4 Granny Smith apples, peeled
1/2 cup cornstarch
1/2 cup plus 2 tablespoons granulated sugar
1 teaspoon ground cinnamon
2/3 cup heavy cream
1 teaspoon pure vanilla extract

Steps:

  • Heat 1 1/2 inches of vegetable oil in a large wide pot over medium heat until a deep-fry thermometer registers 300 degrees F. Cut the apples into 1/2-inch-wide sticks to look like fries.
  • Working in two batches, toss the apples in the cornstarch until well coated, shaking off the excess. Fry in the hot oil until softened but still pale, about 2 minutes. Remove with a slotted spoon and transfer to a rack set over a rimmed baking sheet in a single layer; let cool. Let the oil return to 300 degrees F between batches.
  • Mix 1/2 cup sugar and the cinnamon in a shallow bowl; set aside. Beat the heavy cream, vanilla and remaining 2 tablespoons sugar in a medium bowl with a mixer until medium peaks form.

1 granny smith apple, peeled, cored and sliced into french fry sticks
1/2 cup cornstarch
vegetable oil, for frying
1/4 cup sugar
1/4 teaspoon ground cinnamon
1/4 cup whipped cream cheese
1/4 cup marshmallow cream
1 dash pumpkin pie spice

Steps:

  • Coat the apple slices with cornstarch. Place coated apples in strainer and shake off excess cornstarch, set aside. For dipping sauce, combine cream cheese, marshmallow cream and pumpkin pie spice in a bowl. Refrigerate until needed. In a separate bowl combine sugar and cinammon mix together. Place oil in a deep fryer and heat to 375 degrees (if you do not have a deep fryer, place enough oil in a heavy skillet to reach a depth of 1 inch. Heat oil to 375 and proceed the same way). Drop apples in oil, a few at a time. Do not crowd your pan. Fry apples for about 3 minutes or until golden brown. Drain apple slices on a paper towel and sprinkle with cinammon sugar. Serve with dipping sauce, if desired.

2 cups apple cider, 500 ml
2 tablespoons butter, 30 ml (or non-hydrogenated margarine)
1 teaspoon coarse salt (optional)
4 apples, peeled, cored and cut into 8 wedges (Empire or Spy)
1 tablespoon chopped fresh thyme, 15 ml
1 cup crushed corn flakes, 250 ml (or crushed whole grain flakes)
1/2 teaspoon salt (optional)
2 tablespoons chopped fresh parsley, 30 ml
1 lb chicken breast, sliced into strips 500 g
2 tablespoons sweet chili sauce, 30 ml

Steps:

  • In large saucepan over medium-high heat, boil cider until reduced to 1/3 cup (75 mL), about 20 minutes (will have a syrupy consistency). Remove from heat; whisk in butter and salt.
  • Preheat oven to 400 F (200 C). In bowl, toss apples with 2 tbsp (30 mL) of the glaze and 1/2 tbsp (7 mL) of thyme. Arrange in a single layer on a rimmed baking sheet. Set aside.
  • In bowl combine corn flake crumbs, salt and parsley. Set aside. Dip chicken strips in sweet chili sauce and then coat with corn flakes. Arrange in a single layer on a greased baking sheet.
  • Place chicken on the top third and the apples on the bottom third of the oven. Roast for 10 minutes. Turn chicken, drizzle apples with remaining glaze and switch baking sheets so the apples are now on the top third of oven. Continue to roast for 10 minutes and remove chicken from oven. Let chicken fingers cool while apples finish caramelizing, about 5 to 10 minutes more.
  • Sprinkle apples with remaining thyme and additional salt if desired.

1 small onion , roughly chopped
4 tbsp chipotle paste
2 tsp sweet smoked paprika
1 tsp cayenne pepper
400g can chopped tomato
5 tbsp tomato ketchup
5 tbsp barbecue sauce
100ml malt vinegar
100g brown sugar
100ml bourbon
4 large or 8 smaller beef short ribs order from a butcher
1 beef stock cube
4 handfuls frozen skinny fries , cooked following pack instructions, to serve
juice 1 lime
2 Granny Smiths , quartered, cored and diced (and immediately tossed in the lime juice)
2 spring onions , sliced
handful coriander , roughly chopped
1 tbsp olive oil

Steps:

  • The day before, put the first 10 ingredients in a food processor and whizz to a sauce. Put the ribs in a food bag (or baking dish), pour over the sauce and rub all over. Marinate in the fridge overnight.
  • Heat oven to 160C/140C fan/gas 3 and boil the kettle. Tip the ribs and marinade into a big casserole dish with a lid. Crumble over the stock, then pour over enough boiling water from the kettle to come to the top of the ribs. Cover and cook for 4 hrs until tender.
  • Tip all the liquid left into a big jug or bowl - leave for a while to separate, then skim off and discard any fat that has risen to the top. Lift the ribs into a roasting tin, then tip the cooking liquid back into the casserole and boil down on the hob until saucy again. Tip this back over the ribs and toss to coat. The ribs can now be cooled, then chilled for up to 48 hrs before finishing, or frozen.
  • Heat oven to 180C/160C fan/gas 4 and roast the ribs, uncovered, tossing halfway, for 1 hr until sticky and glazed on the outside, and heated through.
  • When the ribs are done, cover the dish with foil to keep them warm while you cook the fries. Mix together the salsa ingredients. Serve the ribs with fries and a big spoonful of the salsa.

1/2 teaspoon apple pie spice

2 Granny Smith apples, cored, peeled and cut into 1/4-inch-thick strips

Steps:

  • Pour the oil into a small Dutch oven fitted with a deep-fry thermometer. Heat over medium heat to 365 degrees F. Line a baking sheet with paper towels.
  • Combine the heavy cream, powdered sugar, apple pie spice and vanilla in a large bowl. Whip with a whisk or hand mixer until it holds medium peaks. Refrigerate until ready to serve.

1 Package of Pillsbury Refrigerated pie Crust (2 ct.)
Approx. 1.5 cups of Apple Pie Filling
1 Egg
Sparkle Sugar for sprinkling..a.k.a. "Salt"
Caramel Sauce and/or Ice Cream for dipping
A food processor..optional!
A decorative edge roll-cutter..optional!

  • Chop up the Apple Pie Filling as best as you can. I used a food processor and it worked great!
  • Unroll each crust and spread the Filling onto one of them...leave a 1/8″ border around the edge...(better than I did..lol)
  • Put the other Pie Crust on top and press lightly to secure it.
  • Make an egg wash by mixing the egg with a splash of water.
  • Brush some egg wash on the top, and sprinkle it with the Sugar "Salt"...
  • Cut strips about 1/2″ thick and then cut those into "fry" shapes...
  • Place them carefully onto a baking sheet and bake them at 350 degrees for approx. 12 minutes, or until they're slightly golden and firm...
  • Make sure and serve them with some Caramel "Ketchup" for dipping...
  • There are plenty to go around for sharing..
  • Well...maybe~

1 cup buttermilk
1 cup sugar
Wondra flour
Vegetable oil for frying

DIP:
1 (8-ounce) cream cheese
1 small container cool whip (or 1 cup whipping cream with 1/2 cup sugar- whipped until stiff)
1 cup caramel sauce

  • APPLES: In a fry pan, or deep fryer heat vegetable oil for frying. Mix together the buttermilk and sugar in a medium size bowl. Peel and slice apples and add them to the buttermilk mixture as you go to prevent browning. In a shallow dish, put a layer of wonder flour. Pull the apples out of the buttermilk mix, one at a time and lightly coat all sides in the flour. When oil is nice and hot, gently place coated apples into the oil so they are not touching, when the bottom side begins to turn golden, flip over and brown the second side. Quickly remove to a tray lined with paper towels to soak up excess grease and cool. Sprinkle immediately with cinnamon and sugar while they are hot. DIP: Mix together the the cream cheese and cool whip until completely blended then stir in the caramel sauce. Place into a bowl for dipping and drizzle a little extra caramel sauce over the top.
