We especially love this salad drizzled with a nice creamy raspberry vinaigrette (such as Ghirard's brand dressing), but a Balsamic Fig dressing is also very nice. Enjoy! SCHNITZEL WITH APPLE, CELERY, ONION SALAD AND BLUE CHEESE

Schnitzel with Apple, Celery, Onion Salad and Blue Cheese image

This meal is perfect for the first cool nights of late summer.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 19

1 1/2 pounds boneless pork loin chops (4 or 5) or pork tenderloin, thinly sliced on bias OR use boneless, skinless chicken breast cutlets or thinly sliced beef top round or salted and drained eggplant steaks for vegetarian version
Salt and pepper
1 1/2 cups flour
4 eggs
2 tablespoons Dijon mustard
1 cup plain breadcrumbs
1 cup panko breadcrumbs
2 lemons, 1 zested and juiced and 1 cut into wedges
1 tablespoon dry/ground sage
1 tablespoon dry/ground thyme
1 tablespoon dry/ground parsley
About 1/2 teaspoon freshly grated nutmeg
Safflower frying oil or other innocuous cooking oil (about 1 cup)
6 to 7 cups coarsely chopped greens, such as gem, romaine and escarole combined
2 ribs celery with leafy tops, thinly sliced on bias
1 apple (Honeycrisp), quartered and thinly sliced
1/2 red or Vidalia onion, very thinly sliced
8 ounces smoked blue cheese, crumbled, or crumbled aged goat cheese for eggplant preparation
EVOO, about 3 tablespoons

Steps:

  • Heat oven to 275 degrees F. Place a wire rack over a foil-lined baking sheet.
  • Working on a gel board and using a short round mallet, pound the pork in slow even strokes into thin cutlets, about 1/8 inch thick. If the chops are 3/4 to 1 inch, butterfly them open horizontally, almost halving the chops, then pound evenly with mallet. Season meat with salt and pepper
  • In shallow dishes, arrange a breading station leading to the stove: flour, eggs whisked with Dijon mustard, breadcrumbs and panko seasoned with lemon zest, dry herbs and nutmeg.
  • Heat a large frying pan over medium to medium-high heat with about 1/8 inch oil.
  • Place the lettuces in a bowl. Add the celery, apple and onion with most of the blue cheese.
  • Coat 2 cutlets at a time: flour, shake off excess, eggs, breadcrumbs. Brown the cutlets 2 to 3 minutes on the first side, 2 minutes on second; transfer to the baking sheet and place in the oven. Repeat.
  • Dress the salad when ready to serve cutlets with lemon juice, EVOO, salt and pepper. Platter the schnitzel, top with salad and remaining blue cheese and serve with lemon wedges.

Apple and blue cheese salad is a classic dish that combines fresh greens, tangy apples, and savory blue cheese. This salad is perfect as an appetizer or light meal, and it pairs well with a variety of other dishes.

Ingredients

The ingredients for apple and blue cheese salad can vary slightly depending on personal preference, but the following are the most common ingredients used:

  • Fresh mixed greens (such as spinach, arugula, and kale)
  • Sliced apples (such as Honeycrisp or Granny Smith)
  • Crumbled blue cheese
  • Sliced red onion
  • Candied walnuts or pecans
  • Balsamic vinaigrette dressing

Preparation

The preparation of apple and blue cheese salad is fairly simple and straightforward. The following steps outline how to make this delicious dish:

Step 1: Wash and dry the greens

Begin by washing and drying the mixed greens. Use a salad spinner or paper towels to remove excess water from the greens. Cut any large leaves into bite-sized pieces.

Step 2: Slice the apples

Next, slice the apples into thin wedges. Remove the core and seeds from the apples before slicing.

Step 3: Crumble the blue cheese

Crumbled blue cheese can be purchased pre-packaged, or it can be crumbled at home. Use a fork to crumble the blue cheese into small pieces.

Step 4: Slice the red onion

Thinly slice the red onion into rings or half-moons.

Step 5: Candied nuts (optional)

If you want to add candied nuts to your salad, you can purchase them pre-made or make them at home. To make candied nuts, melt 1/4 cup butter and 1/4 cup brown sugar in a saucepan over medium heat. Add 1 cup of chopped nuts (such as walnuts or pecans) to the pan and stir until evenly coated. Spread the nuts onto a baking sheet and bake at 350°F for 10-15 minutes, stirring occasionally, until golden brown.

Step 6: Dress the salad

Use a balsamic vinaigrette dressing to dress the salad. Drizzle the dressing over the greens, apples, blue cheese, and red onion. Toss the salad gently to coat evenly with the dressing.

Variations

Apple and blue cheese salad can be easily customized by adding or removing ingredients as desired. Some common variations of this dish include:

  • Adding sliced pears instead of or in addition to the apples
  • Using crumbled feta cheese instead of blue cheese
  • Adding grilled chicken or shrimp to make it a more substantial meal
  • Adding dried cranberries or cherries for a pop of sweetness
  • Using a different type of nut, such as almonds or cashews, in place of the walnuts or pecans

Conclusion

Apple and blue cheese salad is a delicious and healthy dish that is perfect for a light lunch or dinner. The combination of sweet apples, tangy blue cheese, and savory greens is sure to please even the pickiest eaters. With its simple preparation and endless variations, this salad is a must-try for anyone looking to add some variety and flavor to their meals.

Apple and Blue Cheese Salad: A Guide to Creating the Perfect Combination of Flavors When it comes to salads, there are endless possibilities. However, if you want to make a salad that is both satisfying and flavorful, you should consider making a salad with apples and blue cheese. This combination of ingredients provides a perfect balance of sweet, tart, salty, and creamy flavors that can make any salad irresistible. While creating an apple and blue cheese salad is relatively easy, there are a few tips you should keep in mind to ensure that your salad is both delicious and visually appealing. In this guide, we will provide you with valuable tips for making apple and blue cheese salad recipes that will leave your taste buds craving more. 1. Choose the Right Apples One of the most critical components of a good apple and blue cheese salad is the choice of apples. Choosing the right type of apple can make or break the salad's flavor and texture. When selecting apples for your salad, consider the texture, sweetness, and tartness. Honeycrisp, Gala, and Pink Lady apples are excellent choices since they are sweet and have a crispy texture. Granny Smith apples, on the other hand, are tart and crisp, making them perfect for adding an extra crunch to your salad. 2. Consider Adding Nuts Nuts add an extra crunch to your salad and a nutty flavor that complements the sweetness of the apples and the creamy flavor of the blue cheese. Almonds, pecans, and walnuts are excellent choices as they all have distinct flavors and textures that can enhance your salad's taste and appeal. Toasting the nuts will add an extra layer of flavor to your salad. Simply spread the nuts in a single layer on a baking sheet and bake them for 5-10 minutes at 350°F, or until they are lightly browned and fragrant. 3. Add a Sweetener If you find the blue cheese too strong or the apples too tart, adding a sweetener is an excellent solution. Honey, maple syrup, or agave nectar can add a subtle sweetness that balances out the salad's flavors. You can also add dried fruit such as cranberries, raisins, or apricots for an extra burst of sweetness. These dried fruits complement the apples and blue cheese well, and they can add a splash of color to your salad. 4. Experiment with Different Greens The foundation of every salad is the greens, and choosing the right type of greens can make a significant difference in your salad. While a simple lettuce mix can work, consider experimenting with different types of greens. Arugula, spinach, and kale are versatile greens that can add a unique flavor and texture to your salad. Arugula has a peppery flavor that complements the sweetness of the apples and the blue cheese's creaminess. Spinach has a mild flavor and a tender texture that can blend well with the other ingredients. Lastly, kale has a robust and hearty flavor that can provide a perfect balance to the sweet and tangy flavors of the salad. 5. Make Your Own Dressing The dressing is another essential component of your apple and blue cheese salad. While store-bought dressings are convenient, making your own dressing can provide a depth of flavor that can take your salad to the next level. A simple vinaigrette made with olive oil, apple cider vinegar, honey, and Dijon mustard is an excellent choice as it complements the flavors of the ingredients. Alternatively, you can use a creamy dressing like ranch or blue cheese dressing for an extra creamy kick. 6. Add Crunchy Toppings Adding some crunchy toppings to your salad can provide an excellent contrast to the soft and creamy ingredients. Croutons, bacon bits, or fried onions are all excellent choices as they add an extra layer of texture and flavor to your salad. Crunchy toppings like croutons can also absorb the dressing well, making them flavorful and satisfying to eat. However, be careful not to add too many crunchy toppings, as they can overpower the other ingredients. 7. Arrange Your Ingredients Visual appeal is just as crucial as taste when it comes to food. Arranging your ingredients properly can make your salad visually attractive and inviting. Start with the greens and add your toppings on top of them. Arrange the apples, nuts, and other ingredients in a way that creates a balanced and visually appealing dish. Drizzle the dressing on top or serve it on the side to ensure that the salad is evenly coated. Conclusion In conclusion, making apple and blue cheese salad recipes is a simple and delicious way to enjoy a healthy and flavorful meal. Choosing the right apples, adding nuts, sweeteners, and crunchy toppings, experimenting with different greens, making your own dressing, and arranging your ingredients are all valuable tips to keep in mind when creating your salad. With these tips, you can create a perfect combination of flavors and textures that can make your apple and blue cheese salad both satisfying and visually appealing.
