CRANBERRY, APPLE, AND FRESH GINGER CHUTNEY

Cranberry, Apple, and Fresh Ginger Chutney image

This piquant chutney is not as sweet as traditional cranberry sauce. The bite of the fresh ginger will become more pronounced as the chutney rests. If you have any left after Thanksgiving, try it in turkey sandwiches with a smear of cream cheese. Oh. My. God.

OLD FASHIONED SCOTTISH APPLE AND GINGER CHUTNEY

Old Fashioned Scottish Apple and Ginger Chutney image

A delightful apple chutney with the added kick of ginger. I make this every autumn when I harvest my apples from the garden - you can use windfall apples too. Chutney is such an interesting preserve as it combines sweet and savoury flavours, making it an ideal accompaniment for a range of dishes such as cold meats, salami, ham, pasties, pies and is essential in a traditional Ploughman's Lunch! I also add chutney to my curries, tagines and winter stews. The word chutney is derived from the Hindu word "chatni" meaning strongly spiced. Try to use good cooking apples with plenty of flavour and taste for the best results. This is based on a family recipe and is a mellow and mild type of chutney.

Time 2h15m

Yield 4 lbs

Number Of Ingredients 11

1 lb onion, weight is for onions when peeled and finely chopped
2 lbs cooking apples, weight is for apples when peeled, cored and roughly chopped
4 ounces sultanas
1 ounce fresh gingerroot, grated
1 teaspoon dried ginger powder
2 teaspoons mixed spice
1 lb soft brown sugar
1/2 pint malt vinegar
1/2 pint cider apple cider vinegar
1/2-1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place all the prepared onions and apples into a large preserving pan and add the remaining ingredients.
  • Bring slowly to the boil and then lower the heat so that chutney cooks at a rolling boil.
  • Stir the chutney regularly and make sure it does not "catch" and burn on the base of the preserving pan.
  • Keep on cooking until the chutney is the consistency of a thick jam and all the liquids have dissolved.
  • (A trick to check if it is cooked is to draw your wooden spoon across the chutney, if the space that is left fills up with liquid, the chutney is not ready yet!).
  • Spoon the hot chutney into hot and sterile jars and seal immediately.
  • Makes about 4 lbs chutney.
  • Store in a dark and cool place and leave to mature for at least 2 weeks.
  • Will keep in ideal storage conditions for up to 2 years+.

Chutney is a savory condiment that is made from a combination of fruits, vegetables, and spices. Apple ginger chutney is a popular chutney recipe that has a unique blend of tartness from the apples and spiciness from the ginger. If you're a foodie and like to experiment with different flavors, then making apple ginger chutney is definitely worth a try. In this article, we will share some valuable tips to keep in mind when making apple ginger chutney. Tip 1: Choose the right apples The first and foremost tip when making apple ginger chutney is to choose the right apples. Since apples are the main ingredient of this chutney, it's essential to choose the right variety of apples that can complement the other ingredients. For apple ginger chutney, it's recommended to use tart and firm apples such as Granny Smith, Braeburn, or Honeycrisp. These apples hold their shape well when cooked and provide a nice texture to the chutney. Tip 2: Use fresh ginger Another important ingredient in apple ginger chutney is ginger. To get the best flavor and aroma from ginger, always use fresh ginger while making the chutney. The easiest way to peel ginger is by scraping the skin off with a spoon. You can also grate ginger using a fine grater or chop it finely. However, be careful while handling fresh ginger as it can be quite fibrous and pungent. Tip 3: Balance the sweetness and sourness The ideal apple ginger chutney should have a perfect balance of sweetness and sourness. To achieve this, use sugar and vinegar in equal proportions. Depending on your taste, you can adjust the amount of sugar and vinegar accordingly. You can also add a pinch of salt to enhance the flavor of the chutney. Tip 4: Add spices for flavor Spices are an essential element of chutneys. They not only add flavor and depth to the chutney but also help balance the sweetness and sourness. Some popular spices used in apple ginger chutney are cinnamon, cloves, and black pepper. You can also experiment with other spices such as cumin, coriander, or fennel seeds. However, be careful not to add too much spice as it can overpower the other flavors. Tip 5: Cook the chutney until it thickens When making apple ginger chutney, it's important to cook the chutney until it thickens to the desired consistency. The chutney should have a jam-like texture, where the chunks of apples are still visible but have softened enough to blend well with the other ingredients. It's important to keep stirring the chutney while cooking to prevent it from burning. Tip 6: Sterilize the jars before storing Once the chutney is ready, it's time to store it in jars. It's essential to sterilize the jars and lids before storing to prevent contamination and spoilage. You can sterilize the jars by washing them in hot soapy water, rinsing them well, and then placing them in a preheated oven at 120 degrees Celsius for 15-20 minutes. Once the jars are sterilized, pour the hot chutney into the jars and seal them tightly. Store the jars in a cool, dry place. Conclusion: Apple ginger chutney is a delicious and versatile condiment that can be enjoyed with various dishes such as meats, cheeses, and bread. By following the tips mentioned above, you can make a perfect batch of apple ginger chutney that's sure to impress your friends and family. Remember, the key to making a good chutney is to balance the flavors and cook it until it thickens.
