Steps:
- Stir all of the 'spice mix' ingredients together.
- Roll the puff pastry out and cut some rough isosceles triangle shapes from it.
- Take a thick slice of apple, dip it into the melted butter and place on the end of the pastry.
- Scatter a teaspoon of brown sugar over the pastry. Pour some roughly chopped pecans on top of that. Sprinkle 1 teaspoon of spice mix over all of that.
- Starting at the apple segment, roll the pastry until everything is wrapped into a neat little package.
- Bake in the centre of a pre-heated oven for 25-30 minutes - 180°C (350°F) Gas Mark 4.
- Allow to cool for 3-5 minutes before eating because the contents are hot!
- Enjoy!

- Preheat oven to 400 degrees F.
- Line 1 baking sheet with parchment paper and place 1 sheet of puff pastry on it.
- Cut the sheet of pastry into 9 equal squares, each about 3 by 3-inches.
- Brush each square with the egg and place 1 piece of sausage in the middle of each pastry square. Fold the corners of the pastry inward to come together in the middle. Pinch the corners together in the center. Cover with plastic wrap and chill until ready to bake.
- When ready to bake remove the plastic wrap from the trays and brush the pastry with the remaining egg-wash. Bake until the pastry is golden brown, about 10 to 12 minutes.
- Meanwhile in a small mixing bowl mix the mustards together with the honey until well combined. Serve the sausage bites hot from the oven with a bowl of Hot Sweet Mustard on the side.

- 1. Preheat oven to 350 degrees 2. Grease pan with non-stick butter spray 3. Melt butter 4. In a medium size bowl mix graham cracker crumbs, powdered sugar and butter with a spoon (slowly add the butter and evenly distribute Some people have found the crust recipe to work perfect, while some others found the 12 tablespoons of butter was way to much and the butter started to pool - you may want to start by using 1/2 C butter (1 stick vs. 1 1/2 sticks, or 12 T) Melt the butter and add slowly to the crumbs, a little bit at a time, making sure it's not too wet. You can always add more or save the leftover butter for later. You want a soft dough that sticks together slightly when you try to form a ball, not a wet dough. 5. Evenly distribute mixture to the 24 mini muffin cups. Press along the bottom and sides to make a "cup" 6. Bake for 5 minutes and let cool completely 7. Chop the apples into little pieces - I used a mini food processor. Don't puree, just finely chop 8. Mix apples, sugar, brown sugar, flour, cinnamon and nutmeg in a bowl 9. Bake in a baking dish for 15 minutes on 375 degrees, until apples are slightly softened 10. Scoop a teaspoon or so of the apple mix and place on top of the graham cracker crust cups (while still in the muffin pan) 11. - Preheat the air fryer to 400 degrees F (200 degrees C) for 5 minutes.
- Combine flour, sugar, baking powder, apple pie spice, and salt in a large bowl. Whisk together.
- Combine applesauce, sparkling apple cider, melted butter, egg, and vinegar in a small bowl; whisk until well combined. Add wet ingredients to the dry ingredients using a spatula and blend until just combined. - Heat a large skillet over medium-high heat and add the olive oil and the butter. Once the butter melts add the onions. Sauté the onions, stirring occasionally, until they are light golden brown. Add the salt and continue to cook and stir until the onions are well caramelized, about 20 minutes.
- While the onions sauté, core and dice the apples (without peeling them). Combine the diced apples, cinnamon, and sugar in a bowl.
- Add the apples to the skillet with the onions and sauté until the apples just begin to soften. Do not overcook. Remove from heat and set aside.
- Heat the oven to 350°F. Lightly spray two mini muffin tins with oil and set them aside.
- Unroll the 14"x18" package of filo and, with a sharp knife, cut it in half length-wise, leaving you with two stacks of 14"x9" sheets of filo. You will only need one of the stacks, so roll up the other, wrap it tightly with plastic wrap, and return to the refrigerator.
- Place one sheet of filo on a clean surface with the longest side in front of you. Brush with some of the melted butter to coat. Place a second sheet of filo on top of the first and butter it again. After that, repeat with a third sheet and then a fourth (keep the rest of the filo covered while you work so it won't dry out.). Cut the stack of four filo sheets into 3 strips horizontally. Then, cut the fillo strips 4 times vertically, forming 12 squares, each about 3"x3". Lift each square of filo and gently place in a mini muffin tin hole. Repeat with the rest of the squares. Place a heaping spoonful of the onion and apple filling and top with some grated cheese. Repeat with a second stack of four filo sheets and fill the second mini muffin tin.
- Bake for about 15 minutes or until the cheese is melted. Remove from the oven. Let cool slightly and then lift the fillo nests onto a serving platter. Serve at once.

- 1. Cook sausage til done in frying pan, breaking up into small pieces as you go. Remove with slotted spoon to a papertowel-lined plate. Make batter. Batter: In medium bowl, whisk egg til frothy. Whisk in milk, vanilla and oil. In small bowl, whisk well the dry ingredients to mix. Dump the dry ingredients into the wet ingredients and stir all til just moistened but still a little lumpy. Fold in about 2/3 of the cooked sausage. Spray a mini muffin pan with vegetable oil spray. Fill each cup with sausage batter almost all the way to the tops. Sprinkle each with rest of crumbled cooked sausage. Bake in 350 degree oven til golden. Depending on your oven, 13-15 minutes. You'll be able to see the sides turning a light golden brown. Remove from pan with a spoon and serve with butter and warm maple syrup for dunking! Wah lah! :D Easy peasy and SOOOO Good!!! :D
- 2. Variation: If you like an Apple~Sausage flavor, just add 1/2 cup chunky applesauce to the batter and decrease the milk to 3/4 cup.
