AWESOME SAUSAGE, APPLE AND CRANBERRY STUFFING

Awesome Sausage, Apple and Cranberry Stuffing image

This Thanksgiving stuffing is fantastic! It is very flavorful and fresh-tasting. This recipe will stuff a 10-pound turkey (which serves six) plus extra. I replaced the usual pork sausage with much healthier turkey sausage. Other dried fruits may also be used in place of cranberries.

Provided by The Hearty Boys

Categories     side-dish

Time 55m

Yield 8 to 10 servings

Number Of Ingredients 14

1 pound mild bulk breakfast sausage
4 tablespoons butter
3 cups sliced leeks, white and pale-green parts only, cleaned well (about 2 large leeks)
2 Granny Smith apples, cored and chopped
1 cup chopped celery with leaves
1 tablespoon poultry seasoning
1 cup dried cranberries, rehydrated in boiling water for 15 minutes and drained
1 tablespoon chopped fresh sage leaves
2 teaspoons chopped fresh rosemary
6 cups boxed bread cubes (croutons)
1/3 cup chopped fresh parsley leaves
2 to 3 cups chicken stock
1 tablespoon salt
2 teaspoons ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Saute the sausage in a large heavy skillet over medium-high heat until cooked through, crumbling coarsely with the back of a spoon, about 10 minutes. Using a slotted spoon, transfer the sausage and drippings to a large bowl. Melt the butter in the same skillet over medium-high heat. Add the leeks, apples, celery and poultry seasoning to the skillet and saute until the leeks are soft, about 8 minutes. Mix in the drained cranberries, sage and rosemary. Add the mixture to the sausage, then mix in the croutons and parsley. Next add the chicken stock a little at a time until the stuffing is very moist. Be sure not to overdo it; it shouldn't be mushy. Season with salt and pepper. Place in a casserole dish. (The stuffing can be made to this point 2 days before Thanksgiving, refrigerated.)
  • Bake in a 14-inch oval or 9 by 13-inch rectangular casserole dish and place, uncovered, in the oven for 20 to 30 minutes, until the top is crispy and the center piping hot. Remove and serve immediately.

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 25

2 pounds new potatoes or baby Yukon gold potatoes
1/2 cup sour cream
2 tablespoons butter
3 strips par cooked bacon, crisped in microwave and chopped (recommended: Ready Crisp)
Salt and pepper
1 cup store bought apple sauce
1 (14 ounce) can whole berry cranberry sauce
2 slices whole grain bread
Butter
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 pound maple sausage, bulk or removed from large link casing
1 medium onion, chopped
2 celery ribs, chopped
2 teaspoons poultry seasoning
Salt and pepper
1 cup chicken stock or turkey broth
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken stock or turkey broth
1 teaspoon poultry seasoning
Salt
A few grinds black pepper
1 1/2 to 2 pounds turkey breast meat: roasted turkey breast or thick-cut deli turkey
4 slices whole grain bread
2 tablespoons chopped flat-leaf parsley or chopped chives, for garnish

Steps:

  • Preheat a medium skillet over medium high heat.
  • Place potatoes in a medium pot. Cut larger potatoes in half. Leave smaller baby potatoes whole. Cover potatoes with water and top with a lid. Place over high heat. When the water boils, salt water and cook potatoes with the lid off pot for 10 to 11 minutes, until tender.
  • Place a second low pot on the stove top over medium-high heat. Add apple sauce and canned cranberry sauce. Stir to combine and gently heat through, about 10 minutes.
  • Toast 2 slices whole grain bread and butter heavily, 1/2 tablespoon per slice. Chop into small cubes and reserve.
  • Add extra-virgin olive oil and sausage meat to hot skillet. Brown and crumble the sausage with a wooden spoon or heat safe spatula. Add onions and celery to the skillet then season with poultry seasoning and salt and pepper and cook 5 minutes. Add bread to the skillet and stir to combine. Dampen the stuffing with chicken stock and turn to combine. Turn off heat and cover pan loosely with foil to hold heat.
  • Preheat a second skillet over medium heat to prepare turkey and gravy.
  • Drain cooked potatoes and return to hot pot. Smash with sour cream, butter and crisped, chopped bacon. Season the smashed potatoes with salt and pepper. If they are too thick, thin them out with milk or a splash of broth.
  • Add 2 tablespoons butter to preheated skillet and melt it. Whisk in flour and cook 1 minute. Whisk in 2 cups stock or broth. Add the poultry seasoning, a pinch of salt and a few grinds of black pepper to the gravy. Allow it to thicken slightly.
  • Cut roasted turkey meat away from the breast bones of rotisserie turkey breast. If you are using deli turkey, remove from packaging and separate slices. Set turkey into gravy.
  • Place a bread slice on dinner plate. Use a large ice cream scoop to place a mound of stuffing on the bread. Place turkey on top of stuffing. Serve smashed potatoes and cranberries on the side. Spoon the extra gravy over potatoes and turkey sandwiches. Sprinkle the plates with chopped parsley or chives and serve.

SAUSAGE, DRIED CRANBERRY AND APPLE STUFFING

Sausage, Dried Cranberry and Apple Stuffing image

Recipe from Food TV Dan Smith and Steve McDonagh. I have tried many recipes and this one is my all time favorite. Fresh sage is important. My mother who is a very basic cook said this was so good it was addictive. I used onions instead of leeks as the leeks were super expensive. This is a fresh tasting stuffing. I used mild italian sausage. I am posting in time for Thanksgiving and hope you enjoy it as much as I do. This can be made ahead by 2 days if desired. Please note you may not want to use the entire tablespoon of salt.

DRIED CRANBERRY AND APPLE TURKEY STUFFING

Dried Cranberry and Apple Turkey Stuffing image

A recipe of my girlfriends, made at her house for a Christmas dinner a few years back...an excellent recipe for a stuffing, that is prepared to cook inside the turkey. Note cooking time depends on how long the turkey is cooked, I imagine that you could bake this outside the turkey also too. This recipe can be doubled if desired.

Number Of Ingredients 14

8 tablespoons (1/2 cup or 1 stick) butter, unsalted
2 medium onions, finely diced
3 cups chopped celery, (about 6 large stalks)
6 cups coarsely chopped leeks, (about 12)
4 apples, peeled, cored and chopped
1 pound breakfast sausage or Italian sausage, casings removed
6 teaspoons poultry seasoning
2 teaspoons chopped fresh rosemary leaves, (about 4 sprigs)
2 teaspoons chopped fresh sage leaves, (about 6 leaves)
2 teaspoons chopped fresh parsley leaves, (about 4 to 6 sprigs)
2 cups dried cranberries
1 box stuffing mix (not cornbread) (recommended: Pepperidge Farm)
2 cups (1 pint) vegetable stock
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F. Melt the butter in a large skillet and saute the onions, celery, leeks, apples, and sausage, breaking up the sausage as you cook. After about 10 minutes, add the poultry seasoning, fresh herbs and dried cranberries. Add the dried stuffing mix and moisten with the vegetable stock. Season stuffing mix with salt and pepper, to taste. (I like the stuffing a little wetter - if you don't, just add less stock) Place into a buttered casserole dish and bake for 45 minutes.

Ingredients

The ingredients for apple and cranberry stuffing vary depending on the recipe. Some essential components might be:
Bread
The base of the stuffing is usually bread, which can be cubed, toasted or stale. You can use any type of bread you have on hand or make some homemade bread cubes. Popular bread choices for stuffing are sourdough, white bread or cornbread.
Apples
The main component of the stuffing is the apple, which adds a fresh and fruity taste to the dish. You can use any variety of apple, but Granny Smith, Honeycrisp, or Braeburn are some good options. It is best to use firm apples for stuffing, so they don't turn into mush when cooked.
Cranberries
Cranberries are a classic ingredient in stuffing recipes that add some tartness and texture to the dish. You can use fresh cranberries or dried ones depending on the recipe. If you can't find fresh cranberries, you can substitute them for pomegranate arils or raisins.
Vegetables
You can also add vegetables to your stuffing recipe for some added nutrition and flavor. Some good choices are onions, celery, carrots, and mushrooms. These vegetables can be sauteed beforehand to enhance their flavor and softness.
Herbs and spices
To add some depth to the dish, you can use a blend of herbs and spices such as sage, thyme, rosemary, parsley, black pepper, and salt. These seasonings can be mixed in with the bread and other ingredients for a well-balanced taste.

How to make apple and cranberry stuffing

Making apple and cranberry stuffing can be quite easy and requires minimal preparation. Here are the basic steps:
Step 1: Bread preparation
Begin by cutting your bread into small cubes and drying them out on a baking sheet in the oven or toaster. You can also use stale bread that's already dried out.
Step 2: Apple and cranberry preparation

Step 3: Vegetable preparation
If you are using vegetables in your recipe, sauté them in a pan with some oil or butter until they are soft and tender.
Step 4: Mix ingredients together
Combine your bread cubes, apples, cranberries, and vegetables in a large mixing bowl. Use your hands to mix all the ingredients together until they are well combined.
Step 5: Add seasoning
Add your herbs and spices to the mixing bowl and continue to mix until everything is evenly distributed.

Whether you are making this dish for Thanksgiving, Christmas, or any other special occasion, it's a recipe that will become a family favorite.
When it comes to holiday dinners, stuffing is always an important part of the meal. There are so many variations of stuffing, but one of the most popular is apple and cranberry stuffing. It is a perfect blend of sweet and savory flavors that everyone loves. Making a delicious apple and cranberry stuffing can seem like a big task, but with a few valuable tips, it can be easy and stress-free. In this article, we will discuss some of the tips that you can use to make a mouth-watering apple and cranberry stuffing.

Tip #1: Choose the Right Bread

The bread is one of the most important components of the stuffing, and choosing the right kind of bread is essential. When making apple and cranberry stuffing, it is best to use bread that has a slightly firm texture, such as sourdough or French bread. This type of bread will hold up well when combined with the other ingredients and won't turn to mush during the cooking process. It's important to let the bread dry out overnight or in the oven before using it for the stuffing.

Tip #2: Use Fresh Herbs

Fresh herbs always make a big difference in the taste of any dish, and stuffing is no exception. When making apple and cranberry stuffing, using fresh herbs will enhance the flavor profile of the dish. Some good herbs to add are thyme, sage, and rosemary. You can also add a little bit of chopped parsley for extra flavor and color. Make sure to chop the herbs finely to distribute the flavor evenly throughout the stuffing.

Tip #3: Use Real Butter

When sautéing the vegetables and bread, it's important to use real butter and not margarine or oil. Butter gives the stuffing a rich and luscious flavor that cannot be replicated with any other ingredient. It's also important to use unsalted butter so that you can control the amount of salt in the recipe.

Tip #4: Add Some Crunch

Texture is an important element of any dish, and stuffing is no exception. To add some crunch to the apple and cranberry stuffing, you can add some chopped nuts such as walnuts, pecans, or almonds. You can also add some celery for extra texture and flavor. Just make sure to chop everything into small pieces so that they blend well with the other ingredients.

Tip #5: Don't Overdo the Cranberries

Cranberries are an essential ingredient in apple and cranberry stuffing, but it's important not to overdo it. Too many cranberries can overpower the other flavors in the stuffing and make it too tart. As a general rule, use about one cup of cranberries for every eight cups of bread. You can also balance out the tartness with a little bit of brown sugar.

Tip #6: Add Some Heat

If you like a little bit of heat in your stuffing, you can add some red pepper flakes or cayenne pepper. Just be careful not to add too much as it can overpower the other flavors in the dish. Start with a small amount and taste as you go.

Tip #7: Use Chicken or Vegetable Broth

When making apple and cranberry stuffing, it's important to use a good-quality chicken or vegetable broth. The broth adds flavor and moisture to the stuffing and helps to keep it from drying out during the cooking process. You can also use homemade broth for extra flavor.

Tip #8: Don't Stuff the Turkey

It may be traditional to stuff the turkey with stuffing, but it's not always the safest option. The stuffing inside the turkey can become contaminated with bacteria, which can lead to food poisoning. It's better to cook the stuffing separately in a baking dish. You can still keep the turkey and stuffing flavors together by placing some of the turkey drippings into the stuffing.

Tip #9: Cook the Stuffing Until Golden Brown

When baking the apple and cranberry stuffing, it's important to cook it until it's golden brown on top. This will ensure that the stuffing is fully cooked and has a nice crispy top layer. You can cover the stuffing with foil for the first half of the cooking time to prevent it from over-browning.

Tip #10: Let the Stuffing Rest

After the stuffing is done baking, it's important to let it rest for a few minutes before serving. This will allow the flavors to fully develop and the stuffing to hold together. If you cut into the stuffing too soon, it may fall apart and lose some of its flavor.

Conclusion

Making apple and cranberry stuffing can be a daunting task, but with these valuable tips, it can be easy and stress-free. Remember to choose the right bread, use fresh herbs, use real butter, add some crunch, don't overdo the cranberries, add some heat, use chicken or vegetable broth, don't stuff the turkey, cook the stuffing until golden brown, and let the stuffing rest. With these tips, you'll be sure to make a mouth-watering apple and cranberry stuffing that everyone will love.
