CHEF JOHN'S APPLE FRITTERS

Chef John's Apple Fritters image

I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

Time 35m

Yield 8

Number Of Ingredients 16

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

Time 2h5m

Yield 8

Number Of Ingredients 14

¼ cup warm water (100 to 110 degrees F/40 to 45 degrees C)
1 teaspoon active dry yeast
½ teaspoon white sugar
2 cups all-purpose flour
¼ cup white sugar
¼ teaspoon salt
¼ cup milk, at room temperature
2 tablespoons vegetable oil
1 egg, lightly beaten
½ cup chopped apple
½ teaspoon ground cinnamon
¼ cup purchased or prepared caramel sauce
1 tablespoon hot water, or more as needed
coarse sea salt, as needed

Steps:

  • Stir together warm water, yeast, and 1/2 teaspoon sugar; let stand until foamy, about 5 minutes.
  • Stir together flour, 1/4 cup sugar, and 1/4 teaspoon salt in a medium bowl. Add yeast mixture, milk, oil, and egg; stir until a soft dough comes together. Turn dough out onto a lightly floured surface and knead until smooth, 1 to 2 minutes (dough will be sticky). Pat dough into an 8-inch square.
  • Toss together apple and cinnamon in a small bowl, and sprinkle over 1/2 of the dough. Fold the side with no apples over the apples and knead until apples are dispersed, about 30 seconds. Transfer dough to a lightly greased bowl, cover, and let rise in a warm place until doubled in volume, about 1 hour.
  • Lightly flour a piece of parchment paper; set aside. Turn dough out onto a lightly floured surface. Cut into 8 pieces. Pat each portion of dough with floured hands into a 3- to 4-inch oval; fritters do not have to be uniformly shaped. Transfer fritters to the prepared parchment paper, cover loosely with plastic wrap, and let stand until doubled in volume, about 30 minutes.
  • Preheat the air fryer to 360 degrees F (180 degrees C). Preheat the oven to 200 degrees F (95 degrees C). Place a wire rack over a rimmed baking sheet.
  • Place 2 to 3 fritters in a single layer in the preheated air fryer basket and cook until golden brown, about 5 minutes. Remove cooked fritters to the prepared baking sheet and keep warm in the preheated oven. Repeat with remaining fritters.
  • Whisk together caramel sauce and 1 tablespoon hot water, adding more water if necessary, to make a smooth drizzling consistency. Drizzle hot fritters with caramel sauce and sprinkle with sea salt, allowing baking sheet to catch caramel drips and excess salt.

Apple fritters with caramel drizzle are a delicious treat that many people love to indulge in. This recipe is particularly popular during the fall season when apples are abundant and perfect for creating warm, cozy dishes. Making apple fritters with caramel drizzle may seem daunting, but with a few tips and tricks, you can easily achieve restaurant-quality fritters in the comfort of your own home. In this article, we will delve into some valuable tips to help you create the best apple fritters with caramel drizzle recipe possible.
Tip 1: Choosing the Right Apples
The first step to making delicious apple fritters with caramel drizzle is choosing the right apples. The best types of apples to use for this recipe are tart and firm varieties such as Granny Smith, Honeycrisp, or Pink Lady apples. These types of apples hold their shape well, even when they are cooked, and add the perfect amount of tartness to the fritters.
Tip 2: Preparing the Apples
Once you have chosen your apples, it is time to prepare them for the fritters. You will need to peel and core the apples before slicing them into thin pieces. It is also important to remove any excess moisture from the apples before adding them to the batter. This can be done by tossing the sliced apples with a sprinkle of salt and letting them sit for a few minutes before patting them dry.
Tip 3: Making the Batter
The batter is a crucial component of the apple fritters with caramel drizzle recipe, and it is essential to get it right. The batter should be thick and slightly lumpy to give the fritters a crispy texture. To achieve this, it is best to mix the dry ingredients first, which includes flour, baking powder, salt, and sugar, in a separate bowl before adding in the wet ingredients, such as eggs and milk. The batter should be well mixed, but not too smooth, to allow for the lumps that create the crispy texture.
Tip 4: Cooking the Fritters
Cooking the fritters is also an important step in creating the perfect apple fritters with caramel drizzle recipe. To do this, you will need to heat the oil in a large pot or pan until it is about 375°F. It is important to use enough oil to fully cover the fritters. Once the oil is hot, carefully drop spoonfuls of the batter into the oil and cook until golden brown, flipping occasionally to ensure even cooking.
Tip 5: Drizzling with Caramel Sauce
The final step in making apple fritters with caramel drizzle is to add the caramel sauce. To make the sauce, melt butter in a saucepan, then add brown sugar and heavy cream, stirring constantly until the sugar is fully dissolved. For a thicker sauce, cook the mixture for a few more minutes until it reaches the desired consistency. Drizzle the caramel sauce over the fritters, and serve immediately for the best results.
Tip 6: Serving Suggestions
Apple fritters with caramel drizzle are best served warm and can be enjoyed on their own or paired with a variety of toppings. Whipped cream or vanilla ice cream are popular choices that can add a creamy texture to the dish, while chopped nuts or cinnamon sugar can add extra flavor and texture. Pairing the fritters with a warm cup of tea, coffee, or hot chocolate is also a great way to enjoy this dish. In conclusion, making apple fritters with caramel drizzle is a delicious and indulgent treat that is perfect for the fall season. By following these valuable tips, you can easily create a restaurant-quality dish in the comfort of your own home. Remember to choose the right apples, prepare them properly, make the batter correctly, cook the fritters carefully, drizzle with caramel sauce, and serve with your favorite toppings.
