2 cups So Delicious Lite Culinary Coconutmilk
1/2-1 cup nut/seed butter ((I used creamy peanut butter))
8-10 pitted medjool dates
1 tbsp cinnamon
Pinch of sea salt ((omit if nut butter is salted))
1 apple, chopped
1 tbsp maple syrup ((optional))
1 tsp lemon juice
1 tsp cinnamon

Steps:

  • For the ice cream, blend all the ingredients in a high speed blender until creamy and smooth.
  • Pour into a shallow dish and freezer overnight.
  • The following day, either break into chunks and re-blend (creamiest) or allow to thaw for 10-15 minutes before you are going to scoop and serve.
  • For the apple chunks, toss all the ingredients in a bowl. Microwave for 3 minutes on high or cook stovetop until soft. Allow to cool.
  • Spoon the apples on top of the ice cream and scoop into bowls. Or layer the ice cream and apples parfait style.
  • Drizzle with nut butter and enjoy!

2-1/4 cups heavy cream
1 cup milk
3/4 cup powdered sugar
1 tbsp pure vanilla extract
1 tsp ground cinnamon
1/2 tsp sea salt
2 tbsp unsalted butter
2 large apples, peeled, cored, and chopped into small, bit-sized pieces
1/4 cup (packed) brown sugar
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves

Steps:

  • In a mixing bowl, whisk together the cream, milk, sugar, vanilla, cinnamon and salt until well-combined. Cover and refrigerate for at least 2 hours until thoroughly chilled.
  • Meanwhile, melt the butter in a skillet over medium heat. Toss the apples with the brown sugar and spices and add to the skillet. Cook, stirring often, until the apples are tender, about 2-3 mins. Remove from the heat and let cool. Cover and refrigerate along with the cream base.
  • Prior to making the ice cream, whisk the cream base a few times, and pour into an 1-1/2 quart capacity ice cream machine. Follow the manufacturer's instructions, and churn until the ice cream is frozen and fluffy, about the consistency of soft-serve (generally 20-25 minutes). About three to five minutes before the ice cream is ready, or when the ice cream looks like it is mostly set up, carefully pour in the cinnamon-apple mixture, and continue churning.
  • Spoon the ice cream into freezer-safe containers, and for a firmer texture, cover and freeze for an hour or two.

1 cup white sugar
1 ½ cups half-and-half cream
2 eggs, beaten
1 cup heavy cream
1 teaspoon vanilla extract
2 teaspoons ground cinnamon

Steps:

  • In a saucepan over medium-low heat, stir together the sugar and half-and-half. When the mixture begins to simmer, remove from heat, and whisk half of the mixture into the eggs. Whisk quickly so that the eggs do not scramble. Pour the egg mixture back into the saucepan, and stir in the heavy cream. 3 cups apple juice (I strongly suggest using the unfiltered type- or juice your own apples!)
1 cup raw cashews
1/4-1/3 cup maple syrup
2 -3 teaspoons cinnamon

Steps:

  • Blend all ingredients in the blender for at least 1-2 minutes. You need to get the mixture very smooth.
  • Place the blender in the freezer for an hour, or the fridge for a couple of hours or overnight, till well chilled.
  • Pour the mixture into an ice cream maker and process according to directions till it reaches a very thick but soft-serve consistency.
  • Serve immediately, or store in the freezer for later use. You will need to let any leftovers thaw for ten minutes or so before serving.
