APPLE COCONUT CRUMBLE
In the fall I have alot of apples from my two apple trees. I am always on the look out for different recipes and I was looking for a recipe for apples other than a apple pie or crisp. Happened to find this one. I didn't know if the coconut and the apples would work but they sure do. Give it a taste.

Steps:
- Preheat oven to 350°F.
- Grease a 9 x 13 inch cake pan.
- In a large bowl, combine cake mix and coconut.
- Cut in butter until crumbly. (will be very dry).
- Place apple slices in prepared pan.
- Sprinkle with sugar.
- Sprinkle cake mixture over apples.
- Combine water and lemon juice.
- Pour evenly and slowly over crumble, moistening as much as possible.
- Bake for 55 minutes or until top is light golden brown and apples are tender.
- Serve warm or cold with vanilla ice cream or a dollop of whipped cream.
- Keep apple slices quite chunky to ensure that they do not become mushy in baking.
- OPT. - add 1 cup of fresh or frozen cranberries to the apples (I omit this).

Steps:
- Preheat oven to 375 degrees F (190C).
- Butter a 9 inch square baking pan.
- Peel, core and slice the apples into 1/3 inch slices.
- Toss them in a large bowl with the lemon juice to prevent discolouration.
- Layer the apples in the baking pan.
- Combine the flour, oats, walnuts, coconut, brown sugar, cinnamon, allspice, salt and vanilla.
- Add the butter and cut in until mixture resembles coarse meal.
- Sprinkle over apples and bake in the middle of the oven for 35-40 minutes; or until topping is browned and apples are tender.
HOMEMADE APPLE CRUMBLE
Almond and coconut flavors complement the apples beautifully! Granny Smith apples work best, but any will do. Serve with warm custard for a simple yet delicious Autumn dessert.

- Preheat oven to 375 degrees F (190 degrees C). Arrange apple pieces in a baking dish. Sprinkle with sugar, and cinnamon; toss well.
- In a bowl, combine the rice flour, almond meal, sugar, and coconut. Cut in butter until mixture is fine and crumbly. Sprinkle topping over apples.
- Cover and bake for 1 hour in the preheated oven, until the apples have lost their shape. Uncover, and continue to bake until crumble is crisp and golden in color.

Steps:
- Place apples in a large pot with enough water to cover, and bring to a boil. Reduce heat to low, and simmer 15 minutes, or until soft. Drain, and cool. Place in a large bowl, and toss with 2 tablespoons sugar to evenly coat.
- In a large bowl, whip together the 1/2 cup butter and 2 tablespoons sugar until fluffy. Mix in the egg. In a separate bowl, mix 2 cups flour, baking powder, and custard powder. Mix dry ingredients into the bowl with butter and sugar. Press crust into the bottom and up the sides of a 9 inch springform pan.
- Preheat oven to 400 degrees F (200 degrees C).
- Drain apples and place into the crust. Cut together 3/4 cup sugar, 3/4 cup butter, 1 1/4 cups flour, and cinnamon. Mix in coconut and oats. Sprinkle over the apples.
- Bake 1 hour in the preheated oven, until golden brown. Remove sides from pan and allow crumble to cool before serving.
