2 cups all-purpose flour
3/4 cup sugar
2 teaspoons baking powder
2-1/2 teaspoons ground cinnamon
1/2 teaspoon salt
1 large egg, room temperature
1 cup 2% milk
1/4 cup butter, melted
2 teaspoons vanilla extract
1/2 cup chopped peeled tart apple
12 caramels, chopped
TOPPING:
1/2 cup packed brown sugar
1/4 cup quick-cooking oats
3 tablespoons butter, melted
1 teaspoon ground cinnamon

Steps:

  • In a large bowl, combine the flour, sugar, baking powder, cinnamon and salt. In another bowl, whisk the egg, milk, butter and vanilla. Stir into dry ingredients just until moistened. Fold in apple and caramels. , Fill 12 paper-lined muffin cups three-fourths full. Combine topping ingredients; sprinkle over batter. , Bake at 350° until a toothpick inserted in the cake portion comes out clean, 20-25 minutes. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

3 baking apples, peeled and sliced
½ cup packed brown sugar
½ cup butter
1 pinch salt
½ cup chopped walnuts
1 ½ cups all-purpose flour
½ cup packed brown sugar
1 teaspoon baking powder
¾ teaspoon apple pie spice
¼ teaspoon baking soda
⅛ teaspoon salt
¾ cup butter, melted
¾ cup applesauce
3 tablespoons buttermilk
1 egg, lightly beaten

Steps:

  • Stir apples, brown sugar, butter, and salt in a large skillet over medium-high heat. Cook, stirring occasionally, until soft and syrupy, about 30 minutes. Stir in walnuts.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease a muffin tin; divide apple mixture among muffin cups.
  • Whisk flour, brown sugar, baking powder, apple pie spice, baking soda, and salt together in a large bowl. Make a small well in the center and set aside.
  • Combine butter, applesauce, buttermilk, egg, and vanilla extract. Pour into the well in the flour mixture. Mix until just combined; batter should be lumpy. Pour batter over apple mixture in the muffin cups.

I've never been much of a muffin maker. If I'm going to bake, I'd prefer to make a whole cake. But there is one kind of muffin that I heartily embrace - an upside-down fruit muffin. Its small, individual size encourages the fruit to condense and caramelize as it bakes. Then, when you unmold the muffin, the fruit transforms into a glistening crown of an irresistible sticky topping.

3 apples about 1 1/2 pounds, peeled, cored and sliced 1/4-inch thick
1/2 cup dark brown sugar
8 tablespoons (1 stick) unsalted butter

15g soft butter
25g plain flour
15g demerara sugar
15g soft butter
25g plain flour
15g demerara sugar
300g plain flour
1tbsp baking powder
190g caster sugar
210ml milk
1 large egg
100g butter, melted
300g apple, peeled, cored and chopped into chunks
jar of salted caramel/duche de leche

Steps:

  • Preheat oven to 200c/180c fan. Line 12 hole muffin tin. Make the crumble topping by rubbing together the butter and flour till it resembles breadcrumbs. Stir in the sugar and set aside.
  • For the muffins sift the flour and baking powder into a bowl then stir in the sugar. In a jug, combine the milk, egg and melted butter.
  • Stir the wet mixture into the dry mixture till combined. Fold in the chopped apple pieces.
  • Spoon one tbsp of the mixture into the cases. Then place a tsp of salted caramel into the middle of each case, followed by another tbsp of apple mixture on top.
  • Sprinkle over the crumble topping. Bake for 20-25mins

2 cups sugar
1 cup vegetable oil
3 large eggs, lightly beaten

3 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups chopped pecans, toasted and divided
2 (14 ounce) cans sweetened condensed milk
1/2 cup firmly packed light brown sugar
1/2 cup butter
1 teaspoon vanilla extract

Steps:

  • For muffins:.
  • Peel, core, and cut 4 apples into 24 (1/4-inch-thick) rings.
  • Sauté apple rings, in batches, in a lightly greased skillet over medium heat 1 to 2 minutes on each side or until lightly browned.
  • Remove from skillet, and place 1 apple ring in the bottom of each of 24 lightly greased muffin pan cups.
  • Peel and finely chop enough remaining apples to equal 3 cups.
  • Set aside.
  • Stir together sugar and next 3 ingredients in a large bowl.
  • Stir together flour and next 3 ingredients; add to sugar mixture, stirring just until blended. (Batter will be stiff.)
  • Fold in finely chopped apples and 1 cup pecans.

  • Bake at 350° for 25 minutes or until a wooden pick inserted in center comes out clean.
  • Remove muffins from pan, and cool, apple rings up, on a wire rack.
  • Press the handle of a wooden spoon gently into the center of each apple ring, forming a 1-inch-deep indentation in the muffins.
  • Spoon warm Quick Caramel Frosting evenly over muffins, filling indentations.
  • Sprinkle evenly with remaining 1 1/2 cups chopped pecans.
  • For frosting:.
  • Place all ingredients in a heavy 3-quart saucepan; bring to a boil, stirring constantly, over medium-low heat.
  • Cook, stirring constantly, 3 to 5 minutes or until mixture reaches a pudding-like thickness.
  • Remove from heat.
  • Spoon warm frosting evenly over muffins.

1 egg

  • Heat oven to 425°F. Place paper baking cup in each of 12 regular-size muffin cups.
  • In medium bowl, stir Muffin Mix, milk, oil, egg and pecans just until blended. Divide batter among muffin cups (each about two-thirds full).
