Diane wanted the taste of carmel apples so she added the glaze to a recipe that she had made before. This is a great tasting, moist cake. Serve with a dollop of whipped cream or a scoop of your favorite vanilla ice cream. The recipe comes from Diane Nemitz & Hometown recipes. Note: Nut lovers can add 1 cup of chopped walnuts or pecans to the cake batter.

1/4 cup cinnamon-sugar mixture (for dusting cake pan)
4 apples, chopped small
3 eggs
1 cup canola oil
2 cups flour
2 cups sugar
1/2 teaspoon baking soda
1 teaspoon cinnamon
2 tablespoons butter
1/2 cup firmly packed light brown sugar
2 tablespoons milk

Steps:

  • Preheat oven to 350 degrees; grease a bundt pan or tube pan and coat with cinnamon-sugar mixture.
  • Mix apples, eggs and oil with an electric mixer.
  • Add the flour, sugar, baking soda and cinnamon; mix well.
  • Pour into pan and bake about 1 hour or until a toothpick inserted in center comes out clean.
  • Allow cake to cool in pan for at least 10 minutes; invert onto a cake plate.
  • To prepare Glaze; combine butter, brown sugar and milk in a medium saucepan, bring to a boil and cook for 1 minute.
  • Spoon over cake, allow to cool before serving, ENJOY.

3 cups flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1 lb apple, peeled, cored and chopped into about 1/3-inch cubes (can use more apples if desired)
1 teaspoon salt
1 1/4 cups brown sugar
1 1/2 cups vegetable oil
1 cup white sugar
3 large eggs
3 teaspoons vanilla
1 cup chopped pecans
1/2 cup butter (no subs!)
1 cup brown sugar
1/4 cup half-and-half cream
1 teaspoon vanilla

Steps:

  • Set oven to 350°F.
  • Set oven rack to second-lowest position.
  • Grease a 12-cup bundt pan.
  • In a bowl, sift flour, cinnamon, baking soda, baking powder and salt.
  • Sprinkle 3 tablespoons of the flour mixture into the Bundt pan and tilt pan to coat.
  • In another bowl, place the chopped apples and 2 tablespoons of the flour mixture; toss to coat.
  • In another bowl combine 1-1/4 cups brown sugar, 1 cup white sugar, vegetable oil, eggs and vanilla; beat with an electric mixture until combined and thick (about 4 minutes).
  • Gradually beat in the remaining flour mixture until combined.
  • Fold in the chopped apple mixture and pecans into the batter.
  • Transfer to prepared bundt pan.
  • Bake for about 1 hour or until the cake tests done.
  • Transfer the cake to a rack then prepare the caramel glaze.
  • To make the glaze: melt butter in a small heavy-bottomed saucepan.
  • Whisk in 1 cup brown sugar then the half and half or cream.
  • Continue whisking until the glaze is smooth and comes to a boil.
  • Add in 1 teaspoon vanilla, and remove from heat.
  • Spoon about 1/4 cup of the hot glaze over the warm cake that is still in the pan.
  • Let the cake sit for 15-20 minutes to absorb the glaze.
  • Turn the cake onto a platter, then pour the remaining glaze over the cake.
  • Let stand until cool (at least 1 hour) before slicing.

2 c sugar
1 1/2 c oil (vegetable or canola)
3 large eggs
1 tsp vanilla
1/2 tsp black walnut flavoring
3 c all purpose flour
1 tsp baking soda
1 tsp cinnamon

2 c fresh apples, peeled and coarsely chopped (i prefer granny smith)
1 c black walnuts, coarsely chopped
CARAMEL GLAZE
1/2 c brown sugar, firmly packed
1/2 c butter
2 Tbsp light corn syrup
2 tsp milk or half and half
1 tsp vanilla extract
1/2 tsp caramel extract

Steps:

  • 1. Preheat oven to 350 degrees. Grease 9" bundt pan and set aside.
  • 2. In a large bowl, beat sugar, oil, eggs and flavorings until light and fluffy. Mix flour, soda, salt, and cinnamon together and add to creamed mixture. Mix only until blended (I use my spatula and not my electric mixer so as not to overbeat). Fold in apples and nuts.
  • 3. Spread batter into prepared bundt pan and bake about one hour and 20 minutes or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes. Remove from pan and transfer onto serving plate. Top with caramel glaze (directions to follow) and serve.
  • 4. CARAMEL GLAZE: Place all ingredients into a heavy saucepan and cook over medium heat, stirring constantly, scraping the sides of the pot in order to remove any sugar crystals until mixture comes to a boil and begins to thicken. Allow to cool for about 10 minutes. Drizzle over slightly warm cake.
  • 5. TIP: Sometimes black walnuts can be difficult to find. If you don't have black walnuts, you may use pecans or english walnuts but just follow this step: Place nuts in a bowl and add about 1 teaspoon of black walnut flavoring. Stir to coat and let stand for about 30 minutes. Use in recipe as usual.

Steps:

  • Preheat oven to 325 F. butter and flour a 13x9x2-inch baking pan; set aside. peel apples, quarter, core, and cut each quarter in half lengthwise, then crosswise (16 pieces from each apple). In a medium bowl whisk together the flour, baking soda, cinnamon, salt, and nutmeg; set aside. in a very large mixing bowl whisk eggs to combine. whisk in oil, sugars, and vanilla until well blended. Gradually whisk in the flout mixture just until well blended. fold apples and pecans into batter (batter will be thick and just coat apples) turn into prepared pan, spreading to edges of pan. bake about 1 hour or until a toothpick inserted in the center of the cake comes out clean. remove from oven and cool on a wire rack while preparing glaze. spoon caramel glaze over warm cake. Caramel Glaze in a medium skillet melt 6 tablespoons unsalted butter. add 1/3 cup packed dark brown sugar, 1/3 cup packed light brown sugar, 1/2 cup whipping cream, and a pinch of salt. cook and stir until blended over medium- low heat for 2 minutes. increase heat and boil 2 minutes or until dime-size bubbles cover the surface of the glaze. remove from heat and cool slightly until glaze begins to thicken, about 5 minutes. spoon over cake.

2 cups sugar
1 cup canola oil
1/2 cup apple juice (or orange juice, etc.)
1 tablespoon vanilla
3 cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
4 cups apples, peeled and thinly sliced
3 tablespoons sugar
2 teaspoons cinnamon
1/2 cup butter
1/2 cup brown sugar
1/4 cup half-and-half or 1/4 cup milk

Steps:

  • Beat the eggs and sugar; add the oil, juice and vanilla alternately with the flour, baking powder and salt. (If you are mixing by hand, combine the dry ingredients first.)
  • Pour half the batter into a bundt or tube pan sprayed with non-stick cooking spray. You can also use a 9x13 inch pan.
  • Top with half the apple slices. Combine the 3 tablespoons sugar and 2 teaspoons cinnamon and sprinkle half the mixture over the apples.
  • Top with remaining batter, apples and cinnamon sugar.
  • Bake at 350 degrees for 1 hour and 10 minutes.
  • Cool in pan 1 hour, then remove to serving platter.
  • To make glaze: melt the butter in a small saucepan over medium/low heat. Stir in the sugar and milk and boil 3 minutes, stirring constantly, until the sugar crystals are dissolved. 1 pkg plain spice cake(18.25oz)
1 c whole milk
8 Tbsp butter-melted (1 stick)
1/3 c canola oil
3 large eggs
2 tsp maple flavoring
FILLING
1 large apple(peeled,cored,& sliced)(1 heaping cup)
1/4 c packed brown sugar
1/2 tsp ground cinnamon
2 Tbsp butter(melted)
TOPPING---BROWN SUGAR CARAMEL GLAZE
3 Tbsp butter or margarine
3 Tbsp packed light brown sugar
3 Tbsp granulated sugar
1/2 tsp pure vanilla extract

  • 1. Place rack in middle of oven and preheat to 350.Lightly mist a 12 cup Bundt Pan with vegetable oil spray and dust with flour. Shake out the excess flour.Set pan aside
  • 2. Put 1st 6 ingredients in a mixing bowl. Blend until mixed,scrape down sides. Increase mixer speed to medium and beat for 1-1/2 minutes.....The batter should look thick and well combined. pour 1/2 the batter into prepared pan,smooth out with a rubber spatula and set pan aside.
  • 3. PREPARE FILLING: Place all ingredients in a bowl and combine.Spoon over batter in pan.Pour remaining batter over filling.
  • 4. Bake the cake until it springs back when lightly pressed with your finger and starts to pull from the sides of the pan. 43-47 minutes....Remove pan from oven to a wire rack to cool for 20 minutes.(as the cake cools in the pan it will fall 1")...Run a long sharp knife around the edge of the cake and invert onto a platter.Drizzle with the glaze.

2/3 c granulated sugar or granulated fruitose
1/2 c coconut oil (may sub vegetable oil)
1/3 c pure maple syrup
2 tsp vanilla extract

1 1/2 c granny smith apples, peeled and finely chopped
2 large eggs
2 1/2 c all purpose flour
1/3 c powdered coffee creamer or nonfat dry milk

3/4 tsp baking soda
1 tsp salt
3 tsp pumpkin pie spices
3/4 c hershey's cinnamon chips
3/4 c semi sweet chocolate chips
MAPLE CARAMEL GLAZE
3 Tbsp brown sugar, firmly packed
2 Tbsp pure maple syrup
2 Tbsp heavy cream
1/4 tsp salt
3 oz creamed cheese, softened
approx 3 c powdered sugar

  • 1. Preheat oven to 350 degrees. Spray a large bundt pan or 2 small ones with non stick cooking spray. Set aside. Prepare apples and measure out ingredients.
  • 2. In a large bowl, cream together sugars, coconut oil, eggs, and vanilla for 2 minutes. Add syrup, pumpkin, apples, and cider until mixed well. Sift or whisk all dry ingredients together.
