1/2 cup canola oil
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
3 tablespoons lemon juice

6 boneless skinless chicken breast halves (6 ounces each)
4 large carrots
2 medium zucchini
2 medium yellow summer squash

Steps:

  • In a small bowl, whisk the first seven ingredients until blended. Place 1 cup marinade and chicken in a large resealable plastic bag; seal bag and turn to coat. Refrigerate 6 hours or overnight. Cover and refrigerate remaining marinade., Cut carrots, zucchini and squash lengthwise into quarters; cut crosswise into 2-in. pieces. 1 to 2 tablespoons corn or canola oil
1 large onion, chopped
1 clove garlic, minced
1/4 cup dry white wine
1 cup apple juice
1 tablespoon fresh ginger, finely chopped
1 tablespoon cornstarch
1 cup plain low-fat or nonfat yogurt
2 well-flavored apples, cored and cut into small chunks
Freshly ground black pepper to taste
8 ounces medium egg noodles, cooked and drained

Steps:

  • Remove as much skin and external fat as possible from chicken. Heat 1 tablespoon oil in nonstick skillet or 2 tablespoons oil in regular skillet large enough to hold chicken pieces in single layer. Brown chicken on both sides in hot oil over medium heat; remove and set aside.
