APPLE-GLAZED ROAST CHICKEN AND RICE

Apple-Glazed Roast Chicken and Rice image

The glimmering, crispy skin of this chicken dish gets its flavor from a sweet-tart blend of apple jelly and cider vinegar. Tip: To save time, cook the rice and chicken together in a casserole dish with a tight-fitting lid. That way the rice will remain moist as it bakes.

1. Choosing the Right Chicken
The first step to making a delicious apple glazed roast chicken and rice meal is choosing the right chicken. It is essential to purchase high-quality chicken that is fresh and has no signs of discoloration or unpleasant odor. You may choose between a whole chicken or cut up chicken pieces, depending on your preference. If you are on a tight budget, you may opt for chicken thighs, which are less expensive than chicken breasts.
2. Preparing the Chicken
Before roasting the chicken, it is essential to prepare it properly. Rinse the chicken in cold water and pat it dry with paper towels. Season it with salt, pepper, and your preferred spices. You may also stuff the chicken with herbs, garlic, onion, or lemon to add flavor.
3. Choosing the Right Rice
Choosing the right rice for your apple glazed roast chicken meal is just as important as choosing the right chicken. You may opt for long-grain white rice or brown rice, depending on your preference. Brown rice has more nutrients and fiber than white rice, making it a healthier option.
4. Preparing the Rice
Cooking the rice is all about getting the right texture and flavor. To prepare fluffy and delicious rice, rinse the rice in cold water and place it in a pot with water according to the package instructions. Bring the water to a boil, reduce the heat and cover the pot, and let it simmer until the rice is cooked. Fluff the rice with a fork, and it is ready to serve.
5. Adding Apples to the Dish
Apples are the star of this dish. You may choose between sweet or tangy apples depending on your preference. Cut them into wedges or cubes, and add them to the dish during the last few minutes of cooking. Apples add a sweet and tangy flavor to the dish and make it more nutritious.
6. Making the Glaze
The glaze is what makes this dish unique. To make the perfect glaze, use apple juice, brown sugar, honey, mustard, and apple cider vinegar. Mix the ingredients in a saucepan, heat them until they boil, and then let the mixture simmer until it thickens. Glaze the chicken with the mixture during the last few minutes of cooking, and let it caramelize on the skin.
7. Roasting the Chicken
Roasting the chicken is all about getting the right texture and flavor. Preheat the oven to 375°F and place the chicken in a roasting pan with the breast side facing up. Brush the chicken with olive oil or melted butter and roast it in the oven for about 1 hour and 20 minutes or until the internal temperature reaches 165°F. Let the chicken rest for about 10 minutes before carving.
8. Serving the Dish
Serving the dish is all about presentation. Place the rice on a serving platter and top it with the roasted chicken. Garnish the dish with chopped parsley or cilantro and serve it with the apple wedges on the side. You may also serve the dish with steamed vegetables or a fresh salad.
9. Storing Leftovers
If you have leftovers, it is essential to store them properly to avoid food poisoning. Keep the chicken and rice separately in airtight containers and store them in the refrigerator for up to five days. Reheat the chicken in the oven or microwave until it is hot, and reheat the rice with a little bit of water to prevent it from drying out.
10. Experimenting with Ingredients
Don't be afraid to experiment with ingredients to make this dish your own. You may add more spices, herbs, or vegetables to the recipe to make it more flavorful and nutritious.
