APPLE-OATMEAL COOKIES

Apple-Oatmeal Cookies image

My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

Provided by Buddy Valastro

Categories     dessert

Time 55m

Yield 16 large cookies

Number Of Ingredients 12

1 1/2 sticks plus 2 teaspoons unsalted butter, softened at room temperature
2 small Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
2/3 cup plus 1 teaspoon light brown sugar
1/8 teaspoon ground cinnamon
Kosher salt
1 large egg
1/2 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
2 cups oats
1 1/4 cup confectioners' sugar
1/4 teaspoon pure vanilla extract

Steps:

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.
  • Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
  • In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
  • Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
  • Line 2 baking sheets with parchment paper. Scoop out 2 tablespoons of dough at a time and arrange them at least 2 inches apart on the prepared cookie sheet. Bake, rotating the sheets top to bottom halfway through baking, until the cookies appear set, 15 to 17 minutes. Remove and let cool for a few minutes on the sheet, then transfer to a baking rack to cool completely.
  • To make the optional glaze: Put the confectioners' sugar, the vanilla extract, and 1 tablespoon water in a medium mixing bowl and whisk until the mixture is smooth. Drizzle the glaze over the cookies using a spoon.

Valuable tips when making apple cookies recipes Apple cookies are a scrumptious and healthy snack that can be enjoyed at any time of the day. Whether you're looking for a quick breakfast, a mid-day snack or an after-dinner treat, apple cookies can satisfy your craving without the guilt. Unlike traditional cookies that are loaded with sugar and unhealthy fats, apple cookies are made with nutritious ingredients like fresh apples, oats, nuts, and spices. Here are some valuable tips to keep in mind when making apple cookies recipes. Choosing the right apples When it comes to making apple cookies, the type of apple you choose can make a big difference in the taste and texture of the cookies. Some apples are sweeter and juicier, while others are firmer and tarter. To make apple cookies, it's best to choose apples that are firm and crisp, like Granny Smith, Honeycrisp, or Pink Lady. These apples hold up well when baked and provide a nice texture and balance of sweetness and tartness. So, always look for fresh apples that are firm, without any soft spots or bruises. Preparing the apples Before you start making apple cookies, it's important to prepare your apples properly. First, wash the apples under running water and then pat them dry with a clean kitchen towel. Next, you can either grate the apples or chop them into small pieces, depending on the recipe you're using. Some apple cookie recipes require grated apples, while others call for small chunks. If you're using grated apples, use the large holes of a box grater or a food processor to shred the apples finely. On the other hand, if you're using small chunks, peel, core and chop the apples into bite-sized pieces. The right amount of moisture When you're making apple cookies, the moisture content of the dough is crucial for successful results. Apples, being high in water content, can make the dough too wet and sticky, resulting in cookies that are flat, dense or mushy. To avoid this, it's important to use the right amount of flour and dry ingredients to absorb the moisture from the apples. Another tip is to squeeze out some of the juice from the grated apples before adding them to the dough. This will help reduce the moisture content and prevent the cookies from becoming soggy. The perfect ratio of dry ingredients For apple cookies to hold their shape and texture, the ratio of dry ingredients like flour, oats, and spices, should be just right. Too much flour can make the cookies dense and dry, while too little flour can result in a batter that's too wet and difficult to handle. Similarly, the amount of oats and spices should be balanced to give the cookies a chewy texture and a flavorful taste. A good rule of thumb is to use 1 and 1/2 cups of flour for every 2 cups of grated apples, and 1 cup of rolled oats to give the cookies a hearty texture. Adding texture and flavor Another way to make your apple cookies delicious and nutritious is to add texture and flavor to the dough. This can be done by using ingredients like chopped nuts, raisins, dried cranberries, chocolate chips or coconut flakes. These add-ins not only enhance the taste and texture of the cookies but also provide additional nutrients and fiber. Walnuts, pecans, and almonds are great choices for adding a crunchy texture, while raisins and cranberries can give the cookies a sweet and chewy flavor. The art of shaping Shaping apple cookies can be a bit tricky, especially if the dough is too wet or sticky. To get the perfect shape, it's important to use a lightly floured surface and your hands to form the dough into a round shape. Once the dough is formed, use a cookie cutter to cut out the desired shapes, or simply use your hands to flatten the dough into a cookie-shaped disc. To prevent the dough from sticking to your hands, dip your fingers in flour or water before handling the dough. Baking to perfection Baking apple cookies is the final step in the process and can make or break the recipe. To bake apple cookies to perfection, preheat your oven to the recommended temperature and line a baking sheet with parchment paper. Place the cookies on the sheet, leaving enough space between each cookie to prevent them from sticking together. Bake the cookies for the recommended time or until they are golden brown and crisp on the edges. To check if the cookies are done, press lightly on the center of the cookie. If it springs back, the cookies are done. Storage tips Once the apple cookies are baked and cooled, it's important to store them properly to keep them fresh and tasty. To store apple cookies, place them in an airtight container and keep them in a cool, dry place. You can also freeze the cookies if you want to keep them for longer. To freeze apple cookies, place them in a freezer-safe container or ziplock bag and store them in the freezer. When you're ready to enjoy them, simply defrost the cookies at room temperature or in the fridge. Conclusion Making apple cookies recipes can be a fun and healthy way to enjoy a sweet treat with added nutrients and fiber. By following these valuable tips, you can make apple cookies that are delicious, textured and perfectly baked. So, whether you're making apple oatmeal cookies or apple cinnamon cookies, use these tips to make your apple cookies the best they can be.
