APPLE-STUFFED PORK LOIN WITH CORIANDER, CUMIN AND CINNAMON

Apple-Stuffed Pork Loin With Coriander, Cumin and Cinnamon image

Provided by Mark Bittman

Categories     dinner, roasts, main course

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 13

4 tablespoons butter
2 medium apples, peeled, cored and thinly sliced
1 large onion, chopped
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon paprika
1/2 teaspoon ground turmeric
1 teaspoon salt, or to taste
1 tablespoon freshly ground black pepper
1 boneless pork loin roast, 2 to 3 pounds
1 cup apple juice for basting, or more if needed.

Steps:

  • Heat oven to 450. Put 2 tablespoons of the butter in a large skillet over medium heat. When it starts to foam, add the apples, onion and all the spices, along with some salt and pepper, and cook, stirring occasionally, until the apples and onion are soft, 10 to 15 minutes.
  • Meanwhile, wriggle a thin, sharp knife into each end of the meat, making a kind of pilot hole. Then use the handle of a long wooden spoon to force a hole all the way through the loin. Wriggle the spoon to make the hole as wide as you can. Stuff the apple and onion mixture into the roast from each end, all the way to the center. Sprinkle the roast with salt and pepper.
  • Roast on a rack in a large roasting pan for 15 minutes, then lower the heat to 325. Continue to roast, basting with apple juice about every 15 minutes or so. If the liquid accumulates on the bottom of the pan, use it to baste; if not, add more juice.
  • Start checking the roast after 45 minutes of total cooking time (large roasts can take up to 1.5 hours). When it's done, an instant-read thermometer will register 145. Remove the roast and set it on a platter.
  • Put the roasting pan on the stove over one or two burners on medium-high heat. If there is a lot of liquid, reduce it to about .75 cup, scraping up any brown bits from the bottom of the pan; if the pan is dry, add 1 cup of apple juice and follow the same process. When the sauce has reduced some, stir in the remaining 2 tablespoons butter if you like. Spoon the sauce over the roast, slice and serve.

Apple cinnamon pork loin is a delicious dish that can impress your family and guests. It is a perfect combination of sweet and savory flavors that will make your taste buds dance. However, cooking pork loin can be intimidating, especially if you are not familiar with the process or techniques. We have compiled some valuable tips that will help you make the perfect apple cinnamon pork loin recipe.

Tip 1: Choose the right cut of pork loin

Choosing the right cut of pork loin is crucial because it can affect the texture and tenderness of the meat. Look for a pork loin that has some marbling or fat on it, as it will help keep the meat moist and tender during cooking. You can also choose between bone-in or boneless pork loin. A bone-in loin usually takes longer to cook, but it can add more flavor to the dish. A boneless pork loin is easier to carve and cooks faster, making it a good option if you are short on time.

Tip 2: Season the pork loin well

Seasoning the pork loin well is essential to bring out the flavors of the dish. Use a rub or marinade to infuse the meat with flavor, and let it sit in the refrigerator for a few hours or overnight to allow the flavors to penetrate the meat. A typical seasoning for apple cinnamon pork loin includes salt, black pepper, garlic powder, cinnamon, and brown sugar. You can also add other spices or herbs such as thyme, rosemary, or sage, depending on your preference.

Tip 3: Sear the pork loin before slow cooking

Searing the pork loin before slow cooking is a crucial step in creating a flavorful dish. It helps to caramelize the meat and gives it a beautiful brown crust. Searing also seals in the juices, making the meat more tender and juicy. Heat some oil in a pan and sear the pork loin on all sides until golden brown. Once you have seared the meat, place it in a slow cooker with some sliced apples, onions, and chicken broth.

Tip 4: Avoid overcooking the pork loin

Overcooking pork loin can result in dry, tough meat that is difficult to chew. To avoid this, use a meat thermometer to check the internal temperature of the pork loin. Pork loin should be cooked at an internal temperature of 145°F for medium-rare or 160°F for medium. Insert the thermometer into the thickest part of the meat, making sure it doesn't touch the bone. Once the pork loin has reached the desired temperature, remove it from the slow cooker and let it rest for a few minutes before slicing.

Tip 5: Serve the apple cinnamon pork loin with a side dish

Apple cinnamon pork loin is a rich and flavorful dish that pairs well with different side dishes such as roasted vegetables, mashed potatoes, or a simple green salad. The sweetness of the apple and cinnamon in the pork loin can be balanced with a savory side dish. You can also make a sauce using the juices from the slow cooker and thicken it with some cornstarch or flour to create a delicious gravy.

Conclusion

Making apple cinnamon pork loin is not as difficult as it may seem, especially if you follow the above tips. Choosing the right cut of pork loin, seasoning well, searing before slow cooking, avoiding overcooking, and serving with a side dish can help you make a delicious and impressive pork loin recipe. Give it a try and see how your family and guests will love it!
