APPLE MINCE WALNUT PIE
I came up with this pie several years ago when I was making pies for Christmas and ended up with not quite enough filling for a whole pie. I added mincemeat and walnuts and it was a big hit. This pie is not as intense in flavor as a straight mincemeat pie and even people who are not a big fan of mince pies like it.

Steps:
- 1. Combine sugar, flour, spices and salt in bowl. Add apples, mix lightly.
- 2. Add mincemeat and walnuts, mix.
- 3. Heap into pastry lined 9-inch pie pan, dot with butter. Adjust top crust, flute edges, cut vents. Brush top crust with milk, sprinkle with sugar.
- 4. Bake in 425 degree oven for 50 to 60 minutes or until crust is browned and apples are tender. Cool on rack.
- 5. NOTES : Use a combination of cooking apples such as Jonagold, Jonathan, Macintosh, Rome, Newton Pippen, Winesap or Golden Delicious for the best flavor. You can use homemade or commercial mincemeat in this.

Preparation
To prepare the perfect apple mince walnut pie, you need to follow these steps:For the pie crust:
- Combine flour and salt in a mixing bowl.
- Cut in the butter until the mixture is crumbly and the butter is pea-sized.
- Sprinkle cold water over the mixture and stir with a fork until the dough forms. Do not overwork the dough.
- Divide the dough into two portions and flatten them into disks. Cover with plastic wrap and chill for at least one hour before rolling out.
For the filling:
- Preheat your oven to 375°F. Line a baking sheet with parchment paper.
- Peel, core, and slice the apples. In a bowl, toss them with lemon juice, sugar, cinnamon, nutmeg, and flour. Add the prepared mincemeat.
- In a small saucepan, toast the walnuts over low heat, stirring constantly. Cool, chop coarsely and add them to the apple mince mixture, then stir to combine.
- Roll out one of the pie crusts and place it in the bottom of a 9-inch pie dish. Trim the crust leaving an overhang. Freeze for 15 minutes.

- Brush the top of the pie with egg wash and sprinkle with sugar.
- Bake the pie for 50-60 minutes until the crust is golden brown and the filling is bubbling. If the crust browns too quickly, cover it with foil for the last 15-20 minutes of baking.
- Remove the pie from the oven and let it cool completely before serving.
