ANNIVERSARY CHICKEN

Anniversary Chicken image

Found this recipe on allrecipies.com (courtesy of Vicki Frew). I cooked mine for 15 minutes before I added cheese, green onions and bacon bits. I was afraid the cheese would be cooked to much if it was on the whole time. Miss Annie is right--after the 1st time I made it I started skipping the browning too and just put raw skinless, boneless chicken breasts in pan and poured the other ingredients over top. Cooks up just fine either way.

Time 1h5m

Yield 6 serving(s)

Number Of Ingredients 8

2 tablespoons vegetable oil
6 boneless skinless chicken breast halves
1/2 cup teriyaki sauce (I recommend low-sodium, it seems to be too salty with regular teriyaki)
1/2 cup ranch salad dressing
1 cup shredded cheddar cheese
3 green onions, chopped
1 1/2 ounces bacon bits
1 tablespoon chopped fresh parsley (for garnish)

Steps:

  • Preheat oven to 350°F.
  • In a large skillet, heat oil over medium-high heat.
  • Add chicken breasts and sauté 4 to 5 minutes each side until lightly browned.
  • Place browned chicken breasts in a 9 x 13-inch baking dish.
  • Brush with teriyaki sauce, then spoon on salad dressing.
  • Sprinkle with cheese, green onions and bacon bits.
  • Bake for 25 to 35 minutes, or until chicken is no longer pink and juices run clear.
  • Garnish with chopped parsley and serve.

ENGAGEMENT ROAST CHICKEN

Categories     main-dish

Time 1h40m

Yield 3 servings

Number Of Ingredients 9

1 (4 to 5 pound) roasting chicken
Kosher salt and freshly ground black pepper
2 lemons
1 whole head garlic, cut in 1/2 crosswise
Good olive oil
2 Spanish onions, peeled and thickly sliced
1/2 cup dry white wine
1/2 cup chicken stock, preferably homemade
1 tablespoon all-purpose flour

Steps:

  • Preheat the oven to 425 degrees F.
  • Remove and discard the chicken giblets. Pat the outside dry. Liberally salt and pepper the inside of the chicken. Cut the lemons in quarters, place 2 quarters in the chicken along with the garlic and reserve the rest of the lemons. Brush the outside of the chicken with olive oil and sprinkle the chicken liberally with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the chicken in a small (11 by 14-inch) roasting pan. (If the pan is too large, the onions will burn.) Place the reserved lemons and the sliced onions in a large bowl and toss with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of pepper. Pour the mixture around the chicken in the pan.
  • Roast the chicken for about 1 hour and 15 minutes, until the juices run clear when you cut between a leg and a thigh. Remove the chicken to a platter, cover with aluminum foil, and allow to rest for 10 minutes while you prepare the sauce, leaving the lemons and onions in the pan.
  • Place the pan on top of the stove and turn the heat to medium-high. Add the wine and stir with a wooden spoon to scrape up the brown bits. Add the stock and sprinkle on the flour, stirring constantly for a minute, until the sauce thickens. Add any juices that collect under the chicken. Carve the chicken onto a platter and serve with the lemons, onions, and warm sauce.

ENGAGEMENT ROAST CHICKEN (BAREFOOT CONTESSA)

Engagement Roast Chicken (Barefoot Contessa) image

After making this, I want to marry myself, it tastes SO good! LOL This is quite simple, juicy and VERY flavorful, with a crispy skin. I want the onions to carmelize, so I put the 1/2 cup chicken stock and the 1/2 cup white wine into the roasting pan in the beginning. (add more if needed) Sometimes I add fresh thyme or other herbs into the lemon-onion mixture. If you don't have twine, the chicken will still be fine, but tuck the wings under. I have added either small Red or Yukon potatoes to the pan with great results, the potatoes soak up the drippings and are very yummy. This is adapted from Food Network, Ina ROCKS!

It is easy to prepare, and the flavors are perfect to tantalize your taste buds. Here are some valuable tips to help you make a fantastic anniversary chicken dish.

Tips to Make Anniversary Chicken:

1. Choose the Right Cut of Chicken:
When making anniversary chicken, it is essential to choose the right cut of chicken. Chicken breasts are a popular choice, but thighs, drumsticks, or even a whole chicken can also work. If you are cooking for two, go for a smaller cut. Remember to remove any visible fat or skin for a healthier option.
2. Marinate the Chicken:
Marinating the chicken is an important step to infuse the flavors and tenderize the meat. Common marinades for chicken include lemon and garlic, ginger and sesame, or honey and mustard. Allow the chicken to marinate overnight or for at least two hours before cooking.
3. Season the Chicken:
Season the chicken with salt and pepper before cooking. You can also add other herbs and spices to enhance the flavor. For example, paprika, thyme, rosemary, or cumin can be great additions to the chicken. Remember to use a little amount of each spice, so as not to overpower the dish.
4. Cook the Chicken:
There are different ways to cook chicken, such as grilling, baking, or frying. If you want to grill the chicken, preheat the grill for about 15 minutes and brush the chicken with oil to prevent sticking. Cook for about 8-10 minutes on each side until cooked through. If you prefer to bake the chicken, preheat the oven to 375°F and bake for about 25-30 minutes until golden brown. For frying, heat up the oil in a pan and cook the chicken for about 5-6 minutes on each side until cooked through.
5. Create a Sauce:
The sauce can be the key to making a delicious anniversary chicken dish. You can make a creamy sauce with sour cream, butter, and herbs or a sweet and tangy sauce with balsamic vinegar and honey. You can also use a pre-made sauce such as teriyaki or barbecue sauce to save time. Remember to adjust the seasoning of the sauce to complement the chicken.
6. Presentation:
Presentation is a key factor in making the anniversary chicken dish look appealing. Arrange the chicken on a platter and pour the sauce on top. Add garnishes such as chopped parsley, sliced lemon or lime, or chopped nuts for a final touch. Serve with your favorite sides such as roasted vegetables, mashed potatoes, or rice.

Conclusion:

Making the perfect anniversary chicken dish for your loved one can seem daunting, but with these valuable tips, you can make a memorable meal that will impress. Remember to choose the right cut of chicken, marinate the chicken, season it well, cook it to perfection, create a delicious sauce, and present it elegantly.
