My mom was the one who first made this recipe and let me tell you, it is to die for! Tastes like a dessert you would order at a fancy restaurant! It came off of a real estate card in the mail. I had to share it because its amazing!! (You may want to double the recipe, its that good!)

- For cake preheat oven to 350. Cream butter and sugar. Add egg and apples until incorporated. Mix in remaining ingredients. Bake 40 minutes in a 9" square pan. Serve hot with rum sauce and ice cream.
- For sauce, heat butter, cream and sugar over moderate heat 10-15 minutes until sugar dissolves. (Don't boil). Add nutmeg and rum flavoring. Serve hot over cake.

- Cream the butter; gradually add the sugar, beating well at medium speed of an electric mixer. Add eggs, one at a time, beating well after each addition.
- Combine flour and the next 5 ingredients; add to the creamed mixture, beating until blended. Stir in the apple and pecans.
- Pour batter into a greased and floured 13 x 9 x 2 inch baking pan. Bake at 325 degrees for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean. Let cool completely in the pan on a wire rack. Serve with Hot Buttered Rum Sauce.
- Hot Buttered Rum Sauce:.
- Combine the sugar, butter, and half and half in a saucepan; cook over low heat, stirring occasionally, until sugar dissolves. Remove from heat, and stir in the rum extract.

Wonderful cake, it has a wonderful flavor, goes with anything. I orginally started making this on Thanksgiving. Lots of ingredients but well worth it in the end.

- 1. In large bowl, combine the apples and sugar let stand for 30 mins.
- 2. In a small bowl, whisk the eggs, oil, and almond extract. Add to teh apple mixture and toss to coat. Combine the flour, baking powder,salt, and cinnamon, stir into apple mixture just until moistended. Stir in pecans. (if you like nuts add some more to suit your taste)
- 3. Transfer mixture to a large greased 11-inch x 7inch x 2in baking dish. Bake at 350 for 35 - 40 minutes, or until toothpick comes out clean.
- 4. For sauce, in a small saucepan, melt butter. Stir in the sugar, flour, and salt until smooth. Gradually add water. Bring to a boil, cook and stir for 2 minutes. Remove from heat, stir in vanilla and rum extract. Serve with warm cake. ( I drizzle it over the entire cake, then serve.
