This recipe is a combo of a bunch of recipes - this one works the best for the above ingredients for my taste. I use unfiltered apple cider vinegar and fresh honey from the bee keeper from the farmers market but you can use any cider vinegar and honey that you have on hand.

1/4 teaspoon ground black pepper
1 cup thinly sliced red onion
2 Gala apples, peeled, cored, cut into 1/4-inch dice (about 1 pound)

Steps:

  • Whisk first 8 ingredients in small bowl for dressing. (Can be made 1 day ahead. Refrigerate. Rewhisk before using.)
  • Place sliced onion in medium bowl. Cover with cold water; let stand 30 minutes. Drain well. Place 1/3 cup dressing in another medium bowl. Add apples; toss to coat.
  • Trim off tips of romaine halves, leaving 5-inch lengths. Cut each romaine half lengthwise into 3 wedges. Fan wedges on large platter. Top with red onion slices. Drizzle salad with dressing, then sprinkle with apples and pecans.

3 fresh rosemary or 3 fresh thyme sprigs
3 small bay leaves
3 tablespoons butter, melted

1 head radicchio, separated into leaves
3/4 cup extra virgin olive oil
1/4 cup apple cider
1/4 cup apple cider vinegar
2 tablespoons finely chopped shallots
1 tablespoon whole grain Dijon mustard
1 tablespoon honey
1 1/2 teaspoons kosher salt

Steps:

  • APPLE CIDER VINAIGRETTE: Combine all ingredients in a glass jar with a tight-fitting lid. Cover with lid, and shake well. Shake jar again just before serving.
  • MAKE-AHEAD TIP: Store the vinaigrette in an airtight container or jar. When it's ready to serve, shake it vigorously to blend the ingredients, and check to see if it needs a little extra salt or pepper.
  • ROASTED VEGGIES: Preheat oven to 425°. Divide first 8 ingredients between two aluminum foil-lined jelly-roll pans. Drizzle with butter and oil; toss to coat. Spread vegetables in a single layer in each pan, leaving about 1 inch between pieces. Season with salt and pepper.
  • Bake both pans at 425° for 20 minutes, placing 1 pan on middle oven rack and 1 pan on lower oven rack. Rotate pans front to back, and top rack to bottom rack. Bake 20 to 25 more minutes or until vegetables are tender.
  • Gently loosen vegetables, and add salt and pepper to taste. Cool completely (about 20 minutes). Discard herb sprigs and bay leaves. Place vegetables in a zip-top plastic freezer bag, and refrigerate 2 hours to 2 days.
  • To serve, let vegetables stand 20 minutes or until room temperature. Add 1/4 cup Apple Cider Vinaigrette; toss to coat.
  • TO FINISH: Arrange radicchio leaves on a serving platter; top with roasted vegetables. Drizzle 1/4 cup vinaigrette over salad. Season with salt and pepper. Serve salad with remaining vinaigrette.

1/2 cup kosher salt
2 tablespoons granulated sugar
2 tablespoons light brown sugar
2 teaspoons crushed black peppercorns
1 (3 to 3 1/2-pound) piece center-cut salmon, skin on, pin bones removed, halved
Alderwood chips, soaked in cold water for 4 hours
Salad of Apple, Dried Cherries, Hazelnuts and Greens with Apple Cider Vinaigrette, recipe follows
1/4 cup apple cider vinegar
2 teaspoons honey
1 teaspoon Dijon mustard
Salt and freshly ground black pepper
1/4 cup canola oil
4 ounces organic baby greens, roughly chopped
1 Gala apple, cored and thinly sliced
1 Granny Smith apple, cored and thinly sliced
1 cup dried cherries
1 cup peeled, toasted hazelnuts, chopped

Steps:

  • In a medium bowl, mix together the salt, granulated sugar, brown sugar and peppercorns. Spread extra-wide aluminum foil a little longer than the length of the fish on the work surface and top with an equally long layer of plastic wrap. Lay 1 half of the salmon, skin-side down, on the plastic wrap. Sprinkle the rub onto the flesh of the salmon. Place the second half of the salmon, flesh-side down, on top the first half. Fold the plastic over to cover, and then close the foil edges together and crimp tightly around the fish.
  • Place the wrapped fish onto a sheet pan and top with another sheet pan. Weigh down with a brick or 2 and refrigerate for 12 hours. Flip the fish over and refrigerate another 12 hours. Some juice will leak out during the process so make sure there's a place for the runoff to gather.
  • Unwrap the fish and rinse off the cure mixture with cold water. Pat the salmon dry with paper towels and place in a cool, dry place (not the refrigerator) until the surface of the fish is dry and matte-like, 1 to 3 hours depending on humidity. A fan may be used to speed the process.
  • Prepare a smoker with alderwood chips. Smoke the salmon over the smoldering chips, keeping the temperature inside the smoker at about 200 degrees F, until the thickest part of the fish registers 150 degrees F, about 1 hour. Serve immediately or cool to room temperature, wrap tightly and refrigerate for up to 3 days.
  • Place the salmon on a platter. Drizzle with some of the reserved Apple Cider Vinaigrette, and top with the Salad of Apple, Dried Cherries, Hazelnuts and Greens. Serve.
  • Whisk together the vinegar, honey, mustard and salt and pepper, to taste, in a large bowl. Slowly whisk in the oil until emulsified. Reserve some to drizzle over the fish. Add the greens, apples, cherries and hazelnuts to the remaining vinaigrette and toss to combine. Season with salt and pepper.

1/2 clove of garlic or 1 small
1 inch thick slice of onion
1 Tbsp dijon mustatd
2 Tbsp honey
1/4 c apple cider vinegar
1/2 c olive oil i use the lighter oil for dressing
1/2 tsp salt
SALAD
2 anjou or bartlett pears chopped ( any hard pear)
2 granny smith or other hardy chopped
1 Tbsp olive oil for roasted fruit
3 celery stalks chopped coursely
6-8 oz baby greens ( combo of baby lettuce, greens, and radicchio
3/4 - 1 c gorgonzola cheese, or feta cheese
1/2 c toasted walnuts, or pecans
1/4 c dried cranberries
CHICKEN OPTIONAL ( YOU MAY USE PERDUE SHORT CUTS. THEY COME PRE- COOKED AND PACKAGED
OPTIONAL FOR MARINATED CHICKEN
NOTE: FOR MARINATING CHICKEN. DOUBLE THE VINEGRETTE RECIPE. USE HALF FOR DRESSING. USE OTHER HALF FOR MARINATING CHICKEN. ADD ADDITIONAL HONEY TO HALF FOR MARINATING CHICKEN.
1 1/2 lb thin cut grilled chicken marinated sliced
1/2 lb bacon cooked crisp and crumbled (optional)

Steps:

  • 1. Place all ingredients for dressing into a food processor. Process until smooth. Pour in to a bottle, or bowl and refrigerator.
  • 2. Place walnuts and or pecans in a frypan set heat to high. Add a teaspoon of olive oil. Stir constantly until you smell the aroma of the nuts. Usually that's an indication that they are done and they are just lightly browned. Should take about three minutes or so. Remove from heat onto a plate. Set aside to cool.
  • 3. Heat oven to 425 degree's. Peel apples and pears. Core and remove seeds. Cut each piece of fruit into eight pieces. Then cut each piece in half width wise. You can leave them in wedges or you can cut them in half like I did. Toss fruit in olive oil. Place in a small baking dish Tightly next each other. Salt-and-pepper them. Toss while baking after 10 minutes. Bake Until sides are starting to caramelize and fruit is still a bit crisp. Do not cook until mushy. Remove from pan.
  • 4. Rinse and spin your baby greens. Place equal portions on four plates or bowls. Portion out the celery fruit, nuts and Gorgonzola cheese evenly On top of greens. Dress with the cider vinaigrette.

I did add a little extra Splenda, oil and a squeeze of fresh lemon juice, but I leave that up to you! I did not serve mine over spinach, rather just in a small bowl as a meal starter. Lastly, I added some pepitas (pumpkin seeds without the shell), but again the addition of nuts is your choice.

- two heads green leaf lettuce, chopped
- one bag dried cranberries, 5 ounces
- 1 1/2 cups chopped toasted walnuts
- two red anjou pears, chopped
- one container gorgonzola cheese crumbles, 4 ounces
- apple cider vinaigrette:
- 1 cup apple cider
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon dijon mustard
- one shallot, chopped
- 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/2 cup extra light olive oil

Steps:

  • in a large bowl, mix lettuce, cranberries, walnuts, pears, and cheese crumbles, tossing gently to mix. Drizzle with Apple cider vinegar. Serve at once.
  • For the vinaigrette, in the container of an electric blender, mix the Apple cider, vinegar, honey, mustard, shallots, salt, and pepper. Process until blended. With blender running, add olive oil in a slow, steady stream. Process until blended. Makes about 2 cups. Salad serves 8 to 10.

2 cups red cabbage
1 cup green cabbage or lettuce
1 1/2 apples (golden delicious preferred)
2 carrots
3 green onions
2 tablespoons salad oil
2 tablespoon honey
2 tablespoons apple cider vinegar
1 tablespoon lime
1 dash cayenne

Steps:

  • Shred the red cabbage and green cabbage into fine strips. Measure 2 cups of the red and 1 of the green for color and add to a large mixing bowl.
  • Grate the carrots using a big holed grater and add it to the bowl along with sliced green onions
  • Cut the apple into thin match-stick pieces and add it to the salad. If you're chopping up this salad ahead of time, don't cut the apple till you're ready to dress the salad because they will turn brown. Toss everything together well.
  • For the dressing start with 2 tablespoons of salad oil in a jar or a bowl
  • Add the honey, apple cider, lime juice,salt, pepper and a light dusting of cayenne to the oil
  • Put the lid on and shake the dressing until the oil and other liquids are mixed well
  • Drizzle over the salad and toss well until everything is coated in the dressing
  • Serve chilled
