CINNAMON OATMEAL PANCAKES WITH HONEY APPLE COMPOTE

Cinnamon Oatmeal Pancakes with Honey Apple Compote image

Oats have a tendency to get gummy in pancakes, but when they're blended with the whole wheat flour, they stay light in the batter while adding a nice nuttiness. Lowfat milk saves calories and leaves room for melted butter in the batter. The apple compote takes the place of syrup and is sweetened by unrefined natural sugars.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h25m

Yield 4 servings

Number Of Ingredients 13

1 1/2 cups apple cider
1 tablespoon honey
2 Golden Delicious apples, peeled and cut into 1/2-inch chunks
3/4 cup whole wheat flour
3/4 cup quick-cooking oats
2 tablespoons sugar
1 teaspoon baking powder
1/2 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup lowfat (1-percent) milk
3 tablespoons unsalted butter, melted and cooled
1 large egg
1 teaspoon canola oil

Steps:

  • Bring the cider to a boil in a small saucepan over high heat; lower the heat and simmer until reduced by half, 15 to 18 minutes. Stir in the honey and apples, reduce the heat to low and simmer until thick enough to coat the back of a spoon, about 30 minutes.
  • Meanwhile, combine the flour, oats, sugar, baking powder, cinnamon and salt in a blender until the oats are finely ground. Add the milk, butter and egg and blend until smooth, scraping down the sides of the blender occasionally.
  • Heat a nonstick skillet over medium-low heat. With a paper towel, wipe the oil on the surface of the heated skillet. Ladle 1 tablespoon of the batter onto the skillet to make a pancake. Make 4 to 5 more pancakes, taking care to keep them evenly spaced apart. Cook until bubbles break the surface of the pancakes and the undersides are golden brown, about 2 minutes. Flip with a spatula and cook for 1 minute more.
  • Serve immediately with the apple compote, or transfer to a platter and cover loosely with foil to keep warm. Repeat with the remaining batter, wiping the griddle with the oiled paper towel as needed.

My version of a very healthy high protein, low sugar, high fiber snack/energy bar. Only good carbs and a low glycemic index. This bar is very tasty and filling! I also want to stress that this is a LOW sugar item. If you are looking for something that is very sweet, like my first reviewer, you may want to add more sugar or splenda. This is personal preference as I do not like things too sweet.

OVERNIGHT APPLE-CINNAMON OATMEAL

Overnight Apple-Cinnamon Oatmeal image

A super-simple way to get a hearty breakfast on the table without any work! This recipe was inspired by an overnight maple and brown sugar oatmeal on MelsKitchenCafe.com (http://www.melskitchencafe.com). Make sure to use steel-cut oats, otherwise you'll end up with a pot of gummy paste.

Provided by Mandy at Food.com

Categories     Oatmeal

Time 7h5m

Yield 8 serving(s)

Number Of Ingredients 5

6 cups apple cider (add 1-2 cups of water if you like thin oatmeal)
2 cups steel cut oats
2 tablespoons packed light brown sugar (up to 1/4 cup, depending on preferred sweetness )
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon

Steps:

  • Coat the inside of a 4-5 quart slow cooker with cooking spray.
  • Combine all the ingredients in the slow cooker and stir. I find it helpful to mix the brown sugar with the cinnamon; the cinnamon gets better incorporated and doesn't separate from the mix as much.
  • Cook for 7-8 hours on low.
  • Stir thoroughly before serving with a rubber spatula or wooden spoon.
  • Serve immediately.
  • Refrigerate leftovers; reheat with a splash of milk.
  • *This recipe is easily cut in half for smaller slow-cookers. A time of 4 hours is optimal.

Apple cinnamon oatmeal recipes are a popular and healthy way to start your day. Oatmeal, with its high fiber content, is known to aid digestion, boost energy levels, and keep you feeling full for longer periods. Adding apples and cinnamon to the recipe not only enhances the flavor but also adds a heap of health benefits. In this article, we'll take a closer look at what apple cinnamon oatmeal recipes are and what makes them a healthy and delicious breakfast option.

What is oatmeal?

Oatmeal is a type of porridge made from oats. It is a whole grain, meaning that it contains all parts of the oat kernel, including the bran, endosperm, and germ. Oatmeal is naturally gluten-free and is rich in nutrients such as fiber, protein, vitamins, and minerals. There are several types of oatmeal available - rolled oats, steel-cut oats, quick oats, and instant oats - each with their own unique texture and cooking time.

What are the benefits of eating oatmeal?

Oatmeal is a nutrient-dense food that has been linked to a range of health benefits. Here are some reasons why you should consider adding oatmeal to your diet:
1. Aid digestion
Oatmeal is a great source of dietary fiber that can help promote healthy digestion and regular bowel movements. A diet high in fiber has been linked to reduced risk of digestive disorders such as constipation, irritable bowel syndrome, and hemorrhoids.
2. Reduce cholesterol
Oatmeal contains a type of soluble fiber called beta-glucan, which has been shown to lower LDL ("bad") cholesterol levels in the blood. A diet high in soluble fiber can also help to reduce the risk of heart disease and stroke.
3. Promote weight loss

Tips for Preparing the Perfect Apple Cinnamon Oatmeal

1. Choosing the Right Oats
The first step in making perfect oatmeal is selecting the right type of oats. There are different types of oats in the market, including steel-cut oats, rolled oats, quick oats, and instant oats. Steel-cut oats are the least processed and take longer to cook than the other types. Rolled oats, also known as old-fashioned oats, are steamed and flattened, making them faster to cook than steel-cut oats. Quick oats, on the other hand, are cut into smaller pieces than rolled oats, making them ready in as little as one minute when cooked. Instant oats are pre-cooked and ground more finely than other types, resulting in a smoother and less textured oatmeal. When making apple cinnamon oatmeal, it's best to use rolled oats as they have a firmer texture that holds up well against the soft apples.
2. Choosing the Right Apples
Apples add natural sweetness and a satisfying crunch to apple cinnamon oatmeal recipes. When selecting apples for your oatmeal, choose firm-textured apples that hold their shape when cooked. Some great options include Granny Smith, Honeycrisp, Braeburn, and Pink Lady apples. It's best to avoid soft-textured apples like Red Delicious, as they tend to turn mushy when cooked.
3. Adding the Right Spices
Cinnamon is a classic spice that pairs perfectly with apples, giving the oatmeal a warm, comforting flavor. In addition to cinnamon, other popular spices used in apple cinnamon oatmeal recipes include nutmeg, cardamom, ginger, and cloves. Adding spices not only enhances the flavor of the oatmeal but also adds important nutrients to the meal.
4. Choosing the Right Liquid
The type of liquid used in apple cinnamon oatmeal recipes can make a significant impact on the final outcome. Water is a popular choice, as it allows the natural sweetness of the apples to shine through without competing with other flavors. Milk (regular or non-dairy alternatives like oat milk or almond milk) adds richness and creaminess to the oatmeal, making it more indulgent. Apple juice can also be used as a liquid, which pairs well with the apple flavor.
5. Mixing Up the Toppings
Toppings like nuts, seeds, dried fruits, and fresh fruits can add extra nutrition and flavor to apple cinnamon oatmeal recipes. Some popular toppings include chopped almonds or walnuts, pumpkin seeds, raisins or cranberries, and sliced bananas or strawberries. Mixing up the toppings can also add variety to the meal, making it more enjoyable to eat.
6. Cooking the Oatmeal to the Right Consistency
Cooking the oatmeal to the right consistency is crucial in making perfect apple cinnamon oatmeal. Overcooking the oatmeal can result in a mushy texture, while undercooking it can result in a hard and chewy texture. When cooking oatmeal, it's important to follow the cooking instructions on the package and adjust the cooking time depending on the desired consistency. For firmer oatmeal, use less liquid and cook for a shorter time, while for a creamier consistency, add more liquid and cook for a longer time.
7. Adding Sweeteners Sparingly
While apple cinnamon oatmeal can be naturally sweetened by the apples and spices, adding additional sweeteners can make the meal too sweet. If additional sweeteners are needed, it's best to use natural sweeteners like honey, maple syrup, or agave syrup, rather than artificial sweeteners. It's also best to use these sweeteners sparingly, adding them in small amounts and tasting the oatmeal before adding more.

Conclusion

In conclusion, making perfect apple cinnamon oatmeal requires choosing the right oats, apples, spices, liquids, toppings, and cooking it to the right consistency. With these tips, you can customize your apple cinnamon oatmeal recipe to suit your taste and dietary requirements. Whether you prefer a firmer or creamier consistency, a sweeter or spicier flavor, or are looking to add extra nutrition to your meal, these tips will help you make the perfect apple cinnamon oatmeal.
