Time 1h35m

Yield 8

Number Of Ingredients 17

2 teaspoons unsalted butter
2 cups all-purpose flour
½ teaspoon fine sea salt
1 teaspoon baking powder
¾ teaspoon baking soda
1 ½ cups finely chopped toasted walnuts
⅓ cup packed light brown sugar
⅓ cup white sugar
¼ teaspoon salt
1 teaspoon ground cinnamon
3 tablespoons unsalted butter, melted
½ cup unsalted butter, at room temperature
1 cup white sugar
2 large eggs
1 ½ teaspoons vanilla extract
1 cup plain yogurt
2 each Honeycrisp apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
  • Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
  • Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
  • Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
  • Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
  • Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
  • Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

CRUMBLY APPLE COFFEE CAKE

Crumbly Apple Coffee Cake image

This is an extremely moist and light coffee cake. The apples and brown sugar give it a wonderful melt-in-your-mouth flavour and the crumble topping is amazing! It's also very easy to prepare. It is modified from an Emeril Lagasse recipe. If you like nuts, you can also add some chopped walnuts, almonds, or pecans to the topping. This is great served warm or at room temperature.

Coffee cakes are one of the most preferred desserts in the United States, especially for breakfast. Apple coffee cake with crumble topping and brown sugar glaze is a perfect choice to start your day with something delicious and healthy. But preparing this cake isn't an easy task; it requires proper planning and preparation. In this article, we are going to provide you with some valuable tips when making an apple coffee cake with crumble topping and brown sugar glaze recipe so that you can make the perfect cake every time. Tip 1: Choose the right apples Choosing the right apples is the key to making the perfect apple coffee cake. The type of apples you use will affect the flavor and texture of the cake. The best choice for apple coffee cake is Granny Smith apples because they are firm and tart, which makes them perfect for baking. However, you can also use other apples such as Honeycrisp, Braeburn, or Pink Lady. Tip 2: Use room temperature ingredients It is essential to use room temperature ingredients when you are making the cake batter. Using cold or chilled ingredients can cause the batter to curdle, resulting in a dense and uneven cake. Room temperature ingredients blend well, resulting in a well-mixed, light, and fluffy cake. Tip 3: Don't overmix the batter Overmixing the cake batter can result in a dense, tough, and dry cake. So, it's crucial to mix the batter just until the ingredients are combined. Once the wet ingredients and dry ingredients are mixed, stop mixing. Tip 4: Add sour cream or yogurt Sour cream or yogurt adds richness and tanginess to the cake, making it moist and tender. Moreover, it balances the sweetness of the cake and compliments the tartness of the apples. Adding sour cream or yogurt to the batter will make your apple coffee cake more delicious. Tip 5: Add spices Adding spices to the cake will enhance the flavor and aroma of the cake. The best spices for apple coffee cake are cinnamon, nutmeg, and allspice. These spices complement the apples and give the cake a warm and cozy flavor. Make sure to add the spices evenly to the cake batter. Tip 6: Use a crumble topping The crumble topping adds a crunchy texture to the cake and makes it more delicious. To make the perfect crumble topping, mix flour, brown sugar, cinnamon, nutmeg, and butter to form a coarse crumb. Sprinkle the crumble over the apples and the cake batter before baking. Tip 7: Don't overbake the cake Overbaking the cake can make it dry and tough. So, it's crucial to keep an eye on the cake while it's baking. Check the cake using a toothpick or a cake tester after 40 to 45 minutes of baking. If it comes out clean, the cake is ready. However, if it's still wet, bake it for a few more minutes. Tip 8: Make a brown sugar glaze The brown sugar glaze adds sweetness and flavor to the cake. To make the brown sugar glaze, mix brown sugar, butter, and milk in a saucepan over medium heat. Once the mixture comes to a boil, let it simmer for a few minutes until it thickens. Drizzle the glaze over the cake before serving. Conclusion: Making an apple coffee cake with crumble topping and brown sugar glaze recipe is not an easy task. It requires proper planning and preparation, and even a slight mistake can ruin the whole cake. However, by following these valuable tips, you can make the perfect apple coffee cake every time. Choose the right apples, use room temperature ingredients, don't overmix the batter, add sour cream or yogurt, add spices, use a crumble topping, don't overbake the cake, and make a brown sugar glaze.
