This is our favorite meatloaf, its fast and easy to make and the leftovers are great in sandwiches or rolled up in soft tacos with cheese tomato and lettuce.

1 large onion, finely chopped
2 tablespoons butter
2 1/2 lbs ground beef
1 1/2 cups fresh breadcrumbs
2 cups apples, peeled and cored, finely chopped
3 eggs, beaten
1 tablespoon chopped parsley
1/2 teaspoon ground black pepper
2 teaspoons salt
1/4 teaspoon allspice
1/4 teaspoon dry mustard
1/4 cup ketchup

Steps:

  • Saute onion in butter until soft.
  • Combine all ingredients, mixing thoroughly.
  • Form into loaf and place in 10- x 14-inch baking pan (or pack into large, greased loaf pan).
  • Bake at 350 degrees, for 1 hour.
  • Remove from oven and let sit 15 minutes before serving.

1 pound ground beef
½ pound ground pork
1 egg
⅓ cup finely chopped apple
½ cup finely chopped onion
2 tablespoons Worcestershire sauce
½ teaspoon salt
¼ teaspoon pepper
1 cup shredded Cheddar cheese
½ cup bread crumbs
½ cup quick cooking oats

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Mix the beef, pork, egg, apple, onion, Worcestershire sauce, salt, and pepper in a mixing bowl until evenly mixed. Add the Cheddar cheese, bread crumbs, and oats; mix again until evenly mixed. Pack the meat mixture into the prepared loaf pan.
  • Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (72 degrees C). Allow the meatloaf to rest for 10 minutes before slicing to keep the meat from crumbling.

1 1/2 lb lean ground beef
1/2 lb italian sausage, mild
2 eggs
1 c dried bread crumbs
1 medium sweet onion, chopped
1 large apple, firm, chopped
12 slice bacon, 6 cooked and chopped, 6 uncooked
1 c apple butter, reserve 1/2 c. for glaze
1/2 c cinnamon applesauce
6 Tbsp hickory barbecue sauce, reserve 3 tbs for glaze
salt and pepper

Steps:

  • 1. Preheat oven to 350 degrees. Grease 2 loaf pans. Line the bottom of each loaf pan with bread slices. (This will soak up any grease from the cooking meatloaf.) Set aside.
  • 2. Combine meats, eggs, bread crumbs, onion, apple, chopped bacon, apple butter, apple sauce, and barbecue sauce using your hands to mix thoroughly. Salt and pepper to your liking. Mix thoroughly. Separate and put into loaf pans.
  • 3. Mix the rest of the apple butter and barbecue sauce to make glaze. Spread over top of meatloaf mixture.
  • 4. Place 3 slices of uncooked bacon on each loaf.
  • 5. Bake at 350 degrees for 45 minutes to an hour until cooked through. Switch oven to broil setting. Broil for 10 minutes or until bacon on top is crisp. Let meatloaf rest before moving to serving plate. (Remember, the bread is not for eating. It is soaked with grease. Just discard.)

1 3/4 cups toasted bread, rough chopped (as for stuffing)

1 1/2 cups granny smith apples, finely chopped
3 large eggs
2 teaspoons salt (to taste)
3 tablespoons creamed horseradish
1 onion, finely chopped
3/4 cup ketchup
2 tablespoons prepared mustard
1 (16 ounce) can frozen condensed apple juice
1/2 cup fat free chicken broth
1/2 cup ketchup
2 -3 teaspoons asian five-spice powder

  • With wooden spoon, mix all ingredients in large bowl.

Steps:

  • Put the rack in the middle of oven. Preheat to 350°F Put parchment paper or foil paper on a baking sheet.
  • In a bowl, mix well the pork, apples, breadcrumbs, spices and worcestershire sauce. Add salt and pepper generously.
  • With the meat mixture, give the sahpe of a loaf of 10 x 4 inches on the baking sheet. Spread bacon slices, side by side diagonally on the loaf in a way to cover well the meat. Cook in oven about 1 hour. If you're using a meat thermometer, it should read 180 F (82 c). Remove from the oven and baste with apple jelly. End the cooking under the broil until well golden.
  • Serve with applesauce, mashed potatoes and green beans.

2 apples, cored, diced, leave the the peel on
1 medium onion, diced
2 stalks celery, diced
2 egg whites
1 cup whole wheat bread crumbs
2 tablespoons fresh dill, chopped
1 teaspoon lemon zest
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
2 tablespoons fat-free honey mustard dressing (or honey mustard condiment can be used to shave 1 point off each serving, my kids like the sweeter d)

Steps:

  • Spray a large skilet with cooking spray. On medium heat, add onions and celery cook until they begin to soften about 2 minutes. Add apples and continue to cook until the apples are softened and onions are slightly browned, about 8 minutes. Take off the heat or transfer to a bowl to cool for about 15 minutes.
  • In another bowl, mix together ground chicken, egg whites, dill, bread crumbs, sat, pepper, nutmeg, and lemon zest.
  • Add apple mixtues and combine well.

4 ounces fresh sourdough bread, trimmed of crust and cut into slices
1 piece peeled fresh ginger (1 1/2 inches), coarsely chopped
2 garlic cloves, coarsely chopped
2 small onions, coarsely chopped (about 1 1/2 cups)
2 green apples (1 cored, peeled, and coarsely chopped; 1 whole)
2 large eggs, beaten
3 pounds ground turkey
4 teaspoons coarsely chopped fresh sage, plus leaves for garnish
2 teaspoons coarse salt
1 teaspoon freshly ground pepper
2 tablespoons pure maple syrup

Steps:

  • Preheat oven to 375 degrees. Process bread in a food processor until coarse crumbs form. (You should have about 2 cups.) Transfer to a large bowl. Put ginger and garlic in the food processor; process until chopped. Add onion and chopped apple; puree. Transfer to the bowl with breadcrumbs. Add eggs, turkey, sage, salt, and pepper. Mix thoroughly with your hands.
  • Transfer to a 12 3/4-by-4 1/2-by-3 1/4-inch terrine mold. Peel and core remaining apple. Cut into 1/8-inch-thick rings. Arrange apples on top of loaf. 3/4 lb. ground pork
1 large apple, shredded (about 1 cup)

This meatloaf always comes out moist and tasty, any leftovers can be served on a bun with sauce. It's a great alternative to regular meatloaf with a little bit of sweetness. You don't have to have the sauce with it, it's good on it's own.

1 large apple, peeled,grated (1 cup)
1 lb ground lean pork (or pork/beef, pork/chicken blend)
1 yellow onion, finely chopped
1 1/2 cups soft breadcrumbs
1 egg, lightly beaten
1/4 cup chopped parsley
1 pinch dried sage
salt and pepper
1 -2 medium chopped onion (1/2 cup)
3 tablespoons butter
3 tablespoons flour
1 1/4 cups beef or 1 1/4 cups chicken stock
1 tablespoon chopped parsley
1 teaspoon chopped dill
1/4 cup apple cider or 1/4 cup apple juice (or wine, if you prefer)

Steps:

  • Preheat oven to 325°F.
  • Combine apple, meat, onion, bread crumbs, egg, parsley and sage.
  • Season with salt and pepper.
  • Press into an 8" x 4" loaf pan or free-form into a loaf shape.
  • Bake for 1 hour, drain off any melted fat.
  • While meatloaf is baking, start onion gravy by cooking onions in the butter until carmalized, about 5 to 10 minutes, depending on how dark you like them.
  • Stir in the flour, until it looks kind of like a paste.
  • Add the rest of the ingredients, continually stirring.
  • When meatloaf is ready, take it out of the oven and let it sit for approximately 10 minutes.
  • Slice and serve with onion gravy.

1 large onion, finely chopped
2 tablespoons butter
2 1/2 lbs ground beef
1 1/2 cups fresh breadcrumbs
2 cups of finely chopped peeled and cored apples
3 eggs, beaten
1 tablespoon of chopped parsley
1/2 teaspoon pepper
2 teaspoons salt
1/4 teaspoon allspice
1 tablespoon prepared mustard
1/4 cup ketchup

Steps:

  • Sauté the onions in butter until soft.
  • In large bowl, combine the onion, beef, bread, crumbs, apples, eggs, parsley, pepper, and ketchup.
  • Form into a loaf and place in a 10x14-inch baking pan or pack into a large greased loaf pan.
  • Bake at 350°F for 1 hour. Remove from oven and let sit for 15 minutes before serving.

There is a man that works in the meat department of the store where my DD works that can always be depended on for the most wonderful recipes he has developed. The other day Bill shared a taste of this meatloaf with me, and after the teaser I simply had to have the recipe. I made this up last night, but doubled the recipe and had two loaves, one for dinner and the other to freeze for later. If you find you are texture challenged, you may find that you will want to mix a half sausage and half ground beef for the meat. This Loaf an appetizing blend of sweet and spicy, and will be something you'll be proud to serve your family as well as important company.

1 lb ground sausage
1 apple, cored, peeled, and medium chopped
1/2 small onion, finely chopped
1 teaspoon pappys seasoning, for meat
1 teaspoon garlic, minced
1 teaspoon Worcestershire sauce
1/4 teaspoon paprika
1/4 teaspoon pepper
salt
1 (16 1/2 ounce) jar apple butter, divided (I used Smuckers)

Steps:

  • Mix first seven ingredients and 1/2 of the jar of Apple Butter together in large bowl until well blended. (Be sure to wash your hands well before starting).
  • Put meat into loaf pan and form a loaf (or divide into muffin tins for individual servings that can be frozen for later). Spread remainder of Apple butter over loaf.
  • Bake at 350 degrees for 30- 45 minutes until done.
  • To make the gravy simply pour pan drippings into sauce pan. Mix 1 tablespoon flour with 3/4 cup water and pour into drippings slowly over low heat, stirring often until thickened to your liking. You may need to add more water if you want.
  • Serve with mashed potatoes, and a nice crisp green salad.
