APPLE BUTTER COOKIES

Apple Butter Cookies image

My mother used to bake these mouthwatering cookies for an after-school treat. Though it's been 55 years since I first found out about them, I still savor the smell that fills the house as these cookies bake. They stay moist and fresh for a long time, or the dough can be stored in the refrigerator for several days so you can bake as you need them.-Dorothy Hawkins, Springhill, Florida

Categories     dessert

Time 40m

Yield 10 cookies

Number Of Ingredients 11

1 stick (8 tablespoons) unsalted butter, melted
1/2 cup packed light brown sugar
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1 large egg, at room temperature
1 1/2 cups all-purpose flour
1 tablespoon apple pie spice
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 to 2 small apples, cored and cut into thin rounds (about 1/8-inch thick)
1/4 cup gold sanding sugar or coarse sugar

Steps:

  • Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
  • Place the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment and beat until combined, about 2 minutes. Add the maple syrup, vanilla and egg. Beat on medium speed until homogenous, about 1 minute more.
  • Whisk together the flour, apple pie spice, baking soda and salt in a medium bowl. Pour half of the dry ingredients into the butter mixture and beat on low speed until combined. Repeat with the remaining dry ingredients until a loose, wet dough comes together. Allow the dough to rest for about 10 minutes in the refrigerator; it will thicken slightly as the flour becomes hydrated.
  • Using a 3-tablespoon size scoop, make large mounds of dough on the prepared baking sheets, leaving at least 3 inches of space between each cookie. Place an apple ring on top of each mound and press gently down to secure. Generously sprinkle each apple slice with sanding sugar.
  • Bake the cookies until deeply golden brown, about 15 minutes, rotating the tray halfway through the baking time. Allow the cookies to cool on the baking sheets for 5 minutes before moving to a wire rack.

Valuable Tips for Making Apple Butter Spice Cookies

If you're looking for a sweet, yet spicy, treat that's perfect for fall, then apple butter spice cookies are just the thing. But before you get started on your cookie baking adventure, here are some valuable tips that will make sure your cookies turn out delicious every time.
Choose High-Quality Ingredients

If you want your apple butter spice cookies to be the best they can be, it's important to start with high-quality ingredients. Make sure you use fresh apples, high-quality butter, and pure vanilla extract. It's also a good idea to use organic ingredients whenever possible.

Use the Right Apples

When it comes to making apple butter spice cookies, the type of apple you use is important. You want to choose apples that are firm and crisp, such as Honeycrisp, Granny Smith, or Braeburn, that will hold up during the baking process. Soft or mushy apples will result in a dough that's difficult to work with, and your cookies won't turn out as they should.

Measure Your Ingredients Properly

Measuring ingredients may seem like a no-brainer, but it's actually quite easy to get things wrong. Use a good set of measuring cups and spoons to ensure that everything is measured accurately. Too much flour or sugar, for example, can completely throw off the taste and texture of your cookies.

Chill Your Dough Before Baking

For the best results, it's important to chill your dough before baking. This not only helps to firm up the dough, making it easier to work with, but it also helps the flavors meld together. You can chill your dough in the fridge for an hour or overnight, depending on your schedule.

Don't Overmix Your Dough

Overmixing your dough can result in tough, dense cookies that aren't very enjoyable to eat. Make sure you mix just until the ingredients come together. Once everything is incorporated, stop mixing to prevent overworking the gluten in the flour.

Use Parchment Paper to Line Your Baking Sheet

Using parchment paper to line your baking sheet gives you a lot of benefits over greasing the sheet. The paper not only prevents sticking and makes clean-up easier, but it also helps your cookies to bake more evenly by preventing hot spots on the sheet.

Bake in Batches

There's nothing worse than having uneven cookies, with some burnt while others are underdone. To prevent this, bake your apple butter spice cookies in batches. This ensures that every cookie gets the same amount of oven time, and you get a consistent, delicious result every time.

Cool Your Cookies Before Storing or Serving

Finally, it's important to cool your cookies completely before you store or serve them. This allows the flavors to develop fully and also helps them to stay fresher for longer. If you try to store them too soon, the cookies can become mushy or lose their texture. After cooling, store them in an airtight container in a cool, dry place.

In Conclusion

By following these valuable tips, you'll be well on your way to making delicious apple butter spice cookies that your family and friends will love. Remember to use high-quality ingredients, measure everything carefully, and don't overmix your dough. Chill before baking, use parchment paper, bake in batches, and cool completely before storing or serving. Enjoy your homemade cookies to the fullest!
