APPLE GORGONZOLA SALAD WITH BALSAMIC VINAIGRETTE
My take on the apple gorgonzola salad at Buca di Beppo. I have also made the dressing using Apple Cider Vinegar in place of the Balsamic with excellent results. It is a family and friend favorite!

- If using proscuitto, lay very thin slices on baking sheet in a single layer and bake at 350 degrees for 10 minutes, watching so it doesn't burn.
- To toast walnuts, place on baking sheet in a single layer and bake at 350 degrees for 5-10 minutes, watching so they don't burn.

APPLE, ENDIVE & GORGONZOLA SALAD
This recipe from Gourmet Magazine (October 1998) makes a wonderfully simple and delicious winter salad. The dressing is fabulous and you may want to try it on other salads. (Also, this makes a lightly dressed salad, some may want to double the dressing. Cut the apple soon before serving so that it does not brown. You can also try this with raw (untoasted) or candied nuts. Enjoy!

Steps:
- Preheat oven to 350°F.
- In a shallow baking pan toast walnuts in middle of oven until fragrant, about 10 minutes, and cool. Chop walnuts.
- In a small bowl whisk together vinegars and 1/2 teaspoon honey and add oil in a stream, whisking until emulsified. Season dressing with salt and pepper.
- Separate 4 outer leaves from each endive and arrange 3 leaves on each of 4 plates. Cut remaining endive crosswise into 1/4-inch-thick slices and put in a large bowl. Peel apple and using a mandoline or other manual slicer cut thin slices lengthwise from 4 sides, stopping just before core. Make small stacks of slices and cut stacks into thin julienne strips.
- Toss sliced endive with dressing and divide among plates, mounding on whole leaves. Top salads with Gorgonzola, walnuts, apple, chives, and salt and pepper to taste. Drizzle remaining 2 teaspoons honey over salads.

APPLE AND GORGONZOLA SALAD
This dressing is one my Grandmother used to make. I added the Gorgonzola. I mistakenly marinated the apples in the dressing for a few hours one day and it tasted so good, I do it every time now.

APPLE-GORGONZOLA ENDIVE SALAD
Curly endive is slightly bitter, so it's a good match for sweet, crunchy apples. The dressing recipe, which came from my grandmother, really pulls the salad all together. -Pat Ferjancsik, Santa Rosa, California

APPLE GORGONZOLA SALAD
I recreated this at home after having a very similar salad at Buca di Beppo (an Italian family style restaurant). Ingredient amounts are approximate, because I simply toss in the amount that "looks" right. But, the combination of ingredients are soooo good. I think even the most inexperienced can throw this together without explicit instructions... :) Oh, for the Spiced Walnuts, try something similar to Chef #159145' Recipe #139127.

Apple Gorgonzola salad is a classic and delicious mix of sweet and savory flavors. It is a perfect salad to serve with grilled meats or as a stand-alone main dish. In this article, we will discuss some valuable tips to keep in mind while making apple gorgonzola salad recipes.
Choose the Right Apples
Apples are the most important component of this recipe, and it's essential to choose the right type of apples that will give the salad its desired taste and texture. Choose apples that are firm, crisp, and slightly tart, such as Granny Smith or Honeycrisp. These types of apples will add a crunch to your salad and will balance out the sweetness of the dressing.
Keep the Dressing Simple
The dressing is another critical component of this salad. It's important to keep the dressing simple so that the flavors of apples and cheese can shine through. A simple dressing of olive oil, apple cider vinegar, honey, salt, and pepper will enhance the flavor of the salad rather than overpower it. Avoid using any dressings that have a strong flavor such as spicy or citrus-based dressings.
Add Some Texture
Incorporating different textures into the salad will add depth and make it more appealing. Consider adding some nuts such as toasted walnuts, pecans, or almonds, which will add some crunch to the salad. You could also add some dried fruits such as cranberries, raisins, or apricots for a chewy texture.
Balancing the Flavors
It's essential to balance the sweetness of the apples with the saltiness of the cheese. Gorgonzola cheese has a strong and sharp flavor, and it's important to use it sparingly. Use it as a flavor enhancer, not a main ingredient. You can use other types of cheese as an alternative, such as blue cheese, feta cheese, or goat cheese, which pair well with apples.
Preparation is Key
Before making the salad, it's important to prep all the ingredients. Wash and slice the apples and chop any additional ingredients such as nuts or dried fruits. Crumble the gorgonzola cheese into small pieces, ensuring that there are no big chunks. This will ensure that each bite has a balanced amount of apple, cheese, and other ingredients.
Serve it Right
Serving the salad at the right temperature is crucial. This salad tastes best at room temperature or slightly chilled. Keep the dressing separate from the salad until ready to serve. This will prevent the salad from getting soggy or wilted. Serve the salad in a shallow bowl or on a platter, and sprinkle the cheese and nuts on top of the salad. This will make the salad look more appetizing and will add a nice texture to each bite.
Conclusion
Apple Gorgonzola salad is a delicious combination of sweet and savory flavors that is perfect for any occasion. Following these valuable tips will help you make a perfect apple gorgonzola salad recipe that is balanced, flavorful, and visually appealing. With the right preparation, ingredients, and proper serving, you can impress your friends and family with an amazing salad that they won't forget.
