- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix apple jelly, honey, mustard, cinnamon, and salt together in a bowl. Brush chicken breasts with glaze.
- Place glazed chicken breasts on the preheated grill; cook, occasionally brushing chicken with more glaze, until chicken is no longer pink in the center, about 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

CHICKEN-APPLE-WALNUT SALAD WITH HONEY MUSTARD DRESSING
Served at the 1870 Wedgwood Inn in New Hope Boro, Pennsylvania, this simple chicken salad combines common ingredients in a less-than-common way, and with great results. If you happen to have some cooked chicken in your fridge (or perhaps a rotisserie chicken), you could probably save time by simply shredding that and using it instead of the freshly cooked diced chicken. NOTE: Cook time is chill time for the prepared salad.

- Heat olive oil in a skillet; add the diced chicken and cook thoroughly; cool.
- In a big bowl, combine cooled chicken, apples, walnuts, and celery.
- In a small bowl, combine the mayonnaise, honey, mustard, and rosemary. Fold the mayonnaise mixture into the chicken mixture.
- Chill.
- Serve over a red lettuce leaf.

- Heat grill. In small saucepan, combine all glaze ingredients; mix well. Bring to a boil over medium heat. Boil 1 minute, stirring constantly.
- When ready to grill, lightly brush glaze on one side of each chicken breast half. Place chicken, glaze side down, on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Lightly brush glaze over chicken; cook 5 to 8 minutes.

Found in an old flyer and tried it out. My kids loved the hint of apple flavor. Great grilling recipe for those summer days when you don't want to turn on an oven. Can be prepared in the oven under a broiler...4-6 inches from broiler - broil 15-20 minutes occasionally basting with glaze. ***For the Chef who asked - it is 1/3 cup apple jelly (not applesauce) that is the first ingredient - it is not showing up in the recipe even though it is there in the "edit tool" -- I tried to zmail you but you are not accepting outside zmails from another chef. - Spray grill racks with non-stick spray and then preheat grill.
- In a small bowl, combine all the ingredients except the chicken; blending well.
- When ready to BBQ, brush chicken with jelly mixture and place on gas grill over medium heat (or on charcoal grill 4-6 inches from medium coals).

HONEY MUSTARD CHICKEN BREASTS WITH APPLE SLICES
Our family loves honey mustard, and it is a natural with chicken breasts since they are mild and absorb the flavor so well. Just make sure they are skinless and can absorb the sauce (plus they are so much healthier that way!) This is a favorite fall and winter dish for us, or when we have guests!

- 1. Begin by rinsing chicken breasts and slicing them into halves (this results in 6-8 servings).
- 2. Then, in large saucepan, boil chicken breasts until meat is no longer pink.
- 3. While chicken is cooking, mince green onion and set aside, reserving 2 teaspoons for garnish.
- 4. Next, mix honey and mustard thoroughly in a mixing bowl and stir in green onion.
- 5. When chicken is cooked thoroughly, extract 1 1/2-2 cups broth from saucepan and mix with honey mustard mixture in bowl to prepare a sauce. Stir in 2 teaspoons of cornstarch until absorbed completely sauce is smooth; cook mixture in a small saucepan over low heat until thickened. Slowly add additional teaspoon of cornstarch only if needed.
- 6. Then, pour a small amount of sauce over bottom of prepared glass baking dish (11" X 7" or 9" square)to coat. Arrange split chicken breasts over this sauce in dish. Add remainder of honey mustard sauce, covering the chicken.
- 7. Thinly slice apple into 12-16 slices. Arrange slices between chicken breasts, also coating with sauce. Sprinkle reserved minced green onion over top as garnish.
- 8. Bake in preheated 350 degree oven for approximately 30 minutes. Sauce will thicken more during baking.
- 9. Allow to sit about 5 minutes before serving.
- 10. Serve chicken warm. A small ladle can be used for apples and sauce. Remaining servings refrigerate well for 1-2 days.
HONEY-BRAISED CHICKEN THIGHS WITH APPLE
Steps:
- Preheat the oven to 300 degrees Combine the cinnamon, ginger, nutmeg and salt. Rub the spice mixture all over the chicken thighs. Heat the oil in a large shallow ovenproof braising pan or roasting pan large enough to hold all the chicken, over medium high heat. Add the chicken thighs, smooth sides down; if the pan seems crowded, cook the thighs in 2 batches. Cook until the thighs have some brown color, about 4 minutes, then turn them over and cook for 2 to 3 minutes. Transfer the browned pieces to a large plate. After all the chicken has been browned, add the onion to the pan. Reduce the heat as needed so the onion cooks without burning; this will take 5 to 6 minutes. Add the apple pieces and cook for 2 to 3 minutes, stirring, then add 3/4 cups of the apple cider, the broth and honey. Bring the liquid to a boil then add the browned chicken pieces. Cover the pan and transfer to the oven. Bake for about 1 hour, or until the chicken is cooked through and tender. Transfer the chicken and any intact apple pieces to a serving bowl orplatter. Return the pan to the stove, over high heat so the liquid in the pan comes to a boil. Meanwhile, whisk together the remaining 3 tablespoons of apple cider and the cornstarch in a small bowl so the cornstarch dissolves, then whisk that mixture in to the liquid in the pan. As soon as the liquid thickens to form a sauce, remove the pan from the heat. Pour the thickened sauce over the chicken and apples. Serve hot.

- Dip chicken cutlets first in milk, flour, eggs, breadcrumbs, in hot oil pan fry each cutlet till golden. drain on papertowels.
- To Stuff:
- Cook all stuffing ingredients in a small pot till softened.

- 1. Heat oven to 450. Set a wire rack on a foil-lined baking sheet. Place the drumsticks on the rack and season both sides generously with salt and pepper. Bake 30 minutes; flip the drumsticks and continue baking until golden and crisp, about 30 more minutes. 2. Meanwhile, prepare the sauce. Bring the apple juice, vinegar, soy sauce, honey, lemon zest, red pepper flakes (if using) and a pinch of salt to a high simmer in a medium saucepan over medium-high heat.
