- Trim crusts off of bread.
- Combine frosting, cream cheese, carrot and nuts.
- Spread filling evenly on bread, top with another slice of trimmed bread to create sandwiches.
- Slice sandwiches into quarters, and be creative with the shapes, long fingers, squares, triangles, or use cookie cutters to create other fun shapes.
- Chill for at least an hour before serving.

- 6-8 slices of good quality bread.
- 2 tablespoons of butter.
- 1 medium-sized carrot.
- 1 medium-sized apple.
- 2 tablespoons of cream cheese.
- A pinch of salt.
- A pinch of black pepper.

Directions
- Peel the carrot and wash it thoroughly. Grate the carrot and set it aside on a plate.
- Wash the apple, and peel it if you prefer. Slice it thinly, making sure to take off the core and the seeds.
- In a mixing bowl, beat the cream cheese and butter together until smooth.
- Add a pinch of salt and a pinch of black pepper to the mixture and stir well.
- Add the grated carrot to the cream cheese mixture and mix well until fully incorporated.
- Take two slices of bread and spread a thin layer of the cream cheese and carrot mixture on one side of each slice.
- Take four slices of the apple and lay them on top of the cream cheese mixture, spreading them evenly.
