AUTUMN APPLE-PEAR CHUTNEY

Autumn Apple-Pear Chutney image

This deeply spiced chutney is one of the last things I make each fall. I love it alongside roasted root vegetables and in place of applesauce with Hanukkah latkes. I don't typically peel pears, but if yours have tough, pebbly skin, you might want to peel them.

Provided by Marisa McClellan

Time 1h55m

Yield 24

Number Of Ingredients 13

1 ½ pounds apples - peeled, cored, and diced
1 ½ pounds pears - peeled, cored, and diced
1 large yellow onion, minced
2 cups cider vinegar
1 ½ cups white sugar
1 ½ cups dried cherries
1 lemon, seeded and chopped
2 tablespoons yellow mustard seeds
2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground allspice
½ teaspoon ground cloves

Steps:

  • Submerge 6 empty half-pint jars on a rack in a large pot of water. Cover and bring to a rolling boil, then reduce heat to low to keep jars warm until ready to fill.
  • Combine apples, pears, onion, vinegar, sugar, cherries, lemon, mustard seeds, salt, cinnamon, ginger, allspice, and cloves in a wide, nonreactive 4-quart pot over high heat and bring to a boil. Once it bubbles, reduce heat to medium; simmer gently, stirring often, until mixture is thickened and a spoon drug through leaves a trail that doesn't fill in immediately, about 1 hour. Toward the end of the cooking, make sure to stir every minute or so to prevent scorching. Remove from heat.
  • Working with one jar at a time, remove empty jars from canning pot. Using a wide-mouth funnel, carefully ladle jam into jars, leaving 1/2 inch for headspace. Use a clean wooden chopstick to work air bubbles out of jars. Check headspace again and add more chutney if necessary to bring to 1/2 inch from the top.
  • Wipe jar rims, apply lids and rings (not too tightly), and return jars to canning pot. Cover pot and return water to a rolling boil. Process for 10 minutes. Turn off heat, remove pot lid, and let jars stand in the cooling water 5 minutes to help ensure a good vacuum seal.
  • Move jars to a folded kitchen towel or wooden cutting board to cool completely before checking seals. Any unsealed jars should be refrigerated and eaten promptly. Store sealed jars in a cool, dark place. Sealed jars are shelf-stable at least 1 year.

OLD FASHIONED SCOTTISH APPLE AND GINGER CHUTNEY

Old Fashioned Scottish Apple and Ginger Chutney image

A delightful apple chutney with the added kick of ginger. I make this every autumn when I harvest my apples from the garden - you can use windfall apples too. Chutney is such an interesting preserve as it combines sweet and savoury flavours, making it an ideal accompaniment for a range of dishes such as cold meats, salami, ham, pasties, pies and is essential in a traditional Ploughman's Lunch! I also add chutney to my curries, tagines and winter stews. The word chutney is derived from the Hindu word "chatni" meaning strongly spiced. Try to use good cooking apples with plenty of flavour and taste for the best results. This is based on a family recipe and is a mellow and mild type of chutney.

Provided by French Tart

Categories     Apple

Time 2h15m

Yield 4 lbs

Number Of Ingredients 11

1 lb onion, weight is for onions when peeled and finely chopped
2 lbs cooking apples, weight is for apples when peeled, cored and roughly chopped
4 ounces sultanas
1 ounce fresh gingerroot, grated
1 teaspoon dried ginger powder
2 teaspoons mixed spice
1 lb soft brown sugar
1/2 pint malt vinegar
1/2 pint cider apple cider vinegar
1/2-1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Place all the prepared onions and apples into a large preserving pan and add the remaining ingredients.
  • Bring slowly to the boil and then lower the heat so that chutney cooks at a rolling boil.
  • Stir the chutney regularly and make sure it does not "catch" and burn on the base of the preserving pan.
  • Keep on cooking until the chutney is the consistency of a thick jam and all the liquids have dissolved.
  • (A trick to check if it is cooked is to draw your wooden spoon across the chutney, if the space that is left fills up with liquid, the chutney is not ready yet!).
  • Spoon the hot chutney into hot and sterile jars and seal immediately.
  • Makes about 4 lbs chutney.
  • Store in a dark and cool place and leave to mature for at least 2 weeks.
  • Will keep in ideal storage conditions for up to 2 years+.

SPICY PLUM & APPLE CHUTNEY

Spicy plum & apple chutney image

This multi-purpose chutney can add zing to sandwiches or makes a great dip for poppadums

Provided by Sara Buenfeld

Categories     Condiment, Snack

Time 1h35m

Yield Makes 4-5 jars

Number Of Ingredients 12

1 garlic bulb
thumb-size piece fresh root ginger
2 large onions
1kg Bramley apples
3 star anise
1 tsp cumin seed
1 cinnamon stick
500ml bottle cider vinegar
1 tbsp salt
1kg plums
450g golden caster sugar
4-5 sterilised jars

Steps:

  • To sterilise the jars: run them with the lids and any rubber seals through the hottest cycle of your dishwasher. If you don't have a dishwasher, give the jars a good wash, then heat them in the oven at 150C/130C fan/ gas 2 for 30 mins. Don't bake seals - boil them in a pan of water for 10 mins. If you don't have lids you can buy jam pot covers from cook shops which you can then cover with fabric.
  • Prepare the ingredients: first, peel the garlic cloves and cut them into slivers. Peel and thinly shred the ginger. Halve, peel and thinly slice the onions, then put them in a large, wide saucepan or a preserving pan with the garlic and ginger. Peel, core and chop the apples, then add to the pan with the spices, vinegar and salt.
  • Bring the pan to the boil over a gentle heat, give everything a good stir, then turn down the heat and cover the pan (if you don't have a lid use foil). Simmer for 30 mins until the apples are cooked and pulpy.
  • While the apples are simmering, stone and quarter the plums, then add them to the cooked apples with the sugar. Stir well and leave to bubble away, this time uncovered, for another 40 mins stirring regularly until the plums are cooked but still retain some of their shape. Ladle into the sterilised jars, seal and label. Use our downloadable Christmas labels if you like.
  • This chutney is best kept for about a month before eating as the vinegar needs a bit of time to mellow. If you don't want the flavour of the spices to develop any more, then take out the cinnamon and star anise before potting. It will keep for 1 year in a cool place but once opened store in the fridge and use within a month.

Understanding Apple Chutney

Apple chutney is a savory condiment made from combining diced or grated apples, vinegar, sugar, and spices such as cinnamon, cloves, and ginger. This flavorful chutney is a popular accompaniment to many main course dishes, and it often adds a hint of sweetness and tartness to the meal.
The Making of Apple Chutney
Creating apple chutney requires simple ingredients that you can easily find in your pantry or local store. The key is to select firm, ripe apples with a balance of tart and sweet flavor. You can peel and grate the apples, or dice them into small pieces, depending on how you like the texture. Once you have the apples ready, you combine them with vinegar, sugar, and spices. The vinegar helps to preserve the chutney, while the sugar adds sweetness and a caramel-like flavor. The spices not only add flavor but also help to balance the tartness of the apples. Next, you simmer the mixture until the apples are soft and tender, and the chutney has thickened. This process typically takes around 45-60 minutes on the stove, depending on the consistency you prefer.

The type of apple used in the recipe can greatly affect the taste and texture of the chutney. It is best to use apples that are firm, fragrant, and slightly tart. Some varieties that work well for chutney include Granny Smith, Honeycrisp, and Braeburn. It is important to avoid using apples that are too sweet, such as Red Delicious, as they can make the chutney too cloying.

Tip #2: Add complementary spices and flavors

To create a well-rounded and flavorful chutney, it is important to add the right blend of spices and flavors. Common spices used in apple chutney recipes include cinnamon, cloves, ginger, and mustard seeds. Other flavorful ingredients include raisins, dried apricots, onions, and garlic. Experiment with different combinations to create a unique flavor profile.

Tip #3: Cook the chutney slowly

To allow the flavors to meld and for the chutney to reach the desired consistency, it is important to cook it slowly over a low heat. This can take anywhere from 45 minutes to 2 hours, depending on the recipe. Stir the chutney frequently to prevent it from sticking to the bottom of the pot and burning.

Tip #4: Properly store the chutney

To ensure that the chutney stays fresh and flavorful, it is important to store it properly. Once cooled, transfer the chutney to an airtight container and refrigerate for up to 2 weeks. Alternatively, the chutney can be frozen for up to 3 months. Thaw in the refrigerator before using.

Tip #5: Use the chutney creatively

Once the chutney is made, it can be used in a variety of ways. It is a great condiment for cheese platters, sandwiches, and roasted meats. It can also be used as a glaze, marinade, or sauce for grilled or roasted vegetables. Get creative and experiment with different ways to use the chutney.
