Number Of Ingredients 9

4 large sweet potatoes, mostly fat and round
3 slices bacon, chopped
2 honey crisp apples, diced
3 tablespoons freshly chopped sage
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon cinnamon
4 ounces goat cheese

Steps:

  • Preheat oven to 350˚F. Poke holes in sweet potato with a fork, then wrap each tightly in aluminum foil. Bake for 45-60 minutes, or until potatoes and tender to the touch. Unwrap foil and cut a slit down the middle of each sweet potato. Let sit until cool enough to handle. While potatoes are baking, heat a large skillet over medium heat. Add bacon and cook until crispy and fat is rendered, then remove with a slotted spoon and place on a paper towel to drain. Add apples to the skillet with nutmeg and sage, tossing to coat, then cook until soft and somewhat caramelized. Toss bacon back into the skillet and set aside until ready to stuff. Once sweet potatoes are somewhat cool, cut a slit down the middle and gently remove the flesh with a spoon, trying to keep the potato intact. Add the sweet potato flesh to a large bowl, then mash with 3 ounces of goat cheese, cinnamon, nutmeg, salt and pepper. Taste and adjust seasonings if desired, then scoop flash back into the potato skins. At this point you can re-warm the potatoes (if you let them cool completely) in the oven, then top with remaining goat cheese. Spoon the apple bacon mixture evenly on top and serve!

MAPLE SWEET POTATOES WITH APPLE AND BACON

Maple Sweet Potatoes With Apple and Bacon image

This was in an email from Trader Joe's for the holidays. (Best little store ever!) I made it today for Thanksgiving and it's delicious! Putting on here to share and for safe keeping. One note: My sweet potatoes took quite a bit longer to roast and be tender so just check them and cook until they are done. I might have used too small a pan because I had to stir them and keep cooking past the time.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 7

4 sweet potatoes, peeled and diced
1/4 cup olive oil
1/4 teaspoon salt
4 ounces bacon, large diced
1 medium yellow onion, chopped
2 gala apples, diced
1/4 cup maple syrup

Steps:

  • Toss potatoes with oil and salt. Roast at 400' about 20 minutes or until tender.
  • Cook bacon over medium heat in a large pot. Add onions once fat starts to render. Cook until bacon is crisp and onions are translucent.
  • Add apples to pot and cook 2 more minutes (I cooked longer to caramelize the apples a bit).
  • Add potatoes and cook approximately 5 minutes, or until soft (Again, I cooked longer to get a bit of caramelizing on the potatoes).
  • Toss with maple syrup and serve.
  • Note: I roasted the potatoes the night before and just put them in the fridge so I wouldn't tie up the oven for Thanksgiving dinner.

Apple bacon sweet potatoes recipe is an excellent and nutritious meal that is ideal for breakfast, lunch, or dinner. This recipe is not only healthy but also delicious and easy to make. There are several ways of preparing apple bacon sweet potatoes, and each approach creates a unique taste and texture. Below are some valuable tips to make the perfect apple bacon sweet potatoes recipe.

1. Choose the right sweet potatoes

When making this recipe, it is crucial to choose sweet potatoes that are fresh, firm, and uniform in size. This will ensure that the sweet potatoes cook evenly and have the right texture. Avoid sweet potatoes that are soft, spongy, or discolored as they are likely to be spoilt. Also, consider the type of sweet potato you want to use. There are two types of sweet potatoes - orange-fleshed and white-fleshed. Orange-fleshed sweet potatoes are sweeter and have a more distinct flavor, while white-fleshed sweet potatoes are less sweet and have a milder taste.

2. Pick the right apples

The type of apple you choose will have a significant impact on the taste of the apple bacon sweet potatoes recipe. Choose apples that are firm, crisp, and tart for the best results. Tart apples such as Granny Smith and Honeycrisp work well as they add a tangy flavor to the dish, which complements the sweetness of the sweet potatoes. Avoid using apples that are too sweet or too soft as they will not hold their shape during cooking.

3. Choose the right type of bacon

Bacon is an essential ingredient in the apple bacon sweet potatoes recipe as it adds flavor and texture to the dish. When choosing bacon, consider the cut, thickness, and flavor. Thinly sliced bacon cooks faster and is ideal for this recipe as it crisps up quickly and adds a crunchy texture to the dish. Thick-cut bacon takes longer to cook and may not crisp up as much, resulting in a chewy texture. Hickory-smoked bacon is a popular choice as it has a savory, smoky flavor that complements the sweetness of the sweet potatoes and apples.

4. Preparing the sweet potatoes and apples

To make the perfect apple bacon sweet potatoes, it is essential to prepare the sweet potatoes and apples correctly. Peel the sweet potatoes and cut them into cubes or wedges. Ensure that the sweet potatoes are cut into uniform sizes to ensure they cook evenly. Core the apples and cut them into thin slices or wedges. Again, cut them into uniform sizes to ensure they cook evenly.

5. Cooking the sweet potatoes and apples

There are several ways of cooking sweet potatoes and apples for the apple bacon sweet potatoes recipe. You can roast them in the oven, cook them on the stovetop, or grill them. Whichever method you choose, ensure that the sweet potatoes and apples are cooked until tender, but not mushy. Overcooking the sweet potatoes and apples will result in a soggy texture, which is not ideal for this recipe. Adding a pinch of salt and spices such as cinnamon, nutmeg, or ginger to the sweet potatoes and apples enhances their flavor.

6. Cooking the bacon

To cook the bacon for the apple bacon sweet potatoes recipe, heat a skillet over medium heat, and add the bacon. Cook the bacon until it is crispy, about 5-7 minutes, flipping it occasionally. Avoid overcrowding the skillet as this will cause the bacon to steam rather than crisp up. Once the bacon is cooked, remove it from the skillet and place it on paper towels to drain excess oil.

7. Combining the sweet potatoes, apples, and bacon

Once the sweet potatoes, apples, and bacon are cooked, it's time to combine them. Add the sweet potatoes and apples to the skillet with the bacon grease and cook for a few minutes. This allows the sweet potatoes and apples to absorb the bacon flavor. Add the cooked bacon to the skillet and mix everything thoroughly. Serve the apple bacon sweet potatoes hot.

Conclusion

Making the perfect apple bacon sweet potatoes recipe requires attention to detail, from choosing the right ingredients to cooking them correctly. By following the tips outlined above, you can create a delicious and nutritious meal that is sure to impress your family and friends. Remember to experiment with different spices and flavors to create your unique twist on this classic recipe.
