Time 1h

Yield 6

Number Of Ingredients 11

2 (1 1/2 pound) pork tenderloins
2 teaspoons vegetable oil, divided
1 teaspoon sea salt
2 tablespoons vegetable oil, divided, or more as needed
3 Granny Smith apples - peeled, cored, and sliced into eighths
2 medium sweet onions, sliced vertically
1 tablespoon Dijon mustard
1 tablespoon fresh thyme leaves, divided
¼ teaspoon ground black pepper, or to taste
1 cup chicken stock
1 tablespoon butter

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Trim all silver skin from tenderloins; pat dry using paper towels. Rub 1 teaspoon vegetable oil over the surface of each tenderloin and rub with sea salt.
  • Heat 1 tablespoon vegetable oil in a large, oven-proof skillet over medium heat until it shimmers, about 1 minute. Place tenderloins into the skillet and cook, rotating to brown all sides, about 10 minutes. Transfer pork to a large plate.
  • Add remaining tablespoon oil to any drippings in the skillet. Cook apples and onions in the hot oil, stirring occasionally, until onions begin to turn translucent, about 5 minutes, adding a bit more oil if skillet gets dry.
  • Meanwhile, spread Dijon mustard evenly over browned tenderloins using a pastry brush. Sprinkle 2 teaspoons thyme leaves over pork. Sprinkle remaining thyme over apple mixture and add black pepper; stir gently to combine. Nestle tenderloins into the skillet with apple mixture.
  • Roast, uncovered, in the preheated oven until an instant-read thermometer inserted into the center of the tenderloins reads at least 145 degrees F (63 degrees C), about 15 minutes.
  • Remove skillet from the oven and place pork onto a plate. Cover with aluminum foil and let rest.
  • Meanwhile, pour chicken stock into a saucepan and cook over medium-high heat until reduced by 1/2, 8 to 10 minutes. Add to the skillet containing apple mixture.
  • Heat over medium-high heat until boiling, about 5 minutes; stir in butter until melted. Slice pork and serve over apple mixture.

APPLE-STUFFED PORK LOIN WITH CORIANDER, CUMIN AND CINNAMON

Apple-Stuffed Pork Loin With Coriander, Cumin and Cinnamon image

Provided by Mark Bittman

Categories     dinner, roasts, main course

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 13

4 tablespoons butter
2 medium apples, peeled, cored and thinly sliced
1 large onion, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon paprika
1/2 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 tablespoon freshly ground black pepper
1 boneless pork loin roast, 2 to 3 pounds
1 cup apple juice for basting, or more if needed.

Steps:

  • Heat oven to 450. Put 2 tablespoons of the butter in a large skillet over medium heat. When it starts to foam, add the apples, onion and all the spices, along with some salt and pepper, and cook, stirring occasionally, until the apples and onion are soft, 10 to 15 minutes.
  • Meanwhile, wriggle a thin, sharp knife into each end of the meat, making a kind of pilot hole. Then use the handle of a long wooden spoon to force a hole all the way through the loin. Wriggle the spoon to make the hole as wide as you can. Stuff the apple and onion mixture into the roast from each end, all the way to the center. Sprinkle the roast with salt and pepper.
  • Roast on a rack in a large roasting pan for 15 minutes, then lower the heat to 325. Continue to roast, basting with apple juice about every 15 minutes or so. If the liquid accumulates on the bottom of the pan, use it to baste; if not, add more juice.
  • Start checking the roast after 45 minutes of total cooking time (large roasts can take up to 1.5 hours). When it's done, an instant-read thermometer will register 145. Remove the roast and set it on a platter.
  • Put the roasting pan on the stove over one or two burners on medium-high heat. If there is a lot of liquid, reduce it to about .75 cup, scraping up any brown bits from the bottom of the pan; if the pan is dry, add 1 cup of apple juice and follow the same process. When the sauce has reduced some, stir in the remaining 2 tablespoons butter if you like. Spoon the sauce over the roast, slice and serve.

Valuable Tips When Making Apple Cinnamon Pork Tenderloin Recipes Pork tenderloin is a delicious and versatile cut of meat that can be cooked in a variety of ways. When combined with the sweet and spiced flavor of apple cinnamon, it becomes a mouth-watering dish that is perfect for any occasion. Here are some valuable tips to consider when making apple cinnamon pork tenderloin recipes. 1. Choose the Right Cut of Pork Tenderloin The first step in making a delicious apple cinnamon pork tenderloin recipe is choosing the right cut of pork tenderloin. Look for a pork tenderloin that is fresh, firm, and has a pinkish-red color. Avoid pork tenderloin that is brown or discolored as it may be past its prime. Choose a piece that is about one and a half to two pounds in weight, which is perfect for a family of four. 2. Marinate the Pork Tenderloin Marinating the pork tenderloin is an essential step in making a flavorful apple cinnamon pork tenderloin recipe. Marinating helps the meat absorb the flavors from the marinade and makes it tender and juicy. Make a marinade by combining apple juice, cinnamon, salt, and pepper in a bowl. Place the pork tenderloin into the marinade, and refrigerate it for at least 2 hours, or overnight for best results. 3. Preheat the Oven Preheating the oven is a must when cooking any meat dish, including apple cinnamon pork tenderloin. Preheat your oven to 400°F so that it is hot and ready to cook the pork tenderloin. This helps to seal in the flavors and juices of the meat, giving it a crispy outer layer while keeping the inside tender and moist. 4. Tie the Pork Tenderloin Tying the pork tenderloin is an optional step, but it can help to ensure that the meat cooks evenly. Tying the pork tenderloin helps to prevent it from drying out by keeping the meat tight and compact. Use kitchen twine to tie the pork tenderloin, making sure to wrap the twine around the meat and tie it firmly. 5. Season the Pork Tenderloin Seasoning the pork tenderloin is an essential step in making a flavorful apple cinnamon pork tenderloin recipe. To add extra flavor, season the meat with additional cinnamon, salt, and pepper, as well as other spices of your choice. Rub the seasoning onto the meat before cooking it to ensure that it is evenly distributed and flavorful. 6. Roast the Pork Tenderloin Roasting is the best way to cook apple cinnamon pork tenderloin as it allows the meat to cook through evenly while retaining its flavor and juiciness. Place the seasoned and tied pork tenderloin on a roasting pan and bake it in the oven for about 20 minutes per pound, or until it reaches an internal temperature of 145°F. 7. Add Sliced Apples Adding sliced apples to your apple cinnamon pork tenderloin recipe is a great way to enhance the flavor of the meat. Slice apples into thin pieces and arrange them on top of the pork tenderloin before cooking. The apples will soak up the spices and juices from the pork tenderloin, creating a delicious and unique flavor. 8. Let it Rest Letting the apple cinnamon pork tenderloin rest for a few minutes after cooking is an essential step in ensuring that it is juicy and tender. Remove the pork tenderloin from the oven and let it rest for at least 5-10 minutes before slicing it. This allows the juices to redistribute back into the meat and keeps it from drying out. In conclusion, apple cinnamon pork tenderloin is a classic dish that is full of flavor and perfect for any occasion. Follow these valuable tips to make a delicious and juicy roast that will be the highlight of your dinner table. Remember to choose the right cut of pork tenderloin, marinate the meat, preheat the oven, tie the pork tenderloin, season it well, roast it to perfection, add sliced apples, and let it rest before serving.
