REFRESHING APPLE TAPIOCA PUDDING

Refreshing Apple Tapioca Pudding image

This recipe comes from a magazine from Quebec. It's healthy. In the cooking time, I included the 2 hours in the fridge. I tried it last week and liked it a lot. I used homemade applesauce (unsweetened). I used more cinnamon and omitted the nutmeg. I guess splenda would be great instead of brown sugar to make it healthier. And I used 1% fat milk.

APPLE TAPIOCA (MOM'S SECRET RECIPE)

Apple Tapioca (MOM'S SECRET RECIPE) image

Funny thing, but Mom fooled me with this one recipe when she told me it was "a secret family recipe"! I absolutely love this, and I raved about it so much, she couldn't resist keeping it secret. Finally she couldn't keep her secret any longer...She told me when I requested the recipe, "it's on the box of tapioca!" What a...

Time 35m

Number Of Ingredients 10

1/3 c quick cooking tapioca
1 c firmly packed light brown sugar
4 c tart apples, cored,pared and sliced
2 c water
2 Tbsp lemon juice
2 Tbsp butter
1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp freshly grated nutmeg
1 qt vanilla ice cream or pound cake.

Steps:

  • 1. Mix all ingredients, and simmer for five minutes, add apples, stirring often. Simmer until apples are tender, about twelve to fifteen minutes. I prefer to use a double boiler, and let it simmer longer until apples are soft. No burning in the pan this way.
  • 2. Serve this warm over scoop(s) of the best vanilla ice cream,or over pound cake.
  • 3. I found this silly picture of mom and Paul, and it seemed so appropriate, I had to include it with this recipe! Happy times, taken more than 25 years ago.
  • 4. This morning I had an idea, and knowing there was puff pastry in the freezer, I got it out and let it thaw. Then I pulled out my deep dish apple pie plate, and cut the puff pastry to form a normal shaped pie crust. I spooned the cold apple tapioca into it, leaving room on top for several strips of puff pastry which I twisted and "using water on the ends pressed it onto the outer edges of the pie crust". I baked at 350 degrees for about 40-45 mins. checking every five minutes during the last 15 mins, to be sure it was not burning. It looks delicious! Now I need to buy some ice cream to go on top.

Apple honey tapioca pudding is a delicious and healthy dessert that can be enjoyed by everyone. It is packed with nutrients from the apples, honey, and tapioca, making it a great option for those who want to indulge in something sweet yet still maintain a healthy diet. Making apple honey tapioca pudding is relatively easy but requires some tips to achieve the perfect texture, flavor, and consistency. In this article, we will discuss valuable tips that can help you make a delicious apple honey tapioca pudding.

The ingredients

Before we dive into the tips, it's essential to have a list of ingredients required to make apple honey tapioca pudding. The ingredients include:
  • 1/2 cup tapioca pearls
  • 2 cups water
  • 1/4 teaspoon salt
  • 1/4 cup honey
  • 2 apples, diced
  • 1/2 teaspoon vanilla extract
  • 1 cup milk
  • 3 egg yolks, beaten

The tips

1. Soak the tapioca pearls

Soaking the tapioca pearls before cooking them is the first step to making a perfect apple honey tapioca pudding. Soaking the pearls enables them to soften and expand before cooking. As a result, the pearls will cook evenly and have a consistent texture. To soak the tapioca pearls, place them in a bowl of cold water and let them sit for at least an hour. You can also soak the pearls overnight, especially if you plan to make the pudding in the morning.

2. Cook the tapioca pearls in boiling water

Once the tapioca pearls have soaked, the next step is to cook them. The key to cooking tapioca pearls is to start with boiling water. Add two cups of water to a pot and bring it to a boil. Next, add the soaked tapioca pearls and stir them well. Reduce the heat to low and let the pearls simmer for about 15 minutes while stirring occasionally. Avoid stirring too hard as this can break the pearls.

3. Sweeten the tapioca pearls with honey

After the tapioca pearls have cooked, add 1/4 cup of honey to the pot and stir well. The honey adds sweetness to the pudding and complements the natural sweetness of the apples. If you prefer a sweeter pudding, you can add more honey to taste.

4. Add the diced apples and vanilla extract

The next step is to add the diced apples to the pot and stir gently. The apples provide a crunchy texture to the pudding and add a burst of flavor. Additionally, adding vanilla extract enhances the flavor of the pudding and makes it more aromatic.

5. Mix in the beaten egg yolks

The next step in making apple honey tapioca pudding is to mix in the beaten egg yolks. Be sure to whisk the egg yolks well before adding them to the pot. Slowly pour the beaten egg yolks into the pot while stirring continuously. The egg yolks help to thicken the pudding and give it a smooth and creamy texture. Be careful not to overcook the egg yolks. Overcooked egg yolks can turn the pudding into scrambled eggs.

6. Heat the pudding to thicken it

After adding the egg yolks, heat the pudding over medium heat while stirring constantly. The pudding will start to thicken after a few minutes. Be patient and continue stirring until it reaches the desired consistency. If the pudding is too thick, you can add more milk to thin it out. Conversely, if the pudding is too thin, you can continue cooking it until it thickens to your liking.

7. Chill the pudding before serving

Once the pudding has reached the desired consistency, remove it from the heat and allow it to cool. After it has cooled, refrigerate it for at least an hour before serving. Chilling the pudding allows it to set, and the flavors blend together. You can also garnish the pudding with whipped cream or sliced apples before serving.

Conclusion

Apple honey tapioca pudding is a delicious dessert that can be enjoyed by everyone. With the right ingredients and techniques, you can make a perfect pudding that is creamy, sweet, and packed with nutrients. Remember to soak the tapioca pearls, sweeten them with honey, add diced apples and vanilla extract, mix in beaten egg yolks, and heat the pudding to thicken it. Finally, be sure to chill the pudding before serving to allow it to set and the flavors to blend together. Follow these tips, and you'll be sure to have a delicious dessert that everyone will love.
