APPLE CRUMB TART WITH CINNAMON CREAM

Steps:
- Preheat oven to 350°. Mix first four ingredients and 1 teaspoon cinnamon; cut in butter until crumbly. Remove 1 cup mixture to a small bowl; stir in 1/4 cup flour until blended. Reserve for topping., Press remaining crumb mixture onto bottom and up sides of an ungreased 9-in. tart pan. Bake until light brown, 8-10 minutes. Cool on a wire rack. Increase oven setting to 400°., In a large saucepan, combine apples and brown sugar; cook over medium heat until apples are tender, 7-9 minutes, stirring occasionally. Remove from heat; stir in 1/4 teaspoon cinnamon, raisins and remaining flour. Transfer to crust; sprinkle with topping. Bake until golden brown and filling is bubbly, 20-22 minutes. Place on a wire rack; cool at least 20 minutes., For cinnamon cream, beat cream until it begins to thicken. Add syrup and cinnamon; beat until soft peaks form. Serve with tart.

This recipe is taken from an old Food & Wine 1993 magazine. Apples and Cranberries remind me so much of the Fall and this tart is a great holiday dessert.

Steps:
- Make the dough: In a large bowl, using an electric mixer, cream the butter and sugar on medium speed until light and fluffy. Beat in the egg yolk until incorporated. On low speed, mix in the flour until the dough just comes together. Turn out on a lightly floured surface and knead 3 or 4 times to form a smooth ball. Pat the dough into a 6-inch disk. Press the dough evenly into the bottom and up the sides of an 11-inch by 1-inch fluted tart pan with a removable bottom. Prick all over with a fork. Refrigerate for 1 hour.
- Preheat the oven to 375 degrees. Place the tart shell on a baking sheet and bake for 10-15 minutes, until just starting to color. Set aside.
- Make the filling: Peel, quarter and core the apples; slice lengthwise 1/4 inch thick. In a bowl, toss the apples and cranberries with the flour. Sir in the sugar and cinnamon. Mound the filling in the tart shell.
- Make the topping: In a medium bowl, combine the oats, flour and brown sugar. Pour in the butter and crumble the mixture with your fingers. Pile it on the fruit to cover completely.
- Bake the tart for about 40 minutes, or until the topping is golden, the filling is bubbling and the apples are tender when pierced. (Cover loosely with foil if the top gets too brown too soon). Transfer to a rack to cool. Prep time includes refrigeration time for crust.

In a large bowl, toss the apples and cranberries with the flour, sugar and cinnamon. Mound the filling in the tart shell. 3. Make the topping: In a medium bowl, combine the oats, flour and brown sugar. Pour in the butter and crumble the mixture with your fingers. Pile it on top of the fruit filling to cover completely. 4. Bake the tart for 40 minutes, or until the crumb topping is golden, the fruit is bubbling and the apples are tender when pierced with a cake tester. Cover the tart loosely with foil if the top gets too brown before the bubbling begins. Transfer to a rack to cool.

- 1. Preheat oven to 350 degrees. 2. In a mixer or processor, cream together the almond paste, brown sugar, and butter, scraping down the bowl periodically. Add the extract. Add the flour in batches, mixing as you go. When large crumbs have formed, stop adding the flour and stop mixing. Set the topping aside until needed. 3. Peel, core, and cut the apples into wedges. 4. In a dry skillet over high heat, sauté the apples until they just begin to brown. 5. Add the sugar and orange zest and cook until caramelized, about 5 minutes. Add the orange juice and Grand Marnier or other liqueur, and scrape to loosen any pieces stuck to the skillet. 6. In a small bowl, mix the corn starch with the cold water. Add the corn starch slurry to the apple mixture and bring to a boil. 7. Remove to a heat-resistant bowl and mix in the dried cherries. 8. Fill the prepared shell with the apple mixture. Cover with the crumb topping, and bake until the crumbs are well browned, about 25 to 30 minutes.
