APPLE-OATMEAL COOKIES

Apple-Oatmeal Cookies image

My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

Provided by Buddy Valastro

Categories     dessert

Time 55m

Yield 16 large cookies

Number Of Ingredients 12

1 1/2 sticks plus 2 teaspoons unsalted butter, softened at room temperature
2 small Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
2/3 cup plus 1 teaspoon light brown sugar
1/8 teaspoon ground cinnamon
Kosher salt
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
2 cups oats
1 1/4 cup confectioners' sugar
1/4 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
  • In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
  • Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
  • Line 2 baking sheets with parchment paper. Scoop out 2 tablespoons of dough at a time and arrange them at least 2 inches apart on the prepared cookie sheet. Bake, rotating the sheets top to bottom halfway through baking, until the cookies appear set, 15 to 17 minutes. Remove and let cool for a few minutes on the sheet, then transfer to a baking rack to cool completely.
  • To make the optional glaze: Put the confectioners' sugar, the vanilla extract, and 1 tablespoon water in a medium mixing bowl and whisk until the mixture is smooth. Drizzle the glaze over the cookies using a spoon.

CHEWY APPLE OATMEAL COOKIES

Chewy Apple Oatmeal Cookies image

I had "inherited" bags and bags of apples and was trying to use them up and found this recipe in the August/September 2006 Taste of Home magazine that was chock full of other apple recipes. In the second batch, I added walnuts which were also a very nice addition. Even though the recipe calls for dried apples, don't let that make you hesitate in making these. I used chopped apples - 1 cup - and they were delicious! Also, be sure to flatten these a bit on the cookie sheet, they do not spread out while baking.

OATMEAL APPLE PIE COOKIES

Oatmeal Apple Pie Cookies image

Perfectly soft and chewy little apple pie tart-like cookies with oatmeal! These little guys took first place at my work cookie contest, so I guess they're pretty good!

Provided by Amy Loveless

Time 2h

Yield 48

Number Of Ingredients 22

1 cup unsalted butter, softened
1 cup white sugar
1 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon apple pie spice
3 cups quick-cooking oats
½ cup chopped walnuts
2 large apples - peeled, cored, and diced
1 tablespoon unsalted butter
1 tablespoon white sugar
1 teaspoon ground cinnamon
2 large egg whites
¼ cup caramel sundae syrup (such as Smucker's®)
1 teaspoon ground cinnamon
1 teaspoon cream of tartar
2 cups powdered sugar, or more to taste
1 tablespoon milk, or more as needed

Steps:

  • Beat butter, sugar, and brown sugar for cookie dough in a bowl with an electric mixer until creamy. Stir in eggs and vanilla.
  • Combine flour, salt, baking soda, cinnamon, and apple pie spice in a separate bowl. Gradually mix into the wet ingredients until incorporated. Mix in oats and walnuts. Cover and chill in the refrigerator for at least 1 hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Set out two 24-cup mini muffin tins. Place paper towels under 2 wire racks.
  • Combine apples, butter, sugar, and cinnamon for filling in a microwave-safe bowl; microwave on high for 3 minutes, stirring halfway through to distribute the butter, until apples have softened. Transfer to a strainer to drain and cool.
  • Roll chilled dough into walnut-sized balls. Fill each muffin cup with a ball and press down to flatten slightly.
  • Bake in the preheated oven for 10 minutes. Remove and cool for 2 minutes. Press a shot glass down in the middle of each cookie to form it into a cup shape. Transfer from the pan to the prepared wire racks to cool.
  • Put apple filling into the center of each cookie, making sure it's evenly distributed to fill all cookies.
  • Beat egg whites for icing in a glass, metal, or ceramic bowl until foamy. Mix in caramel syrup, cinnamon, and cream of tartar. Gradually mix in 2 cups powdered sugar and mix until it reaches a good drizzling consistency, similar to that of the caramel syrup. Add more powdered sugar if necessary; you don't want it to be so thin that it will run.
  • Drizzle icing over the cookies; it's okay if it melts into the apple filling.
  • Enjoy right away while they're super fresh, or wait until icing hardens, about 3 hours.

Valuable Tips for Baking the Perfect Apple Oatmeal Cookies

Cookies are one of the most popular desserts around the world. They are easy to make, delicious and come in a variety of flavors. However, baking cookies is not always easy, especially if you are a beginner. One of the most popular types of cookies is apple oatmeal cookies. These cookies are nutritious and perfect for a quick breakfast. In this article, we will give you some valuable tips for baking apple oatmeal cookies.
Choosing the Right Apples
The first and most important step in making apple oatmeal cookies is choosing the right apples. Not all apples are created equal. Some apples are ideal for baking, while others are better for eating. Some of the best apples for baking include Granny Smith, Honeycrisp, Braeburn, and Jonathan.
Granny Smith Apples
Granny Smith apples are tart and crunchy, making them perfect for baking. These apples are also able to retain their shape and texture even after being baked.
Honeycrisp Apples
Honeycrisp apples are sweet and juicy, making them ideal for use in desserts such as apple oatmeal cookies. These apples are crisp and hold up well during baking.
Braeburn Apples
Braeburn apples are a combination of sweet and tart flavors making them ideal for baking. They are also firm and hold up well during baking.
Jonathan Apples
Jonathan apples are tart and firm, making them ideal for baking. These apples are also small, which makes them easy to peel and chop.
Preparing the Apples
Once you have chosen the right apples, the next step is to prepare them. Apples for baking should be peeled, cored, and diced into small pieces. If the apples are not diced into small pieces, they will not be evenly dispersed throughout the cookie dough, and some cookies will have more apples than others.
Add the Oats
Oats are an essential ingredient in apple oatmeal cookies. They are not only nutritious but also add a unique texture to the cookies. When adding oats, it is essential to use old-fashioned rolled oats, as they hold up better during baking compared to quick oats.
Use a Good Quality Flour
Flour is one of the essential ingredients in cookies. When making apple oatmeal cookies, it is crucial to use a good quality all-purpose flour. The flour should be fresh and not expired, as old flour can impact the texture and taste of the cookies.
Pay Attention to the Texture
One of the most important aspects of baking apple oatmeal cookies is getting the texture right. The cookies should be chewy and moist, but not too crumbly. To get the right texture, it is essential to mix the dough ingredients correctly and not overmix. Overmixing the dough will result in tough cookies.
Chill the Dough
Chilling the dough before baking is essential in ensuring that the cookies hold their shape during baking. Chilling the dough also allows the flavors to meld together, resulting in a more delicious cookie. The dough should be chilled for at least 30 minutes before baking.
Baking Time and Temperature
Baking time and temperature are critical in making the perfect apple oatmeal cookies. The cookies should be baked at 350°F for 12-15 minutes. Over-baking the cookies will result in dry and crumbly cookies, while under-baking will result in cookies that are not fully baked.
Storage
Once the cookies are baked, they should be stored correctly to maintain their freshness. The cookies should be stored in an airtight container or ziplock bag and kept in a cool, dry place, away from direct sunlight. The cookies can be stored for up to one week.

Conclusion

Apple oatmeal cookies are a delicious treat that can be enjoyed any time of day. By following these valuable tips, you can make the perfect apple oatmeal cookies. Remember to choose the right apples, add the oats, use good quality flour, pay attention to texture, chill the dough, and bake at the right temperature and time. With these tips, you'll have the best apple oatmeal cookies around!
