whipped cream or a dusting of powdered sugar.

Variations of Apple Pannekoeken Recipes

Apple pannekoeken recipes can be easily modified to suit personal preferences, appetites, or dietary needs. For example, you can add other types of fruits such as peaches, berries or pears. You can also experiment with different spices or sweeteners like honey, molasses, or maple syrup to add complexity to the flavor profile. Valuable Tips for Making Delicious Apple Pannekoeken Recipes

Apple pannekoeken is a delicious and easy-to-make breakfast dish that originates from the Dutch. It’s a cross between an omelet, pancake, and frittata, flavored with cinnamon and filled with sliced apples. Here are some valuable tips to help you make the perfect apple pannekoeken:
1. Choose the Right Apples
The type of apples you use will have a huge impact on the taste and texture of your apple pannekoeken. Choose apples that are firm, tart, and crisp such as Granny Smith or Honeycrisp. These apples hold their shape during cooking and add a nice contrast to the cinnamon-sugar mixture.
2. Prepare the Batter Properly
Prepare the batter right to get the perfect texture for your apple pannekoeken. Whisk the eggs and milk together until well combined, then add flour, cinnamon, sugar, and salt. Make sure to whisk out any lumps. The batter should be thin but not too runny. If it’s too thick, add a little more milk.
3. Get the Right Pan
The pan you use for making apple pannekoeken is important. A cast-iron skillet is an excellent choice as it retains heat well and distributes it evenly. A non-stick skillet can be used as well, but avoid using a thin pan because it can cause the pannekoeken to burn.
4. Cook the Apples Separately
While cooking the apples along with the batter might seem like a time saver, it can result in unevenly cooked apples or mushy apples. The best approach is to cook the apples in a separate pan until they’re golden brown and slightly softened. This way they’ll retain their shape and add a nice texture to the apple pannekoeken.
5. Preheat the Oven
Preheating the oven to 425°F before cooking the pannekoeken is important. This will allow the pannekoeken to puff up and create a nice, fluffy center. Make sure the oven is fully heated before you put the pan in it.
6. Use Butter or Oil
Using butter or oil in the pan is essential to prevent sticking and to create a golden brown crust on the apple pannekoeken. Melt the required amount of butter or oil in the skillet and swirl to coat the bottom and sides.
7. Pour the Batter Carefully
When pouring the batter into the skillet, make sure to distribute it evenly. Use a rubber spatula to smooth out any lumps or pockets of batter that might cause uneven cooking. Do not stir the batter once it’s in the skillet.
8. Add the Apples
Arrange the cooked apple slices on top of the batter, distributing them evenly over the surface. Do not press the apples into the batter. They should rest on top to create a beautiful, golden crust.
9. Bake Carefully
Bake the apple pannekoeken for 20-25 minutes or until the edges are puffed up and golden brown. The center should be slightly jiggly when touched. Do not overcook, as it can result in a tough, dry apple pannekoeken.
10. Serve Immediately
Serve the apple pannekoeken immediately after it’s cooked. Garnish it with powdered sugar, whipped cream, or maple syrup. Cut it into wedges and enjoy! In conclusion, apple pannekoeken is a delicious and easy breakfast recipe that anyone can cook. Selecting the right apples, preparing the batter correctly, using the right pan, cooking the apples separately, preheating the oven, adding butter or oil, pouring the batter carefully, adding the apples on top, baking carefully, and serving immediately are essential tips that will help you make the perfect apple pannekoeken.
