APPLE CRISP WITH PECANS AND OATS

Apple Crisp With Pecans and Oats image

I started with recipe #1423 and made enough adjustments to have a new recipe that perfectly suits my tastes. One big change is that I tossed the apples in cinnamon sugar. I hope you enjoy it as much as I did. Don't forget the vanilla ice cream and thanks to Whtsebring for the original recipe.

APPLE CRISP WITH OAT TOPPING

Apple Crisp with Oat Topping image

This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

APPLE CRISP

Apple Crisp image

This warm dessert can quickly satisfy sweet tooth cravings, especially if you forgo peeling the apples, which adds a nice chewiness to the crunchy toasted topping and juicy, saucy apples. Choose a variety of apples, then adjust the amounts of sugar and lemon juice to strike the right tangy balance for the filling. Or customize your crisp by using your favorite spices and nuts. The dessert tastes particularly comforting hot out of the oven, with the caramelized apple juices bubbling around the nutty cookie-like clusters, but it's just as good cold for breakfast the next day.

Time 1h15m

Yield 6 to 8 servings

Number Of Ingredients 14

1/2 cup/71 grams all-purpose flour
3 tablespoons packed brown sugar
1 tablespoon granulated sugar
1/4 teaspoon ground cinnamon, cardamom or nutmeg, or a combination
1/4 teaspoon fine sea salt
6 tablespoons/84 grams cold unsalted butter, cut into 1/2-inch cubes
1 cup/116 grams chopped pecans or walnuts, or a combination
1/4 cup/28 grams old-fashioned rolled oats
1 to 4 tablespoons granulated sugar
1 tablespoon all-purpose flour
1/2 teaspoon ground cinnamon, cardamom or nutmeg, or a combination
1/4 teaspoon fine sea salt
3 pounds apples, preferably firm, with a mix of tart and sweet-tart (8 to 10 apples)
1 to 2 tablespoons fresh lemon juice

Steps:

  • Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
  • Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
  • If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
  • Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.

  • Make it vegan: You can also make your apple crisp vegan by using vegan butter or coconut oil instead of regular butter and using a vegan ice cream or whipped cream substitute for serving.

While apple crisp with pecans and oats is not exactly a health food, it does offer some nutritional benefits due to its ingredients. Here are a few benefits:

  • Fiber: Apples are a great source of fiber, which can promote better digestion and lower cholesterol levels.
  • Healthy fats: Pecans are a good source of healthy fats, which can help keep your heart healthy and support brain function.
  • Vitamins and minerals: Apples and pecans are both rich in vitamins and minerals, including vitamin E, potassium, and magnesium, which can help support your overall health and well-being.
  • Low in sugar: While apple crisp with pecans and oats does contain some sugar, it is generally lower in sugar than many other desserts, making it a better option for those who are watching their sugar intake.

Apple crisp with pecans and oats is the perfect dessert for any occasion. It is easy to make, requires few ingredients, and is a crowd-pleaser. However, there are some valuable tips that can help you make the perfect apple crisp with pecans and oats. In this article, we will discuss some of these tips.

Choosing the right apples

The key to a delicious apple crisp is choosing the right apples. You want to choose apples that are firm and tart, as they will hold their shape during the baking process and balance the sweetness of the topping. Some good options include Granny Smith, Honeycrisp, or Braeburn apples.
Other apple options
If you do not have any of the above apples, you can also use other apples, but you may need to adjust the recipe slightly. Apples like McIntosh or Jonagold will work well, but they are sweeter than the other options, so you may want to reduce the amount of sugar in the recipe.

Prepping the apples

Once you have selected your apples, you will need to prep them. Start by peeling and coring the apples. Then, slice them into thin pieces.
Using a mandoline
If you have a mandoline, this is a great tool to use for slicing the apples. It will ensure that all of the slices are the same thickness, which will help with even cooking.

The perfect topping

The topping is what really makes the apple crisp special. You want to create a mixture that is both crunchy and sweet. The key to achieving this is using a combination of oats, flour, sugar, and butter.
Using old-fashioned oats
Old-fashioned oats work best for the topping. They provide a nice texture and have a better flavor than quick oats.
Adding nuts to the topping
Adding nuts to the topping is a great way to add some extra flavor and crunch. Pecans are a great option, but you can also use walnuts or almonds.

Adding spices

Spices are what really bring out the flavor in the apple crisp. The most important spice to use is cinnamon. It pairs perfectly with the apples and adds a warm, cozy flavor. You can also add other spices like nutmeg, ginger, or allspice.
Avoid overuse of spices
Be careful not to use too much spice, as it can overpower the flavor of the apples. A tablespoon of cinnamon is usually enough.

Baking the apple crisp

Once you have prepped your apples and created your topping, it is time to bake the apple crisp. Preheat your oven to 375°F.
Using a glass baking dish
It is best to use a glass baking dish for apple crisp, as it will help the apples cook evenly. You can also use a cast iron skillet if you prefer.
Covering the apple crisp with aluminum foil
Covering the apple crisp with aluminum foil for the first 20-25 minutes of baking will help the apples cook through without burning the topping.
Bake until golden brown
Remove the foil and continue baking until the topping is golden brown and crispy (usually about 35-40 minutes). You can check the apples for doneness by inserting a knife into the center of the crisp. If it goes through easily, the apples are done.

Serving the apple crisp

The best way to serve apple crisp is warm with a scoop of vanilla ice cream. This dessert is also great with whipped cream or caramel sauce.
Storing leftovers
If you have leftover apple crisp, store it in an airtight container in the refrigerator. It will last for a few days but is best when eaten within the first day or two.
Reheating the apple crisp
To reheat the apple crisp, preheat your oven to 350°F. Cover the dish with aluminum foil and bake for 10-15 minutes, or until heated through. You can also microwave individual portions for 30 seconds to 1 minute.
