Time 3h20m

Yield 6 servings

Number Of Ingredients 21

1 small head fennel with 2-inches fronds attached, coarsely chopped
1/2 cup coarsely chopped onion
6 cloves garlic, peeled and sliced
2 teaspoons finely chopped fresh thyme
2 teaspoons finely chopped fresh rosemary
2 teaspoons finely chopped fresh sage
2 teaspoons finely chopped fresh oregano
2 teaspoons fennel seeds
2 tablespoons chopped parsley
1 1/2 teaspoons coarsely ground white pepper
1 (4 1/2 pound) pork rib roast, tied
Coarse salt, to taste
Warm Quince and Apple Compote, recipe follows
2 large tart, firm apples, such as McIntosh, Rome or Cortland (about 3/4 pound)
2 large quince (about 3/4 pound)
2 tablespoons unsalted butter
2 tablespoons sugar
1/2 cup apple cider
1 teaspoon fresh lemon juice
1/2 teaspoon ground ginger
Coarse salt, to taste

Steps:

  • In a food processor fitted with the metal blade, combine the fennel and fennel fronds, onion, and garlic, and process to a paste. Add the thyme, rosemary, sage, oregano, fennel seeds, and pepper, and pulse to combine.
  • With a small, sharp knife, make shallow crosshatch cuts in the skin of the pork roast. Season it all over with salt, rubbing it in well. Rub the fennel-garlic paste over the roast to cover it with a layer about 1/4-inch thick. Cover and refrigerate for at least 1 hour and up to 8 hours. Preheat oven to 350 degrees.
  • Remove the roast from the refrigerator and let it sit at room temperature 20 minutes prior to cooking. Transfer the pork to a roasting pan and roast for about 1 hour and 15 minutes, or until the internal temperature in the thickest section of meat is 150 degrees. Cover roast with foil after the crust has browned. Remove the roast from the oven and cover it loosely with foil. Let it rest for 15 to 20 minutes before removing the butcher twine and slicing it into thick chops. Serve with the compote.
  • Peel, core and dice the apples and quince into 1/2-inch dice. In a 10-inch saute pan, heat the butter over low heat. Sprinkle the sugar over the melted butter. Raise the heat to medium and cook, occasionally stirring or swirling the pan, for about 3 minutes, until the sugar melts and caramelizes. Add the quince and apples, and cook, tossing occasionally, for 10 to 12 minutes, or until the fruit is lightly browned and the apples have softened. The quince dice will retain their shape. Add the cider and lemon juice, and cook for about 2 minutes, until reduced but not evaporated. Season with the ginger and salt. Serve warm.

Pork roast is a perfect meal option for a weekend family dinner. The tender and juicy meat is perfect for savory recipes that you can serve with various side dishes. One of the popular recipes these days is apple and garlic pork roast. It is a recipe that combines sweet and savory flavors, which is why many people enjoy it. If you are planning to make this dish, there are valuable tips that you can follow to make the meal even more delicious.

Tip #1: Choose the Right Cut of Pork

When making apple and garlic pork roast, it is essential to choose the right cut of pork. The best cut for this recipe is the pork loin roast. This cut is usually lean, which means that it contains less fat. It is also preferable because it does not take as much time to cook as other cuts like pork shoulder. If you want to enhance the flavor of your pork roast, you can opt for a bone-in pork loin, but boneless pork will also work well.

Tip #2: Pick the Right Apples

Apple is the star ingredient of this recipe, so you need to choose the right kind of apple to use. The most popular apple types for this dish are Honeycrisp, Granny Smith, and Braeburn. These apples are perfect because they do not turn into apple sauce when cooked, which means that they will still have a little bit of texture after cooking. However, if you prefer a sweeter taste, you can use sweeter varieties like Fuji or Gala.

Tip #3: Properly Season the Pork Roast

To make the apple and garlic pork roast recipe delicious, you need to season the pork roast well. You can use your favorite seasoning blend or make your own by mixing salt, pepper, garlic powder, onion powder, and smoked paprika. Rub the seasoning blend all over the pork roast, making sure to cover all sides evenly. This allows the flavors to seep into the meat and infuse it with deliciousness.

Tip #4: Use Fresh Garlic

Garlic is another essential ingredient in this recipe. Using fresh garlic will give the dish a more potent flavor than using garlic powder. To use fresh garlic, peel and chop it into small pieces before adding it to the recipe. Make sure to spread it evenly over the pork roast or mix it in with the apple mixture.

Tip #5: Saute the Apples

In this recipe, the apples are the sweet element that balances out the savory flavors of the dish. To make them even tastier, saute them in a pan before adding them to the recipe. This adds a caramelized flavor to the apples, which enhances their sweetness. Cook the apples in butter or oil until they are soft and slightly browned.

Tip #6: Add Some Liquid

Adding liquid to the recipe is essential to keep the pork roast moist and juicy. You can use chicken broth or beef broth or even apple cider to add more flavor to the dish. To make sure that the pork roast absorbs the liquid, pour it over the apples and allow it to seep into the meat during cooking.

Tip #7: Properly Cook the Pork Roast

Cooking the pork roast to the right temperature is crucial to ensure that it is safe to eat. The optimal temperature for cooked pork is around 145°F. You can use a meat thermometer to check the internal temperature of the pork roast. When the meat reaches the ideal temperature, remove it from the oven and let it rest for about 10 minutes before slicing it. This allows the juices to redistribute and makes the meat even juicier.

Tip #8: Add Extra Sauce

To make the apple and garlic pork roast more flavorful, you can add extra sauce to the dish. You can make a simple sauce by mixing some apple cider with cornstarch, chicken broth, and garlic powder. Cook this mixture in a pan until it thickens, then pour it over the sliced pork roast. This adds an extra layer of flavor to the dish and also makes it more visually appealing.

Conclusion

Apple and garlic pork roast is a flavorful and easy to make dish that is perfect for any dinner occasion. The combination of sweet and savory flavors makes this dish a favorite of many people. By following the valuable tips discussed above, you can make a delicious dish that everyone will love.
