Time 6h20m

Number Of Ingredients 15

1/2 cup instant coffee
1/2 cup hot water
1 cup butter
1 cup granulated sugar
1 1/2 cups honey
1-2 teaspoons vanilla extract
1/2 teaspoon allspice
1/4 teaspoon grated nutmeg
1/2 teaspoon anise (ground or liquid extract)
2 eggs
1 1/2 teaspoons baking soda dissolved in 1 teaspoon white vinegar
1 1/2 teaspoons baking powder
6 cups all purpose flour
4 1/2 cups powdered sugar
1/2 cup milk

Steps:

  • In a medium saucepan, dissolve the instant coffee in the water.
  • Add the butter, sugar and honey to the dissolved coffee in the saucepan. Bring the mixture to a boil on medium heat and cook, stirring, just until the butter melts and the sugar dissolves and the mixture is homogenous. Take off the heat, pour it into a large bowl. and cool for about 10-15 minutes.
  • Add all the spices - vanilla, allspice, nutmeg and anise. You can also add cinnamon, cardamom, ginger, cloves, mint extract, etc.
  • Whisk in the eggs, the baking soda dissolved in vinegar and baking powder. You will notice that the mixture will fizz a little when it's all mixed up.
  • Add the flour and mix with a large wooden spoon until all the flour is incorporated.
  • Cover the cookie dough with plastic wrap or a kitchen towel and set aside at room temperature for at least 4 hours or overnight.
  • Preheat the oven to 325 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
  • Shape the cookie dough into approximately 1 Tablespoon balls and place them on the prepared baking sheet, leaving some room around each cookie, since they will expand while baking. I use a 1 Tablespoon measuring scoop to get the cookie dough out of the bowl and then roll it around in my hands. This will make sure that all the cookies are the same size and will bake evenly.
  • Bake in the preheated oven for 20-25 minutes. Do not over bake, or the cookies will be too hard.
  • Meanwhile, in a large bowl, whisk together the powdered sugar and the milk to make a glaze. You can flavor the glaze by adding some kind of extract to it, like vanilla, mint, almond, etc.
  • Dip the cooled cookies into the glaze, letting the excess run off. Set the glazed cookies on a rack or parchment paper to dry. When the glaze is dry, you can flip the cookies over and glaze the other side as well. When glazing the cookies, work fast, since the glaze will be harder to work with when it starts to dry up. You can add a tiny splash more of milk to thin it out if it hardens.
  • Store the cookies at room temperature in a sealed container.

Traditionally, these Greek cookies, known as koulourakia, are formed into rings, twists and half circles. In this recipe, they are shaped into bow ties and twists, then glazed with anise-flavored honey. These are delicately sweet and nice with coffee.

HONEY BISCUITS (COOKIES)

Honey Biscuits (Cookies) image

This is my Mum's recipe for traditional Xmas biscuits. Usually given as presents. They are a 'Barossa Deutsch' recipe, which means they started as a German recipe, brought over with the settlers of South Australia's Barossa Valley, and have been adapted over the years. Makes a large quantity, but last for months in a sealed container.

Provided by auntchelle

Categories     Dessert

Time 2h30m

Yield 80-100 biscuits

Number Of Ingredients 8

2 lbs honey, warmed (just under 1kg)
1 lb sugar (500gm)
4 eggs, well beaten
1 teaspoon ground allspice
1 teaspoon cinnamon
1/2 teaspoon ground cloves
4 teaspoons bicarbonate of soda
3 7/8 lbs plain flour (approx 2kg)

Steps:

  • In a very large bowl thoroughly combine all ingredients except flour.
  • Gradually stir in flour until you get a stiff mix that is neither dry nor sticky. Quantity of flour will vary every batch.
  • Cover bowl with lid or plastic wrap and set aside overnight.
  • Next day. Preheat oven to moderate (180 degrees Celsius). Now, either roll out and cut out shapes or roll into balls. Press halved, skinned almonds onto balls. Either way, allow enough room between biscuits for slight spreading.
  • Baking time will vary depending on thickness of biscuit. The biscuit will have a nice golden colour when done and still be soft. Allow to set for a couple of minutes on tray before putting onto a wire rack to cool. A thin biscuit will be crisp whilst a 'ball' will be softer.

ANISE & HONEY BISCUITS

Anise & Honey Biscuits image

These delightful, sweet biscuits were heavenly hot from the oven, drizzled with honey, but they also kept well and were good the next morning for breakfast and at lunch with a little cheese. I used anise seed from www.Penzeys.com, and it had a terrific flavor. The seeds soften during the baking process, and it smells like Springerle cookies when the biscuits are baking (but these are much faster to make!)

Anise is a popular flavoring ingredient that is often used in baking. Honey biscuits are a classic treat that can be made with this delicious spice. Anise honey biscuits are a great option for those who want a unique twist on the traditional recipe. But before you start whipping up your batch of anise honey biscuits, there are some valuable tips to consider. In this article, we will cover some top tips to ensure that your anise honey biscuits turn out perfectly every time.

Tip #1: Invest in high-quality ingredients

The key to making any delicious recipe is using high-quality ingredients. When it comes to anise honey biscuits, this is especially important. Opt for organic flour, local honey, and fresh anise seeds to ensure that your biscuits have a superior taste. The quality of your ingredients can make all the difference in the final result of your recipe.

Tip #2: Measure your ingredients carefully

When baking, it is important to measure your ingredients precisely. An extra tablespoon of flour or a teaspoon of baking soda can make a significant difference in the texture and consistency of your anise honey biscuits. Use measuring cups and spoons to ensure that your measurements are accurate.

Tip #3: Chill your dough before baking

Before baking your anise honey biscuits, it is important to chill the dough for at least 30 minutes. This will help the dough to firm up, making it easier to handle and shape. It will also prevent the biscuits from spreading too much as they bake.

Tip #4: Use a pastry cutter

A pastry cutter is a handy tool that can make preparing your anise honey biscuit dough a breeze. It helps to evenly distribute the dry ingredients and cut in the cold butter, creating a crumbly mixture that will result in a flaky texture for your biscuits.

Tip #5: Roll out your dough evenly

When rolling out your anise honey biscuit dough, it is important to do so evenly. This will ensure that your biscuits are all the same size and shape, which will help them to bake evenly. You can use a rolling pin to roll out your dough or simply use your hands to gently press it down to the desired thickness.

Tip #6: Cut your biscuits carefully

When cutting your anise honey biscuits, it is important to use a sharp cutter that is the right size for the recipe. You can use a biscuit cutter, cookie cutter, or even a small glass to cut out your biscuits. Make sure to press down firmly and avoid twisting the cutter, as this can cause uneven edges.

Tip #7: Bake at the right temperature

Baking your anise honey biscuits at the right temperature is crucial to achieving the perfect texture and flavor. Generally, biscuits should be baked at a temperature between 375-425°F. Check your recipe for specific baking instructions, but always keep an eye on your biscuits to avoid overcooking or burning them.

Tip #8: Brush with honey glaze

For an extra touch of sweetness and flavor, consider brushing your anise honey biscuits with a honey glaze. Mix honey with a bit of water or lemon juice and brush it onto the warm biscuits as soon as they come out of the oven. This will give them a shiny glaze and added sweetness.

Tip #9: Store properly

Once your anise honey biscuits are baked and cooled, it is important to store them properly. They should be kept in an airtight container at room temperature for up to three days. You can also freeze them for longer storage. Simply wrap them individually in plastic wrap or foil and store in the freezer for up to two months.
Conclusion
Anise honey biscuits are a delicious treat that can be enjoyed any time of the year. With these valuable tips, you can ensure that your biscuits turn out perfectly every time. Remember to invest in high-quality ingredients, measure accurately, chill your dough, roll out evenly, cut carefully, bake at the right temperature, brush with honey glaze, and store properly. By following these tips, you can create a batch of anise honey biscuits that will impress your friends and family.
