Instructions for assembling and baking the turnovers:
  1. Preheat the oven to 375°F (190°C).
  2. On a lightly floured surface, roll out one of the chilled pastry disks into a 1/4 inch thick sheet.
  3. Cut the rolled-out dough into 4 equal squares.
  4. Spoon about 1/4 to 1/3 cup of the cooled apple filling onto each square.
  5. Fold the dough over to form a triangle and use a fork or your fingers to seal the edges.
  6. Repeat the process with the remaining dough and apple filling.
  7. Place the turnovers on a baking sheet lined with parchment paper and brush the tops with an egg wash.
