I love citrus and this is a fave in the summer. Origins are also Hungarian (how'd you guess?) Again, handed down to me by my grandmother. Please read entire directions first before attempting. The prep sounds complicated but if you read it you'll see it's really not and remember, it's an old recipe.

1 3/4 cups flour
1/2 lb butter
1/4 lb almonds, ground fine
1/4 lb confectioners' sugar
1 teaspoon vanilla extract
1 cup sugar
1 3/4 lbs apples
1/4 cup slivered almonds
1/2 cup chopped citron
1/4 cup lemon juice
1/4 cup confectioners' sugar
2 tablespoons lemon juice
1 tablespoon lemon zest

Steps:

  • Preheat oven to 375.
  • Mix flour and butter until crumbly. Add the almonds and sugar. Knead together well.
  • Divide the dough into 4 sections. Roll each section into even thin layers. HERE'S WHERE GEOMETRY IS NEED. You will need to cut each piece into the desired size you will need. These will be large cookies that you'll put together to form your cake, so your layers must be uniform.
  • Put the layers on a cookie sheet (you'll have to bake 2 at a time but it's ok). Bake for 12 - 15 minutes till the layers are light golden.
  • Carefully slide them off the cookie sheet and cool.
  • Make your filling:.
  • Bring the sugar and 3/4 cup water to a boil. Add chopped apples. A few minutes later add almonds, citron and lemon juice. Cook the mix until it becomes lie a thick jelly consistency. Careful, so it doesn't burn. Remove from heat and cool.
  • Once you've baked and cooled your large cookies, spread a layer of filling on each layer and cover top with the lemon glaze, letting it drip down the sides. Chill overnight in refrigerator. Before serving you'll need to let the cake stand at room temp for about 1 hour to get abit soft.

Steps:

  • Preheat oven to 400°F.
  • Mix and sift dry ingredients.
  • Cut in butter.
  • Add milk and egg, and mix quickly.

  • Pare, core, and slice apples; press into dough.

Ever baked cakes in canning jars? It's neat! ANY quick bread-type cake can be baked in canning jars. Lighter cakes tend to fall once the jar seals. I usually bake one jar first -- you have to know how high the batter rises. I usually fill ONE jar 1/2 full then bake it to see how high it rises, then go from there. You don't want the cake to come out of the top of the jar, only to within 1/4 to 1/2 inch from the lip of the jar. Write it down on your recipe (how far you filled the jars)! Once you've established how high the cake rises, you can go from there. The first time around is a bit tricky because you won't know how many jars you'll need. MOST of the recipes I've tried I end up using around 8. Sterilize as many jars as you think you'll need and go from there. Make sure your LIDS are new, the rings don't ha ve to be As the jars do seal, the cakes are as moist as the day you put them into the jars--sometimes MORE SO. The baking times will vary.

1 1/2 teaspoons salt
2 2/3 cups sugar
3 cups flour
4 eggs
2/3 cup water

2/3 cup nuts, chopped

2 tablespoons butter

Steps:

  • Mix the ingredients together in the order given.
  • Sterilize 7 to 9 wide mouth pint jars and lids.
  • Grease them with shortening.
  • Fill the jars half full and bake on the middle wire wire rack in the oven.
  • Bake for 45 minutes at 325 degrees.
  • As soon as the cake is done, remove the bottles from the oven one at a time. Wipe the rim of the bottle clean with cloth and put on the hot sterilized Lids.
