Time 2h20m

Yield Makes one 9-inch pie

Number Of Ingredients 14

Pate Brisee for Pink-Applesauce Tart
Unbleached all-purpose flour, for dusting
3/4 cup unbleached all-purpose flour
3/4 cup pecans, chopped
1/3 cup packed light-brown sugar
1/2 teaspoon kosher salt
6 tablespoons cold unsalted butter, cut into cubes
2 3/4 pounds Granny Smith apples (5 to 6), peeled, cored, and cut into 1/2-inch-thick wedges
3/4 cup pecans, chopped
1/4 cup unbleached all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon kosher salt
2 tablespoons fresh lemon juice
1 teaspoon pure vanilla extract

Steps:

  • Roll out dough to a 12-inch round on a lightly floured work surface. Transfer to a 9-inch pie plate. Trim edges, leaving a 1/2-inch overhang. Fold edges of dough under itself until flush with edge of dish. Crimp edges with fingers, the tines of a fork, or a spoon. Refrigerate until firm, about 30 minutes. Meanwhile, make crumb topping.
  • Crumb Topping: Combine flour, pecans, brown sugar, and salt in a medium bowl. Massage butter into flour mixture with your fingers until mixture clumps together and no dry flour remains. Press into bottom of bowl and refrigerate until firm, about 20 minutes.
  • Filling: In a large bowl, toss apples and pecans with flour, sugar, cinnamon, and salt until evenly coated. Stir together lemon juice and vanilla, drizzle over apple mixture, and toss to evenly coat.
  • Preheat oven to 375 degrees with racks in middle and lower third positions. Place a parchment-lined rimmed baking sheet on lower rack. Pour apple mixture into crust. Break up topping into large pieces and sprinkle evenly over filling. Bake on center rack until bubbly and crust is golden brown, 1 1/4 to 1 1/2 hours. (If crust and crumb topping brown too quickly, tent with foil.) Let cool completely on a wire rack before slicing and serving.

Number Of Ingredients 8

2 tablespoons unsalted butter
1 box chocolate cake mix, plus additional ingredients for making the cake
1 store-bought 8-inch apple pie
8 ounces bittersweet chocolate chips
1 cup heavy cream
1 tablespoon dark rum
Kosher salt
1 cup chopped pecans

Steps:

  • For the chocolate apple pie cake: Preheat the oven to 350 degrees F.
  • Use the butter to grease the bottom and sides of a 9-inch cake pan or springform pan. Cut out a circle of parchment paper to fit the pan and place it on the bottom.
  • In a large bowl, prepare the cake batter as instructed on the box. Pour 1 cup of the batter into the cake pan and spread it out. Add the apple pie on top of the cake batter, then pour the rest of the cake batter over the top and around the sides. Spread it to make sure there are no air pockets.
  • Bake the cake until a toothpick inserted in the center and around the edges comes out clean, 50 to 55 minutes. Remove to a rack to cool slightly. When cool enough to handle, turn the cake out onto the rack, peel off the parchment paper and allow to cool completely.
  • For the ganache: Pour the chocolate chips into a medium bowl. In a small pot on medium heat, add the heavy cream, rum and a pinch of salt and whisk until warm. Pour over the bowl of chips and allow to sit and soak in for 2 minutes. Whisk to melt the chocolate completely.
  • Place the cake on a serving platter, pour the ganache in the center and spread gently outward over the edges. Sprinkle with the pecans and serve.

BETH HOWARD'S APPLE PIE

Beth Howard's Apple Pie image

When forced to choose my favorite pie, I go with classic apple. I love the combination of a buttery crust, apples, sugar and cinnamon.-Beth Howard, Eldon, Iowa

Provided by Taste of Home

Categories     Desserts

Time 1h30m

Yield 8 servings.

Number Of Ingredients 14

BASIC PIE CRUST:
2-1/2 cups flour (white all-purpose)
Dash of salt
1/2 cup butter, chilled
1/2 cup shortening
Ice water (fill 1 cup but use only enough to moisten dough)
APPLE FILLING:
7 to 8 large Granny Smith apples, peeled (depending on size of apple & size of pie dish, have about 3 lbs. available)
3/4 cup sugar
4 tablespoons flour
Dash of salt
1 to 2 teaspoons cinnamon (depending on how much you like)
1 tablespoon butter (put dollop on top before covering with top crust)
1 beaten egg (you won't use all of it, just enough to brush on pie before baking)

Steps:

  • In a deep bowl, work the butter and shortening into the flour and salt with your hands until you see marble-sized lumps form. Think mixed nuts, but no bigger than almonds. Add ice water a little at a time, sort of "fluffing" the flour. Keep your movements light, as if you are tossing dressing into a salad with your hands. When the dough feels moistened enough, do a "squeeze test" and when it holds together you're done. Do not overwork the dough! It takes very little time and you'll be tempted to keep touching it, but don't! Now divide the dough in half, form each half into a disk shape and roll flat and thin to fit your pie dish. Sprinkle flour under and on top of your dough, and keep rolling surface and pin free from gunk to keep dough from sticking. Trim excess crust to about 1 inch from the dish edge with a scissors., Slice half of the apples directly into the pie, arranging to remove extra space between slices. Cover with half of your other ingredients (sugar, flour, cinnamon, salt), then slice the remaining apples and cover with second half of ingredients. Add dollop of butter on top, cover with top crust, seal and crimp edges, then brush with beaten egg (this gives the pie a nice golden brown shine; be careful not to let egg pool in crevices.) Use a knife to poke vent holes in the top (get creative here with a pattern), then bake at 425 degrees for 15-20 minutes. Turn oven down to 375 degrees and bake for another 30-40 minutes until juice bubbles. Keep an eye on it as it bakes. If it gets too brown, turn down the temperature. To be sure it's done, poke with a knife to make sure apples have softened. Do not overbake or apples will turn mushy.

History of Apple and Chocolate Pie Recipes

Pie has been a staple dessert in American culture since the colonial era. The first apple pie recipe appeared in 1796, in Amelia Simmons’ cookbook, “American Cookery.” The recipe called for a tart apple pie filling, and it has since developed into a classic dessert that is enjoyed by many. Chocolate, on the other hand, was not used in pies until much later. The first chocolate pie recipe was created in the late 1800s by a Boston-based chocolatier named Walter Baker. While chocolate pies have been around for over a century, they were not combined with apples until the 1960s. Today, apple and chocolate pie recipes are popular all over the world and are commonly made with different variations of the ingredients and the pie crust.

Types of Apples to Use in Apple and Chocolate Pie Recipes

When it comes to making apple and chocolate pies, the type of apple you use can make a significant difference in the flavor and texture of your pie. Tart apples like Granny Smith are a popular choice for pies because their sourness balances the sweetness of the sugar and chocolate. Other apples that work well in apple and chocolate pies include Braeburn, Honeycrisp, and Pink Lady.

Types of Chocolate to Use in Apple and Chocolate Pie Recipes

The type of chocolate used in apple and chocolate pie recipes can vary widely depending on the preference of the baker. Dark chocolate is a common choice for apple and chocolate pie recipes as it has a deeper, richer flavor. Milk chocolate is sweeter than dark chocolate and has a milder flavor that complements the sweetness of the apples. White chocolate is also an option, but its flavor is milder than both milk and dark chocolate.

The type of crust you use for your apple and chocolate pie is entirely up to you. Some people prefer to make their pie crust from scratch, while others opt for a store-bought pie crust to save time. Tips to Making Apple and Chocolate Pie

1. Choosing the Right Apples
When it comes to making apple and chocolate pie, it's essential to use the right kind of apples. Firm and crisp apples are the best to use as they hold their shape and texture in the pie. Granny Smith, Honeycrisp, and Braeburn apples are the best options. Baked apples have a distinct flavor, so make sure to use apples that complement the chocolatey rich taste of the pie.
2. Preparing the Apples
Once you've chosen the apples, it's essential to prepare them correctly. Peel, core, and cut the apples into thin slices. Be sure to remove any seeds or stems, as they can make the pie taste bitter. You may need to sprinkle some lemon juice over the apples to prevent discoloration.
3. Choosing the Right Chocolate
Choosing the right chocolate is also essential to the recipe. A dark chocolate with a minimum of 70% cocoa solids is perfect for this recipe. Dark chocolate complements the sweetness of the apples while adding a rich flavor to the pie. Be sure to choose high-quality chocolate to guarantee the best taste.
4. Choosing the Right Pie Crust
The pie crust is another critical component of apple and chocolate pie. Whether you choose to make your own or buy a pre-made pie crust, it's essential to choose a crust that complements the flavors of the pie. A flaky, buttery crust is perfect for this recipe as it adds a delicious texture to the dessert.
5. Incorporating the Chocolate
When it comes to adding the chocolate to the pie, there are different techniques that you can use. Some people prefer to add the chocolate in small pieces on top of the filling, while others melt the chocolate and mix it in with the filling. It's up to you how you want to add the chocolate, but make sure it's evenly distributed throughout the pie.
6. Adding Flavors
You can add additional flavors to your apple and chocolate pie to enhance the overall taste. Spices such as cinnamon or nutmeg can add a warm and cozy flavor to the pie. Adding a touch of vanilla extract or almond extract can also elevate the dessert's taste.
7. Topping the Pie
The topping is another important factor in making an apple and chocolate pie. Whipped cream, vanilla ice cream, or caramel sauce are all excellent choices to top the pie. If you want to keep it simple, a dusting of powdered sugar on top will do the trick.
8. Baking the Pie
When baking the apple and chocolate pie, make sure to follow the recipe for time and temperature. Overbaking the pie can make the apples dry and tough, while undercooking the pie can result in a soggy crust. The pie should be golden brown and crispy on the outside and soft and tender on the inside.

Conclusion

In conclusion, an apple and chocolate pie is a delicious and unique dessert that is sure to please any crowd. Following the tips above will help you make the best apple and chocolate pie possible.
