Time 35m

Yield 6 servings

Number Of Ingredients 15

3 cups whole milk
2 cups apple cider
1/2 cup jasmine rice
1/3 cup dark brown sugar
1/2 teaspoon fine sea salt
1/2 cup heavy cream
2 tablespoons unsalted butter
1 1/2 teaspoons pure vanilla extract
Ground cinnamon, as needed, for finishing
1 cup granulated sugar
1 teaspoon ground cinnamon
Kosher salt
2 cups pecan halves
1 tablespoon heavy cream
1 teaspoon pure vanilla extract

Steps:

  • Start the rice pudding: In a medium pot, combine the milk, cider, rice, brown sugar, and salt over medium heat. Stirring frequently, heat the mixture to a simmer. Continue to simmer over medium-low heat, stirring frequently, until the rice is tender and absorbs most of the liquid and the liquid becomes thick, 25 to 30 minutes.
  • While the pudding cooks, make the candied pecan topping: In a medium pot, combine the granulated sugar with the cinnamon, 1/4 cup water and a pinch of salt. Begin to heat over medium heat until the mixture melts, stirring gently occasionally.
  • Cook the mixture, stirring frequently, until light golden brown and boiling. Continue cooking, swirling frequently without stirring, until golden brown and caramelized. Add the pecans and continue to cook over medium heat, stirring frequently to glaze and coat the nuts fully. Continue cooking, tossing, until the mixture no longer appears liquid and the nuts become more difficult to stir, 3 to 5 minutes. Remove from the heat, and stir in the cream and vanilla, stirring well to combine.
  • Pour onto a parchment paper-lined baking sheet to cool completely, 10 to 15 minutes, then coarsely chop.
  • Finish the rice pudding: When the rice pudding has reached the appropriate doneness, turn the heat to low, and stir in the cream, butter, and vanilla. Cook until the mixture is heated through, 2 to 3 minutes.
  • Serve the rice pudding warm or pour it into a heatproof bowl, cover directly with plastic wrap and refrigerate until ready to serve cold. Serve dusted with cinnamon and topped with the coarsely chopped candied nuts.

APPLE RUM PECAN MAPLE RICE PUDDING

Apple Rum Pecan Maple Rice Pudding image

I had not liked rice pudding, ever. But then, one day, with my own family, I experimented, and made my own, with all our favorite things in a rice pudding. Apples, Rum, Candied Pecans, Maple Syrup, with a subtle hint of pie spices. Yum! It changed my mind! Any company, to whom I have served this little dish packed full of...

Time 1h10m

Number Of Ingredients 11

4 c milk
1 c rice, long grain white rice
1 c sugar
½ tsp salt
1 sweet apple, (like yellow delicious, pink lady, gala), peeled, cored, and diced
½ c pecans, toasted, and chopped
1/3 c (real!) maple syrup
2 large eggs
3 Tbsp golden rum
¼ tsp ground allspice
1 pinch ground nutmeg

Steps:

  • 1. In good sturdy saucepan, mix milk, rice, ⅔ cup sugar, and salt. Bring to simmer over medium-high heat. Reduce to low, cover; simmer, stirring occasionally 20 minutes. Add Apple; cook, covered, 20 minutes, until tender.
  • 2. Meanwhile, in small saucepan, heat remaining ⅓ cup sugar and 2 Tablespoons water over high heat. Boil until light amber in color, about 5 to 7 minutes.
  • 3. Line baking sheet with foil; grease foil well. Spread pecans out over foil. Pour amber sugar mixture over pecans. Let cool; break or chop into small pieces.
  • 4. In a mixing bowl, whisk maple syrup, and eggs. Stir in rum, allspice, and nutmeg into rice mixture. Whisk small amount of rice mixture into maple syrup mixture. Stir maple syrup mixture back into rice mixture; cook until thickened (160℉), about 3 minutes. Divide among 8 cups, top with sugared pecans.
  • 5. **Note: The alcohol from the rum will boil off, so letting children eat pudding need not be a concern. However, should you not want to use alcohol for any reason, use 3 tablespoons water, and 1 to 1½ tsp. Rum extract (amount depends on the strength of your flavoring or extract; taste to suit) to replace golden rum.

APPLE CINNAMON RICE PUDDING

Apple Cinnamon Rice Pudding image

This came from the milk calendar. Make sure you use short grain rice for this recipe to get a creamy pudding. The long grain rice won't cook properly and the pudding won't thicken. The apples and cinnanmon are a nice change from plain rice pudding.

Apple cider rice pudding with candied pecans is a delicious dessert that is perfect for fall. This dessert is made using rice pudding as the base, flavored with apple cider, and topped with crunchy candied pecans. It is a simple, yet elegant dessert that is sure to impress your guests. Below are some valuable tips to ensure that your apple cider rice pudding with candied pecans turns out perfect every time.

Tips:

1. Use high-quality ingredients:
The quality of ingredients you use will make a noticeable difference in the taste of your apple cider rice pudding with candied pecans. It is best to use high-quality, organic ingredients when possible. Quality ingredients will result in a superior tasting dessert.
2. Cook the rice pudding properly:
The rice pudding is the base of this dessert, so it is critical to cook it correctly. Overcooked rice pudding can become stiff and dry, while undercooked rice pudding can be mushy and unpleasant. Follow the cooking instructions on the recipe closely, and make sure to stir the rice pudding frequently. Using a non-stick pot can help prevent the rice pudding from sticking to the bottom of the pot, resulting in a smoother pudding.
3. Use fresh apple cider:
Fresh apple cider will give your dessert a richer flavor and aroma than using store-bought cider. If possible, buy your apple cider from a local orchard or farmer's market. Apple cider can also be made at home using fresh apples and a juicer. This will provide a more organic and homemade flavor to your dessert.
4. Candied pecans:
Candying the pecans adds an extra layer of sweetness and crunch to the apple cider rice pudding. It is essential to monitor the heat when making the candied pecans as they can burn quickly. A good tip is to use a candy thermometer to ensure that the sugar syrup reaches the appropriate temperature. Use a spatula to stir the pecans frequently to prevent them from sticking together. Once the pecans are done, let them cool on a sheet of parchment paper before adding them to the pudding.
5. Let the pudding cool:
After the rice pudding is cooked, let it cool completely before adding the candied pecans. Adding the pecans to a hot pudding will cause the sugar on the pecans to melt, resulting in a messy, sticky pudding. Once the pudding is cooled, add the candied pecans and refrigerate the dessert for a few hours before serving. This will allow the flavors to blend and the pudding to set.
6. Garnish:
Garnishing the apple cider rice pudding with candied pecans can add an extra touch of elegance to your dessert. Suggestions for garnish can include a sprig of mint or a dusting of cinnamon on the top of the pudding.

Conclusion:

In conclusion, making apple cider rice pudding with candied pecans can be a simple, yet enjoyable way to impress your guests. The quality of ingredients, cooking the rice pudding correctly, using fresh apple cider, monitoring the heat when making the candied pecans, allowing the dessert to cool before adding the pecans, and garnishing the dessert can all contribute to a successful outcome. Follow these valuable tips to ensure that your apple cider rice pudding with candied pecans is a hit.
