2 cups shredded peeled apples
1-1/3 cups sugar
1 cup chopped fresh or frozen cranberries, thawed
1 cup shredded carrots
1 cup chopped nuts
2 large eggs, room temperature, lightly beaten
1/2 cup vegetable oil
2-1/2 cups all-purpose flour
3 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons ground cinnamon
2 teaspoons ground coriander, optional
1/2 teaspoon salt

Steps:

  • In a bowl, combine apples and sugar; let stand for 10 minutes. Add cranberries, carrots, nuts, eggs and oil; mix well. Combine the flour, baking powder, baking soda, cinnamon, coriander if desired and salt; stir into apple mixture just until moistened. Fill paper-lined muffin cups two-thirds full., Bake at 375° for 25-30 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

1 teaspoon ground cinnamon

1/4 teaspoon baking soda
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
2 large eggs
1-1/2 cups reduced-fat sour cream
1/4 cup butter, melted
1 teaspoon vanilla extract
1 cup chopped peeled tart apple
1 cup dried cranberries
TOPPING:
1/4 cup packed brown sugar
3 tablespoons all-purpose flour
2 tablespoons cold butter

Steps:

  • In a large bowl, combine the first nine ingredients. In another bowl, whisk the eggs, sour cream, butter and vanilla. Stir into dry ingredients just until moistened. Fold in apple and cranberries., Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. For topping, combine brown sugar and flour. Cut in butter until mixture resembles coarse crumbs. Sprinkle over batter. , Bake at 375° for 20-25 minutes or until a toothpick comes out clean. 1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2 eggs
3/4 cup brown sugar, packed
1/4 cup vegetable oil
1/4 cup sour cream
1 teaspoon vanilla
3/4 cup unpeeled apple, diced
3/4 cup cranberries
1/2 cup walnuts, chopped (optional)

Steps:

  • In a large bowl, mix flour, baking soda, cinnamon and salt together.
  • In a medium size bowl, whisk eggs, sugar, oil, sour cream and vanilla until smooth.
  • Stir apple, cranberries, and walnuts into wet mixture.
  • Fold wet mixture into dry ingredients.

1/2 cup oat bran or 1/2 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2 eggs
3/4 cup brown sugar
1/4 cup oil
1 teaspoon vanilla
3/4 cup diced unpeeled tart apple
3/4 cup fresh cranberries or 3/4 cup frozen cranberries
1/2 cup chopped walnuts

Steps:

  • Heat oven to 350 degrees F. Grease muffin cups or use paper liners.
  • Mix flours, baking soda, cinnamon and salt in a large bowl.
  • Break eggs into another bowl. Add sugar and mix until smooth. Mix in oil and vanilla. Stir in apple, cranberries and walnuts. Pour over dry ingredients and mix just until moistened.
  • Scoop batter into muffin cups. Bake 20 to 25 minutes or until browned and firm to the touch. Let cool, and store 1 to 2 days in a plastic bag or airtight container for best flavor. Do not freeze.

150 g flour
150 g whole wheat flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
100 g brown sugar (or honey)
150 ml milk
2 eggs
120 g butter
2 apples
4 tablespoons cranberries (I used canned ones, but fresh ones are great, too)
5 tablespoons flour
55 g brown sugar
35 g oats
30 g butter

Steps:

  • Mix both types of flour, baking powder, brown sugar and cinnamon in a bowl. In another bowl mix together milk, butter and eggs.
  • Make a mould in the middle of the flour mixture and add the milk mixture into it.
  • Blend in diced apples and cranberries.
  • Fill the dough into a lined muffin pan and pre-heat the oven to 190°C.
  • For the crumble-topping combine flour, butter, sugar and oats using your fingers. Knead until a crumbly mixture has formed.
  • Spread each muffin with 2 ts of the crumble-topping.
  • Bake for 25 minutes.

1/4 cup chopped almonds
3 tbsp oats
1/2 tsp cinnamon
1 tbsp butter melted
MUFFINS
2- 1/4 cups flour
1-1/2 cup packed brown sugar
1 tsp baking soda
1 egg
1 cup sour cream
1/2 cup canola oil
2 cups peeled and diced apples
3/4 cup cranberries

Steps:

  • 1. In a small bowl mix together all the topping ingredient and mix well
  • 2. For the muffins combine flour, brown sugar and baking soda in a large bowl. Combine eggs and sour cream and oil in a small bowl and mix well. Add to dry and stir till jut moistened. Stir in apples and cranberries.
  • 3. Spray muffin pan with no stick cooking spray. Fill muffin cups full with batter. Sprinkle with the topping. Bake @ 375 for about 25 min, or til tops are firm to the touch

1 1/4 cups packed brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 cup plain yogurt
1/2 cup vegetable oil
2 cups diced peeled apples
3/4 cup cranberries
1/4 cup packed brown sugar
1/4 cup chopped almonds
3 tablespoons oats
1/2 teaspoon cinnamon
1 tablespoon butter or 1 tablespoon margarine, melted

Steps:

  • Combine flour, brown sugar, baking soda and salt in a large bowl.
  • Combine egg, yogurt and oil in a small bowl. Add to dry ingredients, stirring just until moistened. Stir in apples and cranberries. Spoon batter into prepared muffin tins (cups will be very full).
  • Topping: Combine all ingredients. Mix well and sprinkle over muffins. bake for 25 to 30 minutes or until top springs back when lightly touched.
  • For a variation you can replace the cranberries with blueberries and almonds with pecans.

1/2 c brown sugar, lightly packed for filling
2/3 c brown sugar

1/4 c white wine or apple juice (optional)
4 medium apples peeled and chopped
8 oz cranberries fresh or frozen
1/3 c butter to fry apples & cranberries in pan

Steps:

  • 1. Preheat oven to 350 degrees Grease and flour 12 muffin cup tin
  • 2. Mix brown sugar and spices together in a bowl and set aside Peel and chop the apples and and put into the fry pan with the butter, brown sugar and white wine or apple juice. Heat on medium and stir until softened then add the cranberries. Beat white sugar and butter together until smooth and creamy
  • 3. Beat sugar and butter together until smooth and creamy.
  • 4. Beat in eggs 1 at a time and add vanilla Combine flour and baking powder together in another bowl and stir into creamed butter mixture
  • 5. Mix milk into batter until smooth Pour half the batter into muffin cups Add half the apples and half the cinnamon mixture Lightly pat the apple and cinnamon mixture into the batter
  • 6. Pour the remaining batter over the apple layer Top with remaining apples and add more brown sugar mixture Bake for 30 - 40 minutes

1 egg
3/4 c milk

1/4 c butter, melted
1 c fresh cranberries, coarsely chopped
1/2 tsp cinnamon

Steps:

  • 1. In a medium bowl, combine 1-3/4 cups of the flour, 1/4 cup of the sugar, baking powder, baking soda and salt. In a small bowl, combine egg, milk, applesauce and butter; mix well.
  • 2. Add egg mixture to flour mixture; stir until just moistened. Batter will be lumpy; do not overmix.
  • 3. In small bowl, toss cranberries with remaining 2 tbsp. sugar; fold into batter.
  • 4. Spoon batter evenly into 12 greased 2-3/4 inch muffin cups.
  • 5. In measuring cup, combine remaining 1/4 cup of sugar and the cinnamon. Sprinkle over tops of muffins.
  • 6. Bake at 400 degrees for 20 to 25 minutes until golden brown. Cool on wire rack.

  • The batter should be fairly stiff.

  • Sprinkle and additional tsp of sugar over each muffin.

  • Turn out onto rack to cool.
