FENNEL-APPLE SALAD WITH WALNUTS

Fennel-Apple Salad With Walnuts image

A bright and tangy salad cuts the heaviness of the typical Thanksgiving meal. This one, with fennel, celery, apples and toasted walnuts, is all crunch, which the carb-heavy meal can generally use more of. You can make the dressing a day ahead and store it in the fridge, but don't dress the salad until an hour before serving.

SPICED ROAST PORK WITH FENNEL AND APPLE SALAD

Spiced Roast Pork with Fennel and Apple Salad image

The chile paste for this pork is added in two stages: Initially it acts as a marinade and permeates the interior of the roast. After a second addition is applied, it's roasted over high heat to create a spicy, toasty bark.

Yield 8 servings

Pork:
15 dried Kashmiri, guajillo, or New Mexico chiles, seeds removed
5 pieces star anise
3 Tbsp. fennel seeds
2 Tbsp. coriander seeds
2 Tbsp. cumin seeds
1 Tbsp. peppercorns, preferably Tellicherry
2 tsp. whole cloves
6 garlic cloves, smashed
½ cup apple cider vinegar
½ cup vegetable oil, divided
1 (4-5 lb.) boneless pork shoulder (Boston butt), tied
4-5 tsp. kosher salt, plus more
Flaky sea salt
Salad and assembly:
1 fennel bulb, fronds reserved, bulb cored, very thinly sliced
1 Honeycrisp or other crunchy not-too-sour apple, very thinly sliced
2 serrano or red Thai chiles, thinly sliced into rounds
3 Tbsp. extra-virgin olive oil
Small handful of cilantro, finely chopped
Kosher salt
Special Equipment:
A spice mill or mortar and pestle

Steps:

  • Pork:
  • Cook chiles, star anise, fennel seeds, coriander seeds, cumin seeds, peppercorns, and cloves in a dry small skillet over medium heat, stirring often, until slightly darkened and fragrant, about 2 minutes. Let cool. Set one-fourth of spice mixture aside.
  • Blend garlic, vinegar, ¼ cup oil, and ¼ cup water in a blender until smooth. Add remaining toasted spices and blend, adding splashes of water if needed to help turn the blades, until chile paste is mostly smooth; some texture is okay.
  • Season pork with 1 tsp. kosher salt per pound (check the butcher's sticker on the package to see the weight of what you purchased). Smear half of chile paste all over pork; transfer to a wire rack set inside a rimmed baking sheet or a roasting pan and let sit at room temperature at least 2 hours, or cover and chill up to 12 hours.
  • Finely grind reserved spice mixture in a spice mill or with mortar and pestle. Transfer to a small skillet; stir in remaining ¼ cup oil. Set over medium heat and cook, stirring, until spices have darkened slightly and are fragrant, about 1 minute. Let spice oil cool, then transfer to an airtight container. Cover and set aside.
  • Preheat oven to 275°F. Roast pork until paste is darkened and looks dried out and an instant-read thermometer inserted into the center registers 120°F, 1½-2 hours, depending on the size. Make sure to take the temperature in more than one spot as there will be thick and thin parts of the roast. Let rest 2 hours.
  • Preheat oven to 500°F. Rub pork with reserved chile paste and roast until marinade has formed a fragrant crust and an instant-read thermometer inserted into the thickest part registers 130°F, 8-12 minutes. Transfer pork to a cutting board and let rest 15 minutes. Thinly slice and transfer to a platter. Spoon reserved spice oil over pork; sprinkle with sea salt.
  • Salad and assembly:
  • Toss fennel bulb and fronds, apple, lime zest and juice, chiles, and cilantro in a large bowl; season salad with salt. Drizzle oil over and toss to coat. Serve pork with salad.

CRISPY ALMOND CHICKEN WITH APPLE-FENNEL SALAD

Crispy Almond Chicken with Apple-Fennel Salad image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 12

1 1/2 cups panko breadcrumbs
1/2 cup almond flour
Grated zest of 1 lemon, plus 1 tablespoon lemon juice, plus wedges for serving
Kosher salt and freshly ground pepper
2 large eggs
8 thin-cut skinless, boneless chicken breasts (about 1 1/2 pounds)
1/3 cup plus 1 tablespoon olive oil, plus more as needed
4 cups mixed baby greens
1/2 bulb fennel, cored and thinly sliced
1 small crisp red apple, thinly sliced
1/2 cup roughly chopped fresh basil
1/2 small red onion, thinly sliced

Steps:

  • Combine the panko, almond flour, lemon zest and 1/2 teaspoon each salt and pepper in a shallow dish, using your fingers to evenly blend the zest into the crumbs. Lightly beat the eggs in a separate shallow dish and season with salt and pepper. Season the chicken with salt and pepper.
  • Heat about 1/3 cup olive oil in a large nonstick skillet over medium-high heat (it?s hot enough when a pinch of panko sizzles when it hits the oil). Working with 2 or 3 chicken breasts at a time, dip each piece in the beaten egg, letting the excess drip off, then press the chicken into the crumb mixture to coat. Add to the hot oil and cook until browned and cooked through, 1 1/2 to 2 minutes per side. Transfer to paper towels to drain. Reduce the heat if the chicken is browning too quickly and add more olive oil as needed between batches.
  • Toss the greens, fennel, apple, basil and red onion with the lemon juice and the remaining 1 tablespoon olive oil in a bowl; season with salt and pepper. Divide the chicken among plates and serve with the salad and lemon wedges.

Apple fennel salad is one of the most delightful and refreshing dishes that you could ever have on your plate. This dish is perfect for all occasions, and it is an excellent way to incorporate fruits and vegetables into your daily meals. However, creating a perfect apple fennel salad recipe can be somewhat daunting for many beginners in the kitchen. If you are one of them, look no further because we have got you covered. In this article, we provide valuable tips on how to make an awesome apple fennel salad without much hassle.

Tip 1: Get the Best Fennel

Before you start preparing your apple fennel salad, it is essential to ensure that you have the freshest and the best fennel that you could get your hands on. Choose fennel bulbs that are smooth and firm, without any bruises or brown spots, and with bright green stalks that are tightly packed. The bulbs should be small to medium in size, and the thicker bulbs tend to have a more intense and concentrated flavor, which is ideal for this dish. Finally, ensure that the fennel you select has fresh, crunchy fronds, which you can use as a garnish for your salad.

Tip 2: Choose the Perfect Apple

Like the fennel, it is vital to choose the perfect apple for your apple fennel salad. When selecting apples for this dish, ensure that you pick the ones that are firm with no bruises, dents, or soft spots. Choose apples that are tart, crisp, and slightly sweet, such as Honeycrisp or Granny Smith, which balance the sweetness of the fennel and add a perfect crunch and texture to the salad. Avoid using soft and mushy apples as they will not hold well in the salad.

Tip 3: Prepare Your Fennel Properly

Before you start slicing your fennel, remove any stalks, and feathery fronds from the top of the bulb. Reserve a few of the fronds to use as a garnish when plating your salad. Cut off the root end, and then cut your fennel bulb in half. Use a sharp knife to slice your fennel bulbs thinly, around ⅛ of an inch in thickness. Ensure that your slices are uniform so that they look appealing in your salad. You may also use a Mandoline to cut your fennel into thin and evenly sliced pieces.

Tip 4: core and Cut Your Apples properly

Cut your cleaned and washed apples into quarters, and then remove the core with a sharp knife. Cut each quarter of the apple into thin slices, around ⅛ to ¼ of an inch in thickness. You may also use a Mandoline to cut your apples evenly and uniformly.

Tip 5: Add the Perfect Dressing

An excellent apple fennel salad recipe uses the perfect dressing to bring out the fruity and tangy flavors of the fennel and apples. For this salad, a simple vinaigrette dressing made with apple cider vinegar, honey, and Dijon mustard can add a perfect balance of sweetness and tanginess to your salad. You may also add fresh lemon juice or balsamic vinegar to your dressing to add an extra kick to the salad. Remember to dress the salad just before serving to keep it fresher and better looking.

Tip 6: Add the Perfect Garnish

A perfect garnish can add the final touch to your apple fennel salad recipe. The reserved fennel fronds are an excellent decoration and provide a refreshing taste to your salad. You may also add chopped parsley, mint, or cilantro to add an extra pop of color and freshness. You may also add nuts such as roasted almonds, walnuts, or pine nuts and crumbled cheese like feta or goat cheese to add texture and flavor to the salad.

Conclusion

In conclusion, making a perfect apple fennel salad is a breeze when you follow these valuable tips. Ensure that you choose the freshest fennel and apples, slice and cut them uniformly, and add the perfect dressing and garnish to your salad. So, grab your knife and chopping board, and start making the ultimate apple fennel salad recipe.
